hello and welcome to caliber cooking with Chef Laureus I'm chef Lori is the California girl with an Alabama flair for cooking so excited to have you here today if you're already a subscriber glad to see you again if you're brand new here welcome go ahead and hit the subscribe button everybody make sure you hit the bell so you're notified every time there's a new video all right guys I'm so excited today I have my mom with us my mom we called her oh I call her mom but you guys can call her VJ this is my mom mama VJ okay so few weeks ago we were doing a live and my mom promised to make something she promised to make rice pudding rice pudding so I had a lot of requests for rice pudding and I never made rice pudding but my mom has it she didn't make it a whole lot when I was little but the few times she did it was really good so we're gonna go ahead and show you how to make a traditional old-fashioned rice pudding and this recipe has been modified from a whole bunch of things and places that Mama's getting recipes from alright guys so let's jump right in you're ready MA okay rice pudding time alright guys first thing we've done is we've brought how much water you about a cup and a third of water to a boil all right what's next Athar ice all right and here's a half a teaspoon of salt now we're going to cover and simmer this rice until all the waters absorb to take about a half hour all right now we've got two egg yolks here mom mm-hmm and what do I do next you're gonna as soon as I get this whipped up you're gonna add a half a cup of sugar all right I'm gonna add the sugar here's a half a cup of sugar then we just pour it in yep okay and a half a teaspoon of vanilla vanilla all right let me get the vanilla put that into you let me grab a spoon okay you guys is so much fun to cook with your mom especially when you're a control cooking freak like me because you have to stand here and say what next oh all right okay now we have let our rice cook here in the water it's absorbed about 95% of the water so what are we gonna add next ma we're gonna add 2 cups of milk and this is whole milk guys right mom Oh milk and then we're gonna let it boil all right Buster it you can stir it Oh thought I messed it up we're gonna stir this gently and bring it to a gentle boil and let it boil for how long about five minutes until it thickens all right guys okay guys look at this our rice is thickened up is that right MA yes okay now we're gonna take the egg mixture that we have here see that guys the egg mixture okay and we're going to temper it temper these eggs so that we don't get scrambled eggs so I'm gonna put a little bit of this hot liquid just a little bit in here and she's gonna keep whisking it to bring the eggs up to temperature without cooking them their egos I prefer that better okay ready no more no more you can do this by yourself but it's way more fun to do it with somebody okay we ready now MA we're ready all right what we're gonna do I'm gonna now give me the UH whisk okay and we're gonna add this what's getting in like this oh that looks good and you keep pouring it in slowly right because we don't we still don't want the eggs to scramble and then after we pour all of it in we're gonna let it continue to cook for the note it you're going to now put it into the pan and bake it ah okay so after we get everything in we're gonna take our pan spray it spray it with some cooking spray prepare to bake it alright here's our dish you guys know I love this dish so we're going to spin sprayed lightly with cooking spray and we're going to pour the rice pudding into that okay I'm doing this part mom has done all the work but I'm gonna pour it in so it looks like I've done something oh it's a labor of love pouring in the pudding all right guys okay guys so now we've got our rice pudding here in our baking dish and what we're gonna do is put a little cinnamon and nutmeg on the top of it because that makes everything taste better and the way we bake this is you take another dish I have a 9 by 13 casserole dish here but you basically just use any dish that your pudding dish will fit into and you're going to put a little bit of water right mom explain this part to me now you're going to start off by putting some water in then put your dish in there bring it up to the sides about an inch okay all right you guys got that see this is why I need mama because I don't know a lot about this water dishing so we're gonna put some water in is that good mom right about there about right okay so I don't know if you guys can see that but I just put a little bit of water and I'm trying to move it around I hope you can see it and then we're gonna put the dish in mom yes I'm not cooking with my mom you guys cuz y'all know I'm a Type A but my mama understands me and she loves me and then I pour some more water continue pouring water you okay and we poured about an inch of water in there and that really was about 4 to 5 cups of water just because of the size of this dish so you see our pudding is sitting in there it's going to basically cook in this little water bath we're gonna put it in the oven on 350 degrees for about 45 50 minutes all right we'll see you guys back here when it's done all right guys look at this it's out of the oven this is absolutely beautiful you can see right here is where I check to see if it was done I stuck a knife in it and the knife came out clean and that's how we know it's done so mom and I are gonna take a taste of this and we're gonna share this moment with you
