Authentic - Texas Longhorn Chili, All Meat, No Beans

[Music] hi everyone my name is Kim and I'm the happiest cook today we are continuing our world tour and have landed here in Dallas Texas and we are cooking up some Texas Longhorn chili my chili is full of meat no beans and it's absolutely delicious you can make it as spicy hot as you're comfortable with I'm just making medium heat especially since my mom is here and she doesn't do hot as so we're going a little bit not so hot well I've taken everything that I love about chili put it all together and I've come up with a version of the best chili so have you got all your things ready to go I have mine and like I always say let's get cooking foreign this bacon and the grease that it generates is what we are going to use to cook all of our meat up in just for extra flavor extra intensity then once the meat is all cooked we'll start putting everything together this meal takes about 15 minutes to prep initially but then takes about two to four hours to cook depending on how long you have and how much your patience is for the day it actually will be fully cooked and ready to eat but the longer it Cooks the better it tastes so that's kind of where we are with that we're going to take the bacon out we're just going to set this aside for later this is a very simple we're just going to single layer our cubed meat we don't generally eat a lot of meat in my house but when you're in Texas you gotta have beef right so we not only have beef we have pork so our chili has a combination of beef and pork and what we're going to do is we're going to cook this in a single layer sprinkle it with onion powder garlic powder some salt and pepper and then we're gonna let it get like a little bit of a crust on it and then we'll flip it cook it on the other side and then we'll remove that and then we have our pork to cook [Music] thank you [Music] all right so see how it's starting to get a little brown on the edges ready to flip and then we're just going to cook it on the other side you don't have to cook your beef and your pork separately mine just came out of the bowl that way the reason I didn't cook it all at once is you don't want your meat to steam cook it will just it won't get that nice you know a bit of a cook on there outside if it's double layered that's the only reason we do it this way okay we're going to remove this to a bowl then we're going to put the pork and any other the meat still in the bowl and we are going to cook the rest same way in a single layer sprinkled with onion powder garlic powder and some salt and pepper and we'll do the same thing we'll let this cook and we'll flip them finish cooking them on the other side and then we'll start putting our chili together okay our pork is ready take out so we're going to take out the cork this we are going to add our garlic [Music] our tomatoes our broth can't find boom broth bone broth you can use just regular old beef broth and we have all of our spices we're going to add all of those we're going to add our tomatoes tomato paste thank you and we're just gonna mix that all up I do have all of my bell peppers my jalapeno and my onions but I'm not going to add those quite yet I'm going to let this simmer with my meat that I'm getting ready to add we're just going to let that simmer for a couple hours then we'll add the onions and the peppers and cook them for about another hour and a half to two hours the meat will be nice and tender and it'll be really yummy Okay so let's see we're going to bring this up to a low simmer right before I put the lid on it I'm tearing up this bacon that I used at the beginning and I'm not going to really stir it in I'm just going to kind of tear it up put it on the top we're going to bring this up to a low simmer put the cover on it and we'll check back in on this and I'll see you in a little while oh our chili has been simmering for about two hours and I am going to add all my vegetables that are all chopped up and then we're going to stir these in and then we are going to let this continue to simmer for another hour and a half I checked my meat it's already getting nice and tender isn't that pretty I do like things that are pretty so there we go we're going to cover this up and continue simmering for about another hour and a half to two hours I'll see you back here sorry so here we are we have finished our little tour around Texas our chili is done and I wanted you to see the chili turned out really well the meat is so tender okay so we're going to taste mmm that is that's really good by putting the vegetables in two hours into the cooking as you can see you can see them and they are still have a really great texture and they're not mushy they're just that's really good so that's it for taxes folks we have
