[Music] restaurants name is Kay Paul's and my late wife was Kay and so we started 37 years ago and we still trucking it gumbo is probably the most popular dish that we have on the menu you know this Cajun food and Louisiana food done all over the world wrong but when they really taste the real thing they really get excited about it and if you think about Louisiana food or Cajun food you know gumball is always going to be the first thing that's going to pop up there's many kinds of Gumbo's that's made in Louisiana what we do here is as close as I know how that the family did when I was kid my mother really understood how to do good food and we would go out in the swamps and and get all kind of seasonings and I would see my brothers be upset with each other and and they would start eating just a couple of minutes they wasn't mad at each other anymore they were eating grateful it was one of the things that made me understood how wonderful for attended when we bake gumbo here we start with old hens and when we were growing up you didn't make gumbo unless you had a hand that was of no use anymore in other words didn't lay eggs anymore and the flavor that came from I was just incredible and so that's the most important ingredient is getting that chicken flavor and of course the dark and the dark roux is flour and oil that's been cooked till the color of chocolate and it's just a fine line of having that smokiness to getting bitter we have unduly smoked sausage well brown that off we'll take onions bell peppers celery we call it the Holy Trinity that goes in with chicken stock which we make here every day well get that to a boil and then we'll put the dark ruin it that's got the smokiness on the sausage she's got the dark roux it's got the chicken flavor that's got some vegetables it's got you know it's just a great marriage of a lot of flavors I'm very happy and feel a lot of respect for chef that he trusts us to run this restaurant for him he taught me how to build flavors to make food taste so wonderful and with so much depth and that I learned from him if tasting something or eating something you know if it's good it's good because I think every time you do something with food is going to be some difference in it than it was before and it's nothing wrong with that I mean that's that's real and especially when it's fresh a freezer is not allowed in this restaurant it never was and never will be you know we buy for the day so whatever ingredients I can find whatever fish when I call in the morning is the freshest that's what's going to be on the menu today it's wonderful to see that I have a nephew and a niece that can continue it on and his taste is just as good a better than mine it's really wonderful to because I now eating his food I want to give any customer the best food that could possibly get you know everything is fresh and we're gonna continue doing that as long as I'm alive if my mother would taste my god lucky upset you
