hey welcome back to how to barbecue right I'm Malcolm Reed today I'm gonna show you how to do buddhu wings I know we got mardi gras coming up just here in a few weeks it's got me thinking about all those good times down on the bayou so i thought it'd be a great time to share this recipe with you i've got some whole wings i'm gonna hit with my cajun seasoning that king crawl we're gonna get them on a hot grill get that skin just right get those wings done then i'm gonna show you how to make a voodoo sauce that we're gonna toss these wings in to finish them they're gonna be fantastic let's get to cooking so to cook these wings today I'm using my weber kettle and a charcoal vortex I need some hot coals first so I'm putting some royal up briquettes inside a chimney and use it a couple tumbleweeds to get the fire going after about 15 to 20 minutes the coals are good and hot I'm gonna put the vortex down in the Weber on the fire grate and pour those hot coals right into it I'm gonna put my grate in place and then put the lid on and you can watch the temp just climb straight to the top it's gonna level out about 550 degrees so we got the Weber getting good and hot now it's time to get some seasoning on these wings today I'm using a whole wing now you can cut these into drums and flats cook them in pieces or cook party wings the exact same way it doesn't matter the first thing we're gonna do is get some seasoning on them I'm using my king cross seasoning and it's a Cajun blend the spices it's got some urged some thyme some oregano garlic all the great stuff but you could use any kind of seasoning you want on them just use something that's not too salty you want the flavors to come out in the chicken and the sauce we're gonna toss it in you don't want to overpower them with salt we're gonna coat one side we're gonna flip these wings over get seasoning on all sides we're gonna get some Keene crawl on the back side of these wings and I like the whole wings personally I think they cook up better they stay juicy and I'll really like the way the skin turns out on them on this vortex that looks good to me just Pat them in a little bit so we've got the seasoning on all sides of the wings it looks great I'm just gonna let them hang out for just about five minutes let some of the moisture pull out of the skin it's gonna kind of make the seasoning stick to it a little bit better the grill is getting hot so we're about ready to start cooking so now we're just going to put the wings on the Weber and you notice I'm putting them around the vortex you don't want to cook directly over it we're gonna give them plenty of space so the air can circulate if you crowd them up they cook a little bit slower I really love cooking chicken wings with this vortex setup it moves so much a you're really cooking indirect but the air the heat coming down around the Weber from the vortex makes the skin really really crisp it's almost like it's air fried right here on the grill family pack of chicken wings is perfect for the Weber 22-inch kettle with the vortex and before I put the lid on I'm going to add some smoker wood to it I've got a little piece of peach right here we're gonna put right over that vortex and it's gonna start burning a little bit it's gonna smolder and give us a really good flavor for these voodoo wings so on the lid on the Weber I've got it at the 12 o'clock position and it's a hundred percent open now to give us an even cook with this vortex every 15 minutes I'm gonna rotate it 45 degrees and we'll end up going about three turns all right spend 15 minutes I'm gonna take a quick peek at these wings they are looking good start to get some color on them so we got a little peach smoke going there fine just like they are all I'm gonna do is turn the lid now now we're gonna have the exhaust over in the three o'clock position we're just going to keep letting them go set another timer for 15 minutes now while the wings are grilling let me tell you about this voodoo wing sauce I'm starting with a stick of butter some finely chopped onions and garlic we're gonna get those simmering down about 2 or 3 minutes just make them translucent then I'm going to add some brown sugar a peach of red pepper flakes and a good shot of rum that rums gonna cook off all that alcohol we're gonna let it go for about another 3 to 5 minutes so it's all cooked off but it's leaving all the flavor in the butter with the garlic with the onions it's gonna have a little bit of spice to it but we're gonna kick it up another notch to truly make it voodoo style I've got some hot sauce and some of my spicy vinegar sauce going in it so then I took the sauce off the heat and just poured it in a pint jar and I just brought it out here just let it hang out at room temperature it's thickened up some you can see it's got the pieces of the red pepper flake the garlic the onion all that's going to make a beautiful sauce for these wings it's been a total of 30 minutes you can see our skin sizzling it's getting a golden brown color I want to get them flipped at this point so they're cooking even on all sides but these wings are looking fantastic that's why I love cooking on that vortex I mean you just can't beat the way it gets the skin crispy so much hot air moving in it coming down on them and it circulates around the wings look great alright so all the wings are flipped now we're going to move the lid one more time we've got it drawn this way so we're still cooking even about 15 more minutes is all it should take but I'm gonna vary fi the internal temperature I'll get my thermo pin out I'm looking for above 190 I like those bones to really come out of the wings so that's the tip I like to take them too you could take them off anywhere after 165 but the skins right and the bones pull right out if you take them up in that 195 range all right it's been 45 minutes I'm gonna go ahead and get these wings flipped back over see how they're looking we're gonna get a thyra pin out I'm gonna start checking on ya see some crispy action color is beautiful on them kind of a golden brown get off that peach wood wing stay right there Pizza about give us all this guy man look at these wings that is just a thing of beauty start checking the internal temperature on some of them 178 180 we got about just a few more minutes that one's about 165 I'm gonna put the lid back on they probably not gonna go a whole 15 minutes that's where you really want to keep an eye on them little windy day we got a little breeze going so you just want to make sure they're done to your liking I wanted to get just a little bit crispier a little bit more done so that bone pops out all right now our wings have been on a total of one hour and I'm gonna check them now oh yeah 192 I'm seeing those temps they feel great they look great they're still got that crunch we are there that one's about 198 I know it's done I'm gonna call them one hour on the vortex it's got the skin exactly how I want it you can see it sizzling browned on all sides beautiful cooked now we just got to get them off and get them in some of that voodoo sauce we're gonna take these wings over to the cutting board I mean if that's not a tray cajun-style wings I don't know what is now let's get the Voodoo sauce tool all right so now we're gonna toss these wings in our voodoo sauce that's just been sitting here in the pint jar now I'm only gonna do a few at a time I don't want to overcrowd the bowl we can do what four maybe five that'll look good I'm just gonna add a little sauce to the bowl and we're just going to toss them around it can get messy that's great coverage right there now straight out on the board hmm I got to hurry up cause I want to try one but I got to toss some more if you got some sauce left in the bowl that's okay just put some more wings in reload that bowl me get five more got some sauce in there but go ahead and give it another drizzle that looks good make them happy though what sauce around we're outside they don't mind if it splatters gets on me gets on you don't shell the camera lady those look sauced up to me check that out that's what I call foo doing so I'm ready to try one Michael you're gonna try one with me today you ready for some sweet and spicy eat I've got a voodoo ranch over here that you can dip it in to cool it off grab you one out I want to see if they're gonna tear apart I know they are I mean those bones are ready to come out they're still really hot this is what I like about taking those wings to a little bit over 190 the bones come right out mmm the flat is where it's at the skin it's got crispness to it you want to dip it in some of this voodoo ranch a good thick dipping sauce that is awesome if it ain't all over you it ain't good so Michael what's your favorite part of these wings man you got it all over you that's awesome you like the drummy huh well the babies in here if you find that it's like a king cake man you got to bring wings to the next party can you handle that I'm gonna get me one more Mike I want to really taste it you get the spice but the sweet jumps out and covers it up they're not too spicy at all but they have just a little kick but what I really get is the vanilla note from the rum we cooked down in that sauce it's not the alcohol it's the flavor from the rum the spice that's what makes them so good that sauce is a winner man there's some fantastic wings aren't there son I really love cooking chicken wings on that vortex I mean it takes your wing game to another level it gets that skin crispy super easy to do you almost can't mess them up we pair them with that Keane crawl Cajun seasoning brought some heat to it a lot of flavor and we toss them in
