Johann Magnussen here big sweet barbecue we are here today to cook one of my favorite things on the Weber we're gonna do some badass boosted crispy vortex chicken wings the way that I like my chicken wings is that I like them with a lot of flavor I want them to be crispy have really that good bite-through skin I don't like a lot of sauce and I also liked it with a little bit of a of a smoky net so we're gonna use a very cool tool today we're gonna use the vortex which was invented by a friend of mine from Casa Grande bill Scott if you want to check it out go to Thunderdome barbecue or just Google vortex barbecue and you will find a lot of honors a very very simple invention but it cranks out some amazing chicken wings so what we set up the grill I will show you how to use this the first thing that we need to do is to see send the chicken wings what I did was that I trimmed them up and I let them sit outside for about an hour and the reason why I want to do that is because I want this the the chicken wings to dry out a little bit the more dry they are the better crispiness you will get in the skin and in order to season it we only use two things we're gonna use Cornhusker kitchen they're duck fat because everybody knows everything tastes better with duck fat you can of course use some sort of sprayable oil or butter I just love the flavor that this duck fat will give the chicken wings and then we're gonna use the big sweet barbecue badass versus and I like the badass burgers for a couple of reasons number one it gives the wings amazing color so you want the wings to look good but it also gives it a good heat with a combination of a good sweetness to it I don't like wings that are too hot where you burn up after eating one or two so the badass bird foods from big sweet BBQ will give it an nice nice heat level which is T the first thing that we're going to do is just to give all the chicken wings a nice little coating of the duck fat so just move over and give it a nice little coating of duck fat this will make it easier for that for the rub to stick to the to the wings as well just a nice little coating all through the benefit is that when it's a little bit windy like this today it gives it a nice nice spread on the chicken wings there we go and then what we want to do is we want to flip them over and do the same thing on the other side now when we have seasoned the chicken wings we're gonna let them sit for a little while to let those those spices really penetrate into the chicken meat and while we're doing that we're going to light up the Weber with the vortex the first thing that we want to do is light the charcoal so let's give that a couple of minutes to get started the next thing that we want to do is to place the vortex in the Weber and then fill up with charcoal there we go so what the vortex does is that it pushes really hot air direct heat to the top of the kettle and then it pushes it down again creating a good rotation of very very hot air throughout the whole kettle but this is perfect when it comes to crisping up the chicken skin so what we want to do now the next step is to put the chicken wings on and just to give it a little bit of smoke flavor we're gonna add a couple of chunks here in the middle of Kerry to give it some some good smoke flavor and also color so it's been about 10 minutes and it's time to check on the wings to see what they look like you can see that they're taking on a pretty nice color they still have a ways to go what I like to do after 10 minutes is just to give them another dose of the of the duck fat it helps with crisping up the skin let's put the lid back on and let's keep it going for another 10 minutes and then it's time to check on it again so it's been about another 10 minutes and it's time to check on them and look at that beautiful brown color I like to give them a little bit of a dose more of the duck fat you never have too much duck fat and then what we're gonna do is we're gonna flip them over so we're gonna take and start flipping them over and we're gonna do that with with all of them and then we're going to look at them after another 10 minutes so let's check them in one final time you can see beautiful color if we zoom in here they're starting to get really crispy what you could do now is of course sauce them but this is how I prefer my chicken wings so we're not going to do that we're just going to place them serve them and eat them with some ranch dressing or some chunky blue cheese so here we have the end result it's beautiful crispy badass boosted chicken wings they got a beautiful almost yellow tint to it thanks to the barbecue rub they look phenomenal so now the only thing left is to taste them so that's it that's how you make badass boost and crispy vortex chicken wings super easy let's try one and see what it tastes like [Music] perfect bite through skin a little bit of a crispness the duck fat adds another layer of
