this video contains an ad for PayPal honey [Music] [Music] what's up guys salute this is Alex so right now I am in Italy I mean beautiful room the Eternal City well believe it or not I'm actually here for the ramen series Ramen Italy Alex what the but I was looking for a very specific ingredient that you can only find here and then I thought since I'm already here why not take the opportunity to taste a super popular pasta that I've been fascinated with for a very very long time alfredo fettuccine alfredo is a deceptively simple pasta dish that is made from fresh egg-based fettuccine which is tossed in butter parmesan cheese and pasta water to create a creamy emulsified sauce the dish was invented here in Rome by Alfredo dilelio in 1914. I'm here to experience the real the genuine the original fettuccine alfredo and I'm gonna be doing this in a restaurant a few blocks away from here called Alfredo alaskrafa where it was invented I got in touch with the restaurant thanks to my friends at Italia cuisita this might sound a bit fake or a bit surprising to you but fettuccine alfredo it's not really known here in Rome I think it's mostly popular in the U.S to be honest I never ever tasted fettuccine alfredo before I have however watched tons of YouTube videos on how to make it so I've got a primer on how this dish should be although the videos were very so I'm a little confused this is the place foreign [Music] how could I not be excited for this that I've never tasted before I'm filming this with Thomas this Thomas he's my camera operator here in Rome this guy grew up in Italy and he has something to say about fettuccine alfredo Thomas I don't want wine I don't want nothing I just want fettuccino the guy is a maniac [Music] do you think the fettuccino feels like a Rolex for the timing yeah exactly exactly timing has to be right it needs to be very precise we can only time it with a Rolex maybe like some some Cutler you know yeah maybe no because because it's right here it's the silverware already pound cheese in a box you don't keep parmesan cheese in the Box it's like that okay so let me run you super quick on how the dish is actually made in the kitchen first of all they make fresh egg pasta you don't use the high pasta but you're not looking for the Al Dente Factor you're going all the way soft the second day ball the baths are very very briefly and they always boil the pasta in the same pot which increases its starch content dramatically they start preparing the serving plates into it and they smell it at the bottom a pretty good amount like a French amount number four they bring the dish very close to the boiling for the pasta and this Slide the pasta up it's beautiful how they do this but also they make sure to bring along loads of pasta water that's gonna be key for the Emulsion coming later on and then finally they bring it to the table and they sprinkle the dish heavily with Parmigiano-Reggiano and then fold almost like the pasta onto itself and so the pasta water and the cheese and the butter they all incorporate into a lovely delicate cream wow so you make them at the table yeah always in the same way since more than 100 years ago as Alfred invented it looks extremely creamy come on look at that can you see this [Music] we got our very old tradition okay for you today we have we're gonna give you the original Oh yes with our famous schools thank you sir this is how I want to be treated amazing I love this place so please don't wait no okay okay thank you very much it is extremely extremely creamy but I'm starving wow [Music] wow that's amazing have a look at this look at this look at how creamy that is I don't know if I'm supposed to eat it by the spoon I don't think so I'm doing it anyway [Music] I really did not expect that texture it's almost like biting into nothing the pasta not only is very soft but it's also super thin so it melts in the mouth almost instantly subito I know it's going to be hard to believe but they somehow found a way to make this dish balance because you've got butter and you've got like La cremina the cream but the the parmigiano is bringing some acidity or a bit of funk a bit of a bit of kick especially after having done the dry pasta Series this is a completely new experience to me this is only stuff only creamy there is no bite there is no black pepper there is no Al Dente pasta none of that only comforting like a warm blanket basically with all that butter and all that cheese I can see why this dish has to be eaten very rapidly because otherwise everything is going to set it's already starting to set have you seen this these are these special instruments they gave me it says to Alfredo from my picture I don't know who Mario is 12 Alfredo Douglas Fairbanks I don't know who that guy is so it turns out that in their day Douglas Fairbanks and Mary Pickford were just about the most famous actors in Hollywood it also turns out that after eating fettuccine alfredo here in Rome on their honeymoon they sent Alfredo this gold Cutlery as a thank you note for creating such a wonderful dish in fact they liked this so much that they convinced a restaurant back home in Los Angeles to start making the dish for them for its popularity in the states then continued to grow and grow until today where it's one of the most famous pasta dishes in the United States I mean even though it's been created in Rome it's now more than Italian-American dish but still the OG location is right here so what do I think in the end well I got a few things to say as always always with Italian pasta dishes it's over Complicated by people who are trying to replicate it but it's also underestimated let's talk about the ingredients so there is pasta butter parmigiano and pasta water now I realize that all the videos I've seen online where they are shrimp garlic chili onions parsley that's not the spirit over here you are over complicating the list of ingredients here it's all about trying to be as gentle as comfy as cozy as possible however when you're making the dish in a pan making a sauce and pouring the sauce on the dish when you are underestimating the process the immersion that they make at the table is a very subtle action if you've ever made katua Pepe before you know like super easy to get lumps it's all about the temperature and the timing so in the end even though fettuccine alfredo could be considered more American than Italian it is nevertheless undeniably tasty and Incredibly creamy I mean in all honesty I feel like I like that dish a little more than I thought I would this is just pushing me into one thing okay this is pushing me into trying to make fettuccine alfredo I mean it's
