with pepper on them on them they're crispy but they're tender crispy outside but it's very tender inside so that's why you make big ones yes you sure i remove all the black pepper from the skin you leave that yes i didn't cook because if you burn the black pepper [Music] yeah it's bitter it's shiny yeah it smells fresh i mean looking at this you would think that this is going to be too fatty no yeah it's different than yours i remove half of the feather quencher and then i put the other half in the hex and then i mix that and so and then there's another secret the last one we cook a little bit of pasta in the embankment because we use the starch from the pasta for made this cream the last one we find the good balance in the cheese because we didn't use only pepperoni cheese but we mixed the cheese we mix we use pegorino cheese and grana patano cheese for every recipe you have to find the balance in the right now the palette is changed so you so you have adapt this recipe for the modern palette yes yeah wow now i understand why when i eat my dish i can sense too much fat a bit of a burnt flavor and for me this is like this is carbonara in fact yeah exactly maybe it's normal
