get ready for a freaking beautiful big-ass sheet pan pepperoni pizza [Music] big-ass beautiful sheet pan pizza what is not good about this and look I was like to give you options you could do by a a ball of pizza dough from the store most stores now sell a fresh pizza dough you could probably use that that that roll out one that comes in the tube or you could make your own and we're gonna show you how to do that you could buy sauce out of a can or make your own we're gonna show you how to do that really easy uncooked simple three four ingredients sauce that you can have on hand for all kinds of things just easy man the whole thing is easy and delicious we will start though with our crust our dough because it takes a little time to - - it's the word put together rise Thank You max rise it's simple everything goes in a processor and you don't have to write it down it's all on my website the link will be below this is two cups of bread flour that I'm using to that I'm gonna add about a teaspoon of sugar about a teaspoon of kosher salt about a tablespoon of dried basil half a tablespoon of granulated garlic and by the way the garlic and the basil are completely optional but if you don't put them in I'll call you a fool and last button and last but not least one packet of fast rising yeast and in we go it wants to hide in the corners make sure you get it all out we put the lid on we give it one little pulsed mix and then we add our two wet ingredients one is 3/4 of a cup of warm water if the water is too hot it will kill the yeast try to keep it between about 120 and 130 degrees tablespoon of extra virgin olive oil now max you mix for real and you're looking for this to come away from the sides and become a ball in the middle like that we take the lid off and we look a little sticky is okay a lot sticky we would add a little bit more flour so now we're just gonna take this guy out pull out the blade take our beautiful dough slightly sticky turn them into a little ball and then we get a bowl put about a tablespoon of oil in a bowl get a paper towel smoosh it all the way around to grease up the edges take your ball of dough smelling and looking gorgeous give it a little pat say some nice words about them you're looking fine I'm gonna come see you in about an hour cover them up with a towel put them in a warm spot for about an hour time to get sourced we start with a 15 ounce jar of whole peeled Italian Tomatoes and these guys gave me a pull-tab which I love whole table comes off oh god that's gonna spray on me isn't it don't want to get thank you Oh what could got in there okay here's what we want we want the tomatoes like this but we need to squash them up so pull up the sleeve put your hand in and you have to be careful because they can really spray what's nice about this sauce is that it's uncooked and very easy to do God and I've got a cut on that finger and I've gotten out tomato acid burning into it same thing right in and break I really just don't want to get strafed with tomato it actually feels quite nice but you want to do a good job because you don't want giant pieces pieces are great giant ones are not necessarily great rich in find your friends bust them up okay that's good let me just give this hand a quick rant about a tablespoon of extra-virgin olive oil but uh a half a teaspoon of red pepper flakes teaspoon of kosher salt we don't need pepper because we've got the flakes and I'm gonna put in a teaspoon of minced roasted garlic paste so if you don't have this you could roast garlic well that was more like a half a tablespoon but it's gonna be good and then we just mix this all together max anybody here that apparently max left his phone on who's calling you max he's not answering and there's your sauce chunky delicious I love these pieces in here that's perfect perfection thick rich a little spicy a little amazing so great now use it if you want better if you put it in the fridge and leave it for 2 hours four hours eight hours a day two days three days they Tuesday Friday that's from some movie I can't remember what it is but a little taste would not be the worst thing right now no in fact it might be the best thing right now just know that the flavors will intensify over time so take it you know I'm a fan of these deli containers and it goes into the fridge or as they say in Italy into the woody fit of Toronto and then and then it becomes amazing our dough is ready or should be ready let me go get that and we build and here's our dough dump there it is look it I love the speckles in there I love it I love it I love it so I'm just gonna take it out okay here's what we do Maxie a little flour down just take out our buddy here oh I smell the garlic I smell the basil so I'm just gonna start to give it a preliminary stretch I'm gonna finish it on the sheet pan with a little oil but I just like to get going here first and we want thin okay here's what we're gonna do we take the sheet pan we give us the little bit of olive oil like that we're gonna spread that around your phone vibrate wait I don't know what you're talking about yeah okay you got the bottom oh nice no Pig this guy put them here what we're about halfway done this is a one pound ball of dough and it will fit the sheet pan quite nicely I might add look I got a little rip here I'll expose my problems my mistakes I got a little rip there max so what am I gonna do I'm gonna clump a little bit more here help fill the kid and then press out to the sides and look I still like a little bit of an edge at the border so so do that with your fingers and now our sauce and you don't want to inundate you want sauce but you do not want this to be a four pound bucket of sauce that goes on top of this I mean honestly I feel like a little less is gonna be the right way to go but I love these chunks of tomato in here I don't know why I started yelling tomato gets you excited you know does anyone know what gets max excited the recent news that there's a new Hunger Games book coming out whoo max you're blushing it's been three years I can't believe one hasn't come out yet oh here it is I'll be ordering that he says go clean you're shooting first before you or the next Hunger Games and I don't want to give anything away but max told me this book is not centered around Katniss what's her last name Katniss Everdeen no it's not it's about who it's about President Snow okay I watch the first one I liked it did you really yeah I did I liked it a lot actually yeah I don't know if I saw the second one I think I did see the sucker with the third or the fourth oh there's three and four haven't seen this let's finish this so just a little you just want to make sure there's a nice little bit of sauce everywhere but as I said not too much edges I'm good with that are you good with that beautiful I'm great with that next cheese or cheese of choice shredded mozzarella we use I don't know cup and a half two cups maybe and just spread evenly like you don't have to have a hundred a thousand percent coverage like a few little spots like this beautiful how's that look beautiful huh and one last thing maxi boy on our pepperoni sheet pan pizza would be pepperoni so just start laying them down this has been a vision of Max's for a while now we did another pepperoni pizza some time back and I disappointed I decided to go rogue and when I go rogue sometimes it works and sometimes it just makes max mad and that time it made max mad and we had a fight this time I'm following the instructions that he gave me I want a sheet pan pizza I want to be [ __ ] beautiful I think we're pretty much there oh my god the smell of the pepperoni of the sauce I can get the garlic off the crust mmm it's freaking beautiful not even cooked it's frickin effing beautiful freakin effing beautiful mm-hmm that's too much but I didn't swear see people they don't want me to swear I didn't I almost said freakin [ __ ] beautiful but I didn't I held back because I have some restraint it's gorgeous doesn't need anything else just needs this to go into the oven I then will give it a little you know parmesan when it comes out my ovens been heating for a solid half an hour it's now 500 degrees you can't turn it on to 500 degrees and pop something in two minutes later because it won't be there let it get there so you know for sure it's gonna take I don't know 12 13 15 minutes probably not even that long you know when a pizza looks amazing right you're about to see one while we're waiting for that to bake and by the way it smells ridiculous inside I have an email to read it's from Mike hello everyone to your channel for a little bit over a year now want to write a quick message thank you for the great content you create I have a not so conventional reason to be thankful for what you produce let me explain I'm gonna shorten it but he starts my love for food is immense and my ability to control that has not been great for the past several years one year ago I weighed 435 pounds and was completely miserable on May 20th 2019 I decided enough was enough and started eating right and working out what didn't change as I kept watching your channel more often in fact just seeing the amazing things you created helped me in some strange way stick with my diet even if I couldn't have it when something you created was healthy I would make it or modify it to suit my goals bla bla bla tomorrow marks one year since I started this you will not even believe what you helped me accomplish last weekend I weighed 215 pounds one year later Mike went from 435 to 215 he lost an entire person Mike if you feel like sending a photo before and after so we can applaud you just besides this yes that's right I lost half my body weight in a year by watching me cook and working out on his side the pictures will be incredible if you want to send them anyway he goes on to say he's got a favorite restaurant in San Diego blah blah blah that to me is crazy it's crazy but I get this I get the watching food thing I'm trying to eat well I'm down seven eight pounds whatever it's not 220 but when people eat things around me that I don't want to eat I'm still very happy I love to smell the food and see the stuff and get close to it it's a weird thing I have a friend who's been sober for about 30 years and he does not get any happier than when he's out with people and he's buying cocktails for everybody he wants everybody to enjoy what he can't enjoy any more I think Mike you're on to something way to go man yeah way to go all right blink twice and I'll be back with the sheep and pepperoni pizza and here don't do that again but look look oh that's hot it's gorgeous it's everything I wanted everything nothing less everything perhaps more how pretty is that and the cupping pepperoni is at its best when it cups let's get it off max I got two things to do to it two simple things it's the little squeeze of good extra virgin olive oil for just a little richness because is everything and finally some super finely ground Parmesan cheese for a little sharpness when you bite oh my god it's incredible as the French would say it's it's uncoil but K Maxie boy should we get our friend off do it let's go show the edges oh we go mother on me crisp what do you think illogical way is half quarters seem this way screw it let's just do this if we go here we'll go here you hear the crispy nice uh okay this guy's mine that cup is mine that gorgeous beautiful and look if you look sideways at the dough hold on maybe this is a better one you can see the little pieces of basil that are in there look it's thin it's crispy the edges of the little pepperoni cups are crispy the flavors there a little bit from the red pepper flakes everything I want it to taste like everything what you saw me make it this is not complicated this is not some is it this is not some 400 ingredient recipe you can do this and even if you don't make your own dough you can go buy a ball of dough ladies and gentlemen our friend Mike we talked about have a piece or to call it a day look
