[Music] hello and welcome to the ultimate cheese battle the finale of our cheese week all week these three have been learning everything about cheese from the recipes and all of your comments and they'll come up with their very own personalized cheese recipes they'll battle out to see who's gonna come Big Cheese and I've got one brownie point to award the winner as ever battles involve fancy dress so go get ready and we are gonna have an ultimate cheese battle let's go [Music] who love cheese mice love cheese but I ain't no ordinary Mouse I am Danger Mouse my cheese needs to be the bomb these are berries exploding cheesy balls I'm thinking big cheesy potato croquettes for the koozie mozzarella inside playing on top are they beautiful tomorrow sauce we're of course first up I need some mashed potato so I'm gonna pull off potatoes chop them getting some cold salted water Ripper boil until they're cooked through I'm a grater I think cheese is great and I think cheese is so great that you can put it anywhere and I thought why don't I put cheese into a dessert but a cheesecake is too obvious so I'm going to make cheese ice cream feta cheese ice cream with roasted figs did you just make this face well of course you did but believe me when I say it tastes fine the first step is to make the fig puree that's going to marble throughout my ice cream that involves chopping up a couple of figs popping them into a saucepan with some sugar and some balsamic vinegar and then letting it cook away for about 10 minutes I'm doing what any sensible person in my situation would do and that is that I don't know much about cheese I don't know what I'm going to do so to make it look better I'm applying a snapchat filter so I'm making a mac and cheese but it's not any ordinary mac and cheese it's a rainbow mac and cheese it split into three different parts three different colors three different flavored cheeses which turns out isn't a rainbow it's more of a Neapolitan mac and cheese it starts with boiling some macaroni and creating a cheese sauce now I'm at a tease a boiled and drained is time to add my butter and my two cheese's Gruyere and cheddar hold on a nice coarse great sauce up faster faster the thing with cheese is they can take it literally anywhere it's pretty open let's start with Mike rainbow mac and cheese now rainbow kind of appeals to the internet but I'm excited about our Mike's is the flavor combinations because I think each one works really well it has a little flavor because it's obviously going to live on color yeah but that's only 50% of the game that's for Jamie I feel like we might have picked up the wrong briefing notes this is not a Jamie dish so I'm gonna stick up for Jamie cuz Jamie always goes all out like he doesn't play it safe he does what he wants and to hell with the lastly well they hope he's put more effort into his plate then he hasn't really I will agree with that now as for Barry if I was reading his dish on a menu smoked ham cheese potato croquettes tomato sauce probably the one I'd go for but is it too obvious there's an absolute classic but he says he's got a surprise at end you know bring it up a little bit something up his nasty little sleeves [Music] after a few minutes on the heat my figs have got nice sticky and syrupy then go into a mixer to turn into a paste and we'll come back to that in a minute and we can move on to my ice cream that's going to be mascarpone cheese number one mixed in with sugar and feta cheese cheese number two and we're gonna blend that up until it's really nice and smooth and then we can fold in our fig placed mixture for a nice marbled effect with my fig marble through it's time to cling film this up and chuck it into a freezer for a few hours to freeze and turn into ice cream but now that's mashed it's time to add some more flavors we've got some beautiful smoked ham at a smooth texture and I'm gonna rich it with some egg yolks now to let this cool voice Danger Mouse got soon I see tone-tone award ceremony I've heard the home underneath my cheesy bombs ass it's a beautiful Tommy sauce to make that we still need to dice up an onion crush some garlic get them frying off in a pan and then I add some chopped tomatoes and some hang on Danger Mouse penfold amazing tip when making a roux or a white sauce is that once you put your melted butter and your flour in warm up your milk slightly because it speeds up the whole process make sure it's all combined keep on adding it until you've used all of your milk and there you have the place to a white sauce a bechamel right what you've missed is me making the batter for my squeal biscuits that are going to be going on onto my plate that was just some icing sugar and some flour mixed in with some egg whites and then a bit of melted butter and some thyme leaves and then we'll leave this to chill for a few minutes to set up in the fridge and then I have to do a really hard thing which is to spread it out into triangles and make it look all pretty not your fault I'm guessing we're doing triangles because cheese generally comes in triangles this is where we're at I've cooked my macaroni I've made my white sauce added cheddar cheese to it got a cheese sauce added that to the macaroni look at that now I need to split this three ways and have my individual cheeses and the individual flavors and colors of the mac and cheese so that's one of my mac and cheese is going to be a bright orange color and that's going to be flavored with chorizo steep saffron smoked paprika and Parmesan cheese is that so how you want it I mean my ass is red raw finally I'm going to stir in some double cream and then add that to my first batch of mac and cheese mixture to complement my cheesy balls I'm gonna add a little bit of spice to the my tomato mix now to quickly blend this up and we'll be serving this warm imma put these in the oven for three to five minutes but I'm not gonna take my eyes off them because they're so thin that they might burn very quickly just live in the oven now you need to be really careful cause you don't want to break this it's a really nice outfit but you want to keep it so you can use it again batch two spinach basil parsley in a blender with some feta cheese and finished off with some more double cream mixed up and then added to my second batch to make an amazing spinach and feta green colored really [Music] it's not cooking this for friends and family it's probably better than to see you do this bit because you're going to be handling your food a lot Gabe potato flat it out what's there in a ball in the middle and then wrap it round there's no pretty way of doing this now to dip my balls I'm panning them flour egg breadcrumbs [Music] and finally for batch three I'm going bright purple with roasted feet true goats cheese that will goes into a blender gets mixed up with some double cream and then into this batch then they all go into a baking tray evenly and into the oven right quickly the final thing that I need to do before I start placing up its just roast off a couple of things that we've drizzled in honey so I'm gonna take five minutes but it's this is going to win me the battle now these wouldn't be exploding people without a fuse [Music] [Music] [Music] [Music] that is my paprika and saffron flavor what Jesus that one this is feta spinach and some other green stuff that is like spanakopita this is beetroot goats cheese and the fat you've paired three different cheeses with three natural colors are you actually kidding me just pour pour to live in this dish the only time he's ever done anything that's litigated UTA's room yeah I like no no no I like SIA [Music] I'm so sorry I'm honestly I can't believe I'm sorry [Music] now these berries exploding cheesy balls the choice of parmesan and Gruyere is strong there's nothing I can forego that is delicious this is so out there so different for Jane this is so off-brand where's your brownie boycotted I mean granted lack of effort on the costume but on a place that is the winner because that is absolutely delicious it's subtle and even with a port splurge for cheese week cheese ice cream that takes it that gets the brownie point so that gets my brownie point that takes the way from me this week in cheese week however you guys also get a vote so goes we can get all of
