hey what do you say my fellow weekend warriors today were smoking up some Texas smokehouse burgers and our pit boss KC combo they were kind enough to send this thing to me to use on the channel I've had a lot of fun with it it's very versatile and we're gonna be using both sides today this I were gonna smoke the burgers in this side here we're gonna saute up some vegetables it's gonna be really good let's get into this burger so right here we've got some 80/20 blend it's about 3 and 1/2 pounds and we're gonna try and make this into four burgers I'm just gonna eyeball it here keep things nice and simple and I like to make a nice loose ball and these are big burgers I don't think would be a Texas style if it wasn't big we want it to fill up the whole bun so let's get these formed just like this and now that we haven't formed into some nice sized burger patties we're gonna be seasoning I'm here with this Kosmos cue Texas beef dry rub this is really good on any kind of beef really brisket but burgers too so we're gonna get these loaded up good flavor sugar salt spices kind of Pat that in and what flip these dudes over and we'll get the other side too it's a big pieces of beef so I'm going a little heavy same thing just Pat that in make sure we get it on the sides and this is a great inexpensive way to get some smoked meat you don't have to break the budget every time you want to smoke something and these burgers are just right for that and that's it for the burgers we're gonna go put them in the smoke I've got the pellet grill set to 250 degrees Fahrenheit but you could do this in a kettle grill any kind of grill really you just want indirect heat if you had a gas grill you could put a little smoke tube in there and get the smoke on them that way and let's get them over here and I'll show you how I got it set up so here we are we're all preheated I still have my water pan back in this left corner it's kind of the real hot spot in this grill tin foil down to help with the cleanup and let's load these big boys in there remember we're not trying to grill these today we're gonna smoke them low and slow just load them up like that take any of this leftover seasoning here and get them on there close this lid and we're gonna leave them in the smoke just like this for probably an hour to an hour and a half and then we'll saute up our onions and mushrooms and get that cheese on there it's gonna be awesome I can't wait we just hit the 1 hour mark let's get this lid open oh yeah look at that nice color they're taking on just starting to see some juice drip now let's take a temperature check see how they're doing that one's right at about 130 oops that one's at 129 1:36 [Music] 1:37 so these are the perfect place for me to flip just do it carefully so they don't break and what I'm going to do is take these that were in the front and move them back just hit them up with a little bit more rub same thing with these and I'm just gonna let him go a couple more minutes before we put some cheese on and this is the perfect time now to get our vegetables cooked up I've already got this preheating let's just make sure it's hot enough and then we'll get them on there yeah we're pushing for 40 450 in most places and it's gonna get even hotter let's get these onions thrown down a little bit of olive oil first and the whole onion and I'm gonna season both the onions and the mushrooms with this heath riles garlic jalapeno rub this goes good on almost everything we're gonna season those up give them a little mix and I really want to sweat these down get them nice and tender you should probably take about five minutes or so so we could put this lid down it's been about five minutes let's see how they look oh yeah that's perfect these are coming on just how we like them just give him another mix and then write in with all the onions I'm putting in these cremini mushrooms put in your favorite kind of mushroom I like these nice strong flavor to them let you know you're eating a mushroom and a little more garlic jalapeno rope give that a mix and we're gonna cook these mushrooms til they get nice and tender I don't want to overcook them to where they get mushy just soft lid down for a couple more minutes and see how they're doing and it's been about three or four minutes it's awesome I love having that lid on here speeds it up a little bit those are looking just about right so while those are finishing up we're gonna put a nice toast on these buns the way I like to do it a little bit of mayo put it on here just like that same thing on these perfect so we'll get these off get them in a bowl check out these oh yeah good toast almost burn them but got them just in time let's get those off that one's looking good this one another second all right now that we got all that out of the way let's check on these burgers get the cheese on them if they're ready and then we'll be digging into these we'll just do a quick temperature check here for you guys I don't like mine too rare on the ground meat so we're at 142 which is actually kind of perfect so they'll have a few more minutes and I'm gonna use this smokehouse cheddar cheddar cheese get that on there just for some added smoke flavor [Music] two pieces on each oh yeah gotta love it let's get this lid down let that cheese melt and build us a burger these are gonna be so good it only took an hour and a half for that whole process did them nice low and slow indirect we put that Cosmo skew Texas beef rub on there we sauteed the vegetables and put that garlic jalapeno rub but toasted the buns so now it's time to build a burger let's do it get one of these giant burgers on there just like that get some of those mushrooms and onions that we sauteed real good flavor that garlic jalapeno a little bit of spice to it just a little drizzle of barbecue sauce use your favorite this happens to be the bone sucking sauce yeah baby then we can't forget our vegetables I got some romaine dad on there a couple slices of tomato put the lids on them it doesn't get much prettier than that I almost don't even want to cut into one of these but let's do it oh yeah beautiful perfect medium look at all those layers of flavor now I got a good bite it's gonna be so good here we go oh my god so good that's how you cook a burger right there indirect let it sit in the smoke for
