hey looking for the best way to bring in a new year and oh how we need it this time i'm talking about nachos not your ordinary nachos i'm talk piled high layered deeper bigger stronger stouter and all full of flavor with cheesy goodness and a bite that'll make you shake it and break it so tune in folks i'm going to show you how to get rid of this last year and get ready for the new one hey thank y'all for stopping by camping what a beautiful day it is clear blue skies that ain't know what you call photoshop that is true oklahoma goodness right there and what are we talking about here to end the year with and something we've always needed a feel-good recipe that can just be piled up on everybody's plate they gather around the living room put a tarp down because they're going to make a mess they are what are we talking about super duper supreme cowboy nachos did y'all get all that super duper supreme cowboy nachos this is nacho just ordinary nachos ha uh these is something and so special cause we're gonna tune them up just a notch you know the cowboy gonna throw some heat in there and some added little spices well first we gotta have some beef i'm gonna use a pound and a half now a lot of places you go they'd be using like a half a pound and you'd be digging around all in with them chips trying to find some meat that ain't even there what do they call that mystery meat because it's a mystery what happened to it i'm telling you now we're using good certified angus beef 80 20 but you can mix this with sausage anything you want to put with it because nachos is like a happy meal you just got to get it all together we're going to brown this meat yes we are add a little onion and then two secret ingredients what are we talking about here what is that duke he said oh i know what that is that is the magical fruit that make you toot that's what we call a bean duker it is black beans and pinto beans because we need them both we do so i got the dutch oven over here getting hot sand so follow me on over here and we're going to go to crumbling this meat in there hear that sound whoo that says the iron is hot let's get after it before you started to go ahead and dice up a whole onion we're going to use about half of it now and half of it later but you'll be telling yourself oh cowboy kent we forgot to go to store and get some of that taco seasoning in a pack that is the wrong thing to do because the cowboy couldn't show you how to tune this up to where it's fit to eat it didn't come out of no package they come right out here so we got what some onion and that is what i call half of that onion that is going to be a participant right now the rest of this is coming right over here follow me shane i don't know where i'm going but guess what's coming next folks as it begins to brown the magical seasonings now i want to let that brown like i said just a little before we ever add that seasoning because i don't want to cook it out of there and don't crumble it up so big to where you can't find the meat red river ranch mesquite seasoning why because it has some ancho chili powder in it and we're going to need it because that's it so does help we're going to season it up good dooker are you helping we're going to have some oregano get you a little sprinkling in there and if you've got some of that whole oregano remember we used it lay us out here you can crumble that in there it's even going to give it a better taste some ground cumin a little more chili powder because we got to have it oh what we're going to put some more in there i like it i do and that every popular thing that i like smoked paprika it is good stuff that'll unclog your sinuses right there folks i mean that is some good stuff now as shan comes in here you'll see that that's partially browning and that's sort of what we're after because i want to go ahead now and mix these beans in there this is just one of them little old cans of black beans but the black beans folks you gotta rinse them drain them rinse them drain them again pinto beans rinse and drain one time you're good dump them on in there now we're gonna stir it up and just let all them flavors come together because then we're going to taste it right there at the last to make sure that do we need to add something or we don't but how many of y'all like your nachos i mean the chips is hot when they come to you now if you're doing this preheat that oven to 375 degrees and get you one of them full pans dump them chips in there throw them in there you ain't gonna burn them we're just gonna heat them up that way we just wanted to stay warm i think it helps it hold off what are you doing culinary number two huh i need that i do so we're gonna put it right there two garlic cloves minced and we got that on what bertha would call the lowest heat setting you got ain't much wood in there just put it on a medium low heat and just let it sizzle because if there's any excess fat that is drained out of that meat we're going to cook it out before we go any further now as we're letting that just simmer along and i've done told y'all to preheat the oven and put your chips in there but hey would you get down please i haven't heated my chips yet and folks you want to get the thickest chips you can find so when you be taking them out of there they don't break apart so i'm just going to add some in this dutch oven put a lid on them set her out here on a trivet and we'll get me a shovel and get me some coals all them super duper nachos you ordered from across the counter or at the drive up when you though it's got this sour cream stuff they put on them at the side they just sort of lay it over you know he wants to play with the rest of the game let's mix rating and mixer radium did you hear that word so what are we talking about we talking about some cream cheese and i ain't talking about the fat-free kind sour cream sour cream and i'm probably going to use pretty close to about a half a cup or three-fourths and you could just say oh that's all you need right there cowboy kent really it ain't cause we ain't got a whisk diced jalapenos and i want you to drain some of that juice off of them since i ain't got one of them strainers right here with me because we don't need all that in there so let's get that in there and i want enough that it gives it some color and some flavor now let's go ahead and give that a mixing and we want it smooth enough to where bear with me shan we got to stir with this hand too let me see because i need to stir the meat over here but this has got to be to where it will sort of become a drizzle so add you some more that pickled jalapeno juice in there because i want it to sort of pour and drizzle all over that stuff and folks i'm gonna tell you right now it's gonna need some of this on red pepper flakes mm-hmm just give them a little sprinkling in here looky there don't that look like that looks like a christmas scene right there it does with snow and red pepper flakes but guess what folks it could stand just a little bit of honey it could so we're going to add it just a little bit of sweetness and this is some home grown right here don't take much about like that give it a stir and just let it sit right there the chips is warming show them the chips so they'll think i'm not lying okay the chips is warming the meat has got to the browning stage to where old bertha can say turn me loose guess what folks we're going to take the whole thing with us today because heat has caused things to expand and we need some cheese let's hear it for the wisconsin people up north yes bring on the cheese y'all know and look speaking of cheese there he showed up the cheese dog folks you can never what have too much cheese that is right shan knows now these are eight ounce blocks and hey i'd like for you to use it all if you want to but i'm going to stop at 5.3 ounces here in just a minute all the cheese gods have spoken and we've got it grated in there ain't it a great day it is and what do we got over here we got to make some cheese sauce just like we did for the cowboy crunchwrap what you didn't see the cowboy crunchwrap from taco bell we don't blow them out of the water folks they'll have you a link up there where you can find it but it took me half a block of that velveeta cheese got it over here just warming up letting it try to melt but guess what we're gonna have to put some cream with it when it get to melt in there i need you to go ahead and put you a little dab of butter in there or you can put the butter in there first but we're going to need a little something in there to give it some slickem whipping cream heavy cream as they call it in places and it don't take much folks just enough that we can get her over there and you're going to need to get this back to where it is hot and thin enough that it'll pour over them super duper supreme nachos now you want to do this on really low heat and when you got it to where it's getting close to getting that melted stage cheesy goodness that's what i'm talking about we need to give it a little smokiness what do we got liquid smoke folks this stuff is as powerful as dynamite it do not take much i'm talking whoop that much right there i want you to see how much that is when it gets in there are you watching folks that's all it takes that's what you call 1 16 1 32 of a teaspoon and stir up really good because i can already smell that smokiness but guess what that cheese need it needs a little heat so what are we gonna do give it some red pepper flake and while that's sitting there just go ahead and thin in itself guess what it's time to get the chips off the fire go to blending this deal together and have some super duper supreme nacho dance kick back whoop nacho libre ain't here no no be [Music] ain't [Music] so ain't that a pretty creation we done made look at that all mounted up there like hey remember what i told you yes this is not your nacho nachos this is supreme cowboy supreme nachos that are oh so good and i can't be waiting to have me a bite make sure i get some of that their sour cream goodness on there and some cheese goodbye 2020. hello 2021 here come the [Music] nachos [Music] this is what i'm calling some good folks my tongue is having a holiday there's so many flavors in there blending so well oh my goodness i don't know that i've ever eaten anything this good in my life that had to do with nachos as rocky balboa once said when he got in the top we are the champion it is good let me
