it's the twilight of the holiday season a new decade is dawning my sweethearts visiting family so I'm flying solo and very much looking forward to indulging in a two inch prime ribeye steak that I planned to sube while chasing some backyard bass the ribeye prep is super simple which is four ingredients coarse sea salt fresh cracked pepper organic rosemary and a fresh clove of garlic oh it's so beautiful out well I have a green egg and a gas grill so why do I love to sube to cook a perfect restaurant quality steak all I have to do is set my Innova to the perfect temperature for medium-rare for me that's 129 degrees season the steak with salt and pepper sometimes rosemary and garlic seal the bag submerge and go fishing for 2 hours if you take a close look at the bag all it has right now is salt pepper and rosemary on both sides the fishing was great when I had about ten minutes to go on the cook I steamed some Brussels sprouts chop some onions and a clove of garlic you need to dry the steak off before you sear it's really important always save the rosemary and you can use it when you sear the torch is fun but not really necessary the cast-iron does the majority of the Serie I love to use the torch to focus on fat and revise because it helps you render it perfectly when you sear the first side just use the high heat of the cast iron wait to add the butter and garlic until you flip it over until you're about halfway finished with the sear otherwise the butter and and the garlic can taste really bad but if you put them on halfway through they'll be perfect it turned out perfect medium-rare tender it's delicious it's so easy to do this at home just try it you guys will absolutely love this if you need to cook like my wife likes more medium well and instead of medium rare you put hers in first for like the first hour and then bring it up to the temp cool the water down with an ice pack and throw yours and guys you will absolutely love this right here I'm piling on the veggies because I'm home all alone and no but he's watching this except for y'all gonna put some potatoes on here probably have my last carbs of the year at least for the next couple of months anyway hope you guys love this I know you can do this you'll absolutely love it the only thing tough about your steak will be saving a bite or two for your best buddy thanks so much for watching let me know how it turns out okay you
