welcome back to smoking ribs I'm Russ Jones I am down here at the sheds barbecue and blues joint here in Ocean Springs Mississippi they are having their second annual steak called their steak cook-off and I'm participating with Maggie Farms out of Alabama and I'm just helping out I'll be working on the ribs along with Brian ducharme from smokehouse about you we just don't take some random footage of our day walk around and get some some footage of different teams there's like over 200 teams here today so we got some stiff competition ahead of us gonna be doing a turducken for the turkey entry the turkey breast entry also doing ribs and a force of steak and also let's see what are they doing the Bloody Mary yeah they're doing a Bloody Mary contest as well so we're just having a good time a lot of fun out here on a beautiful day in South Mississippi [Music] [Music] well I heard that Malcolm Reed was hanging around here somewhere and look what I found there is you drug me up how you doing mouth hey it's a but you know I know this is the first time we probably met face to face it is I know we exchanged some emails and stuff yes pleasure man yeah two Mississippi guys kind of leaving Intel finding so laid-back here in the camp yeah well we did it the easy way we called down and rented a trailer instead of pulling our big woman right and they brought it to us said I didn't know you can do it my wife actually found it online really niqab no it is this is a neat little area that right here by the shed I mean yeah you know Brad and Brooke they got the food go I got this campground that you can stay out here this man this this contest is I believe I might live up the road but I might rent one cabin that would be cool yeah man I'm gonna get out of here that's a nice pitch you got yeah that's miss Jolene yeah we got some ribs on hard we're gonna turn those in here in a few hours and then we get into two more steaks today - awesome awesome good luck man yeah thanks a pleasure to meet you Ben yeah you too my later [Music] original ready we're just going straight no [ __ ] no binder I mean we've got you know we've got quite a bit of time before we even really have to have these so probably a binder they'll be not even then they'll get sweated in a real nice bother why are you not using binder with brain one yeah that's the biggest reason for us when you did those reels the other night did you go any heavier what I'm doing right here oh yeah I went a little hit a little heavier net these judges are gonna think probably one bite out of that so you've got a pressing with that one bite I got loads a point yeah but it'd look good at these good man [Music] [Music] all right now sorry turn we're gonna go on with some ribs got two racks the st. louis-style cut ribs we have them seasoned with the Blue Hose which one did we use the original where I use the original yeah yeah put some things in get them sip that's the way they don't cook all right we gonna cook the color on this cook which means we will be doing a wrap later on but for right now let's just get a top on this thing the smoker is a gateway brand-new gateways second cook on it and we're hoping to do good things but it's all I can say right now it's behaving like a champion doing excellent so I'm thinking we're gonna have some good ribs that handle all right we're then going a little over an hour about an hour and 15 minutes haven't looked at these since we come on let's take a look at some together yeah we need the sprints I tell you what they don't need to get a whole lot more another 20 to 30 minutes Tom likes Hetal I'm glad we looked at movie all right what we got apple juice and that'll buy us with this butter with this mode that's a pretty color now once again that is pretty fun I wouldn't kill anyone maybe let's just go ahead and put the lid on and talk about it maybe ten more men yeah pull around okay alright we getting ready to do a breath we got through this blue holes original songs down we got a little brown sugar going down right we're going down yeah [Music] I'm gonna take some of this honey this is a Barbie it's infused a little bit of rappers including ghost pepper just a little kid coming back in we don't want to burn the judges up just a little bit just a little bit of that living this little bit we're gonna flip these meat side down all right if you see anything that needs to come off there we'll kick it off pretty good for the most part all right we going on with more brown sugar this is on the ball inside a bit more butter all right now we're using de of the other sauce here now this is the Blue Hose tennis what is that Tennessee red this is dinner sauce gives you two different flavor profiles on the same rack same rack ribs I'm not playing this in one eye spicy honey United versus so [Music] all right look you guys we're going to double wrap these will go neat side down to the 10th place these on the pin I'm gonna pull the other rack off do it [Music] all right we are pulling these all for your swim do a quick check on them they get another good Bentham so we might be close we can put that lid back on check these real quick so we're at [Applause] they can go a little bit more I'd say that I don't need to sleep right here yes like 192 we're not you already waiting to go bout another 20 minutes huddling for my right let's check them both [Applause] demands are always going to quicker than the moment we're gonna be cut from them looking for all it got to go a little bit long I'll go check them out and over over shoot a bow down on my feet I think things are done alright let's just put that one rack on so I now get some back in there all right so both racks ribs they're resting in the ice chest it's a little early to glaze them so I'm just kind of hanging out in ice chest still wrapped in fall still cooking somewhat so when it's time we're going to take them I'll open up the fall we gonna make little boats drain the fluid off and glaze and go back on the pit but I want to show you real quick I asked my wife to the day getting ready for this comp I was at work so I said hey could you please go to Academy give me some charcoal some cherry wood I need to lounge chairs so we got here this morning because I knew it'd be standing on our feet all day this is what she brought me I'm surprised it didn't hang on my foot all right real quick go and show you what this was gonna be glazed with we got two types of honey that's just straight-up honey this is the fire beat honey with a touch of ghost pepper this is the blue hogs Tennessee red we got smokehouse bayou excellent barbecue sauce along with the blue hog original and that comprises our our glaze so hopefully the judges thinks it's good [Music] this man is a Rembrandt he's done some Beijing before have you ever seen Peter the roof of a building before the ceiling you know that in the role for happy son Bob Ross a happy little judge right here and I honestly it's kind of more like sherbet Williams up and down you know there's the blue tape around here somewhere put some pinstripes on man you know a little bit of ash on you that's called man glitter right there Bron if you'll go back in smokebomb that smoke the turning darker so there's a little heat caramelize that glaze and it turn it Matt we don't burn it we just let them go just like this ten minutes don't want it thing if you get to mr. mopey that'd just be crazy to get darker I really don't want that right grab ya colors great guys explain what he do what he is doing is he is slicing the ribs that we're gonna turn in he's painting the edge with the renderings from the bottom of the ball that would give it a little bit more flavor another layer of flavor plus it just has a better appearance more for aesthetic reasons and police [Applause] [Music] [Applause] [Music] [Music] [Music]
