we've got about 10 12 green wing teal great flavor one of the finest eating ducks that flies green winged field that's what all the kids say like that better than mallard or what other dance so we got green wing teal ducks and dressing coming up kill them well this is thanksgiving and we gotta have a lot of thanks we uh sing praises to the almighty for making the ducks creating them so we praise him always thanking him for what he did on the ducks and we also sing the canadian national anthem when we see the first few big bunches of mallards we all stand in the blind and sing the canadian national olympia when we see them coming thank you canada for sending the ducks so you have bread rich crackers and saltine like these rich [Music] white bread and then she's making cornbread this is cornbread dressing you're boiling your ducks so you get your duck broth that softens all this up soak it all up one can of evaporated milk a little rub sage and the boiling we're going to use the broth to pour over in here they got to cook that white bread a little along with the women in here i'm basically just putting together they're they're building the stuff for this will feed you know 30. you know 30 people 40. so it's a big pot of dressing then dump it right over in here i'll wait till they cool down it's hot i like it but the white bread crumble up after we get these all crushed they cool down a little bit we'll crush them then we'll the ducks when they get near done they've been boiling 40 minutes 45 minutes we'll give them the way you check that you ease down there you have a scoop in that hand and you grab that leg you grab that leg bone and you tug on it just a little that leg and that thigh begin to loosen up close enough you want them to stay intact for your presentation see [Music] you don't want to get wild with this at all you don't want to get wild with this i'd say that's enough right there you don't get you don't get wild with that because you a tablespoon of that is too much pan's growing see put your ducks around the top bake that the whole thing about an hour and a half about 300 with a lid on it so it just steams three hundred two two eighty five let that go about an hour and a half it's a big pot everything is already cooked see so you just you're cooking you're basically cooking your eggs all those cooked together and uh you got your duck and dressing this is an old old old recipe going way back this is what we were raised on how many onions you want you saute these about three on this bell pepper celery how many sticks of salad did you use like individual cake six six perfect salty them so they get tender saute them in butter that's all you did and they get when they get salt that's going over that pot over there that's going in your dressing onion bell pepper salad just call me mr organic get it right out of the woods last night we had deer wood duck breasts cream cheese jalapeno peppers between them wrap them in bacon grill them dressing with some duck wraps with the other ones we keep the ducks coming in we good get em one just get out of them you landed up on that jump too you you've got your seasoning that i see all your seasonings there you rub sage is already there when you get it all in there before you put your ducks on it you check salt they add a little touch check your sage may add a little bit you got it down to the final final stage we're going to willy's i think but he'll have all the i mean he'll have all kind of stuff you know there'll be hams and fried turkeys this is just they said dad make the dressing the golden thanksgiving let me do it start pouring it in there give me that old big spatula that thing over there set it back down lock them up [Music] [Music] [Music] i tell you what it's pretty dog going good for this you put but i'm telling you this is a little zesty [Music] from start to finish after you have your ducks dressed salty vegetables onions bell pepper celery saltilla two big pans of cornbread ritz crackers saltine crackers crushed up a whole platter like this of white bread let it let it sit there 275 in the oven and it gets crumbly you just crush it all up of course you all add up put them over in there tear all your cornbread up and all your crackers crush it the only thing you added little sage i had three bay leaves in the duck broth while they were boiling three bay leaves salt black pepper your ducks boil for iron 40 minutes just tender took all the ducks out poured the broth over and part of your breads it was actually it wasn't globby not runny but not globby in between six eggs and this one whip them stir them in one can of this evaporated milk i arranged the ducks and i put a little little touch of salt and black pepper on top of each duck and a little my seasoning just a little sprinkle so now the eggs will be cooking they've kind of cooked already with the hot broth we'll put it in the oven in about iron 15 minutes to hour and 30 minutes right along in there take it out offering thanks to the almighty for creating them
