hello my old school soulful family chef jeffrey back with another video and today i'm continuing my uh fall and winter type menu items today i'm doing some old school jambalaya i'm gonna have some shrimp in there i gotta clean some shrimp fresh gulf shrimp here i'm gonna do chicken i got chicken breasts here and i'm gonna put some kebasa sausage i know most i'll have andui sauces in the uh jambalaya i like kabasa in mine because these are for my mama to eat it's more of a tender sausage i'm gonna have uh onions bell peppers celery that holy trinity a few spices of mine and some tomato products so what i'm gonna do i'm gonna step off i'm gonna get everything prepped up and stuff and we'll come back because all is done in one pack one pot thing in the oven so i'll be back here in about about 10 minutes i'll get everything clean and chopped up and we'll get cooking so we'll be right back all right y'all i am back here i got everything prepped up here and we're going to make this uh jambalaya doesn't take that long to do the whole process takes about 45 minutes really don't take that long okay first thing i'm going to do i'm going to get my meat sauteing off i got some chicken here i'm gonna put my chicken breast in here what i want to do i want to season my chicken bread i want to do it first because chicken breast is going to take the longest so i kind of need to kick start it i love cavernous heat season granulated garlic y'all know my uncle steve shake and i'm gonna put more than i normally do because it's gonna be like a cajun so a little bit extra okay just going here you can see it's nothing like a big old pot of of jambalaya and the sun on a nice fall day so what i want to do i'm going to get this chicken all browned up round off because when it's when they're cooking in the oven this is going to be the longest thing to cook is the chicken so i want to be at least get it three corn you know halfway cooked off already and when i add everything else put in the oven this chicken will be completely cooked too i spread it out this is like a it's like one large chicken breast that's all it is let me move this up where y'all can kind of actually see what i'm doing here oh this stuff smells so good with the having the seasoning and then my uncle steve shake you know can't go wrong y'all didn't go wrong so okay y'all now got that cooking off now now i'm gonna put my kebasa sausage in there get it cooking off course the kebasa is already already cooked i just want to warm it up a little get it warmed up so we're gonna have three meats in here i mean you can use whatever meat you hear if you don't want chicken in you'll have to put chicken if you don't want sausage in it you don't have to put sausage in it you don't want i'm gonna put nice fresh gulf shrimp in here too so get that cooked off a little bit just takes no time at all cooking y'all okay now that that's cooking cooked i'm gonna take this out of here put it on the plate here and i'm not gonna do my shrimp until the last minute y'all let's see when i put my shrimp in there right now i'm gonna get this here out of here or i can do my vegetables this we got that nice look at all that good flavor in the bottom of that all that nice flavor in there look at that that flavor come out of that cabasa sausage then the flavor i already had in there shoot no better than this y'all okay now now what i'm gonna do now i'm gonna put my holy trinity in there but you know if you know anything about cajun cooking this bell peppers celery and onion put that in there put some garlic in there with it get this stirring up in here so i got garlic in here bell peppers onions and celery get all this sauteed up so i'm gonna step off because it's gonna take about five minutes to get translucent and i'll be right back when this is translucent okay y'all we back okay now we got the uh holy trinity here all nice and soft here now what i'm gonna do now a little spoon here put a pan of crushed tomatoes in here you can use rotel tomatoes if you want to i just prepare i don't like mine that spicy i prefer to use a rotel then we're gonna put some tomato paste in here give it some more color y'all [Music] more color in here all right get this all stirred up in here get all mixed up it's coming along real good y'all all mixed up in there mixed up it smells so good y'all so good okay now next thing i'm gonna do i got that all mixed up put my rice in here that's been washed off get it stirred up in here i got a couple of cups of rice in there and then i'll stir it up in here get all mixed up in there now i'm gonna put two cups usually i would do four cups you know i always say do two to one but i'm gonna do three because i got liquid in here from the tomatoes and i'm gonna use chicken stock i got some chicken base here that i'm gonna put in here to give it that extra and extra chicken stock that extra flavor so it's really going to be chicken stock but i'm using chicken base and water which is going to make my chicken stock so get all that stirred up in there okay and we'll put one more cup of water in here one more cup of water get that stirring up in there look how pretty that is y'all now now on the thing now i'm gonna check my seasonings check the flavor and stuff i gotta put some more a little bit more cabinets in there and i'm gonna put some salt a little salt in here and a little black pepper a little salt and i'm gonna put some black pepper in here stir that up in there okay let's taste this here oh yeah baby oh yeah that's good now now i'm gonna put my meat back in here now and all that meat i had put that back in there and i'm putting my raw shrimp in there now put that in there shrimp in there completely raw now what i'm gonna do put this in the oven for 30 minutes but after 15 minutes i'm gonna check it and stir it after 15 minutes in the oven it's gonna take about 30 45 minutes but normally when i make it takes about 30 minutes so anyway 350 degrees in the oven like i said at 15 minutes i'm gonna come and check it stir it up make sure the rice is not sticking and put it back in the oven so we'll be right back all right y'all we back here okay what i'm gonna do like i say after 15 or 20 minutes i'll take this out here and i'll stir this up put it up here see that i want to stir this around make sure the rice is not sticking make sure it's fully incorporated how pretty that looks y'all look how beautiful that looks [Music] another okay minutes or so and it'll be ready so we'll be right back all right y'all we back let me cut my oven off and this should be ready so i did about about 45 minutes with this so let me show you what i got all righty that's the unveiling look at that oh yeah look at that gumballah old school that baby old school there look at that oh yeah smell that shrimp in there the sausage oh yeah that's what you want right there perfectly cooked oh yeah so i'm gonna let this set for just a second i'm gonna come back and i'm gonna plate this arm up and we're gonna see how it tastes we'll be back in about five minutes okay y'all wait back here okay let's taste a little this here let me scoop a little on the plate here can't go wrong with this y'all can't go wrong with some plate of jambalaya all right and i didn't put no hot sauce in it before i'm gonna put a little on there now a crystal hot sauce we're gonna check this out oh it's hot sausage the rice is perfectly cooked i use that tender kebasa you can use and do it chicken breast is ready i got my shrimp here it's very hot y'all can see it's smoking this is good i like eating it with garlic bread people from louisiana don't judge me too hard i guess this is old school texas style jambalaya shrimp is nice and tender not
