hey welcome back to how to barbecue right i'm malcolm reed i got my man a b all the way from california you flew in to show me how to cook these delicious lemon pepper wings hey b you ready i'm ready let's get to cooking so a.b what's the first step i know i've got five pounds of chicken wings now these were whole wings i went ahead and cut them up into flats and drums and that's the way i like to eat them that's the way you cook them in the video so first thing look we're gonna put our flour and then we're gonna add our seasoning and we keep it super simple just salt and pepper we got about a cup and a half of all purpose flour i'm going to dump the salt and pepper right in about a heaping teaspoon of each is what's in there right and you know that salt is what's going to enhance the flavor of the lemon pepper now look i'm showing out cause i'm from california i'm gonna use a whisper okay you know how we do we get that fork in here that's good that's a grandma style right there that's right if you really want to keep it old school my great grandma taught me how to get the bag you remember the shake and bait oh yeah that's where it's at that's it that's it so look i keep one hand i like to have a dry hand and i have a wet hand all right so look i'm just gonna add one and i'm gonna add it in like that right i'll take this end i'll just go ahead and put this on here but it's gonna be something that i do that's a little bit different you notice i'm taking the flour and i'm squeezing it on kind of pressing it in yes yes you wanted to get in all of the crevices all in between all of the you know let's get it we're gonna make that that nice crust on that outside of that wing right right right you'll go ahead and do one all right hey i'm gonna do a wet one i'm gonna put a few in if that's okay there you go get them coated real nice and we're going to give them a little squeeze to make sure we're getting all those little nooks and crannies right yes sir i'm going to tap off the excess on the side because we don't want it to get too heavy right we want that light flower absolutely and then line them up so the same thing for all the rest of these now here's another little pro tip too that i didn't do just now you know how we added the salt and the pepper to it that's right listen i was raised and we supposed to taste the flour okay because when your flour is seasoned properly that ensures that you know our coating is going to be just right on that chicken i got you i wouldn't taste it now though would you normally get that that's right right there right [Laughter] we about got these knocked out ab they're floured up and it's about to be fry time [Music] i can't wait so amy tell me about the frying part now you told me we was gonna fry these wings and that's probably besides a grill that's the way i'm gonna cook a wing i've got some oil out there hot for you one of my new friars i got here at the shop what do you want to do to it real simple look we just want to be 350 degrees and listen we can use a cook thermometer you know so we can look in there to you know see what the temperature is we like it for them to be about 160. you know they say 165 but i like mine to be a little bit on them as moist as possible you know me to have that exterior uh that crunch to it and it'll be like super easy we look i'm gonna be honest with you man a lot of times when i cook chicken i mean a lot of people you know me being from california they like to hear their numbers right but for me i cook for the color you know what i mean once they become that golden brown i do double check it but use it at 160 165 once we get that okay so look first of all i got to pay homage to this rig you got right here this right here is something special you know where i come from we always cook in the inside but i like the fact that when you down south this is about having that family friends and that environment being outside i'll just start off by taking just a couple and we'll just put them in here like this we're gonna do them in batches right so we're ready to drop right we're going down 350 degree oil we got a nice gentle fry on it yes barely got the gas on on this fryer and it's just giving us that 350 steady it's going to take what about six seven minutes six or seven minutes that's it look at this one right here i'm gonna say i like that color and they're gonna brown some more golden brown golden brown i'm gonna pull them up those look the same maybe to me let's get them up here a little drain just a minute and we're gonna take them to our little raised rack oh man let's get another batch in we're just going a few in the basket at a time you can get about five or six you don't want to overcrowd it like my man a b said that looks good to me drop them back in that grease get them rocking and rolling golden deliciousness i love the way you say that all right don't let me burn you look at that right there oh man you did a good job bro that's some chicken wings now let's get in there and sauce them that's right let's do it we inside i gotta say this right now hey thank you sir for bringing us inside of here man that humidity outside is no joke right it's like the mid-south gets hot in the summer maybe it's probably gonna be hard for me to talk right now because i can feel my mouth it's salivating and doing all of that right now you know smelling this chicken we ain't knowing what we're getting ready to do right look we got our butter i'm gonna go ahead and do it like this because look i've been making them so long i just about know how much it is right so that's two sticks you know what i mean i guess we're gonna just put in a little bit don't worry about it folks look they lemon pepper wings right and then you got a lemon you got a half right there yeah i got a half for you right here i can get you another one if you need it all right so look i'm just going to take my hand like this and you can see obviously the seed we just catch all that but what we're going to do is just put that juice in there with it all right let's give it that fresh essence these are what i call level ups most people just put that seasoning on there but we got to go all the way as you're putting a couple of those in there i'm gonna go ahead and just get something in the bowl you don't want to do this it's like it's like dredging you don't want to do too many at a time that's right for me i start off by doing it just a little bit like this just getting this on here just like you see right this is the fun part right here make a mess right here right there hey i'm so glad you said that so look we just tossed them like this you got to kind of like you know get it get you all the way yeah put the popcorn there you go right there you go look at that right there you could just see oh it's coated yeah yeah goodness you want to just go ahead and start taking some of these out yeah and i'll add some more to the bowl right here let's toss a few more i think i can handle it i think i can handle that many drizzle them up for me there you go they got a good coating though we're gonna throw these right out too on the board right can you smell it i smell the butter i smell the lemon i smell the pepper i love it give me another little drizzle there yeah sure that's the good stuff right there not at all i don't want to wear it but it would be the first time and then listen i got something for you though i'm just going to give them a light little coat we'll just go like that just a little bit top coat right top coat that's that what's that what do you call it that little something extra what is it oh that's that money shot right that's that money no wait wait wait wait wait wait wait when are we going to do this you know i'm gonna let you do the honors all right little so we just got some parsley we finally chopped up fresh parsley you get at the grocery store but you just want to pop it up green right that's it you guys can come on out and pick yourself up with three piece six pieces it doesn't make no difference look at these right here you tell me these ain't fire but we're not done right we got the zest too we got to zest them you know man we just go over the top and just put a little bit like that just enough for the pop right right just enough to make the back of your back of your jaw like amy this is my favorite part of the day man man you ain't got the children you can't hold me back no longer let's get in here and get some of these wings hey you know of course i got to start with this flag oh man that's what i go for flat's where it's at that's what rick ross says at wingstop what you know about rick ross oh man this is so soft ma'am tinder [Music] that's done to perfection right there i get the lemon pepper i get the butteriness from it i get the seasoning i get the zest all of that in one wing if that's not the best lemon pepper wing i've ever had i don't know what it is all right now notice i don't have a whole lot to say right because this right here is fire bro that's a good wing a b i don't care what you say you nailed it with this one and i appreciate you showing me how to do it oh man you're welcome bro before we get out of here i want to make sure i got this straight we started with about five pounds of chicken wings we hit them in the dread season simply with salt and pepper fried them up at 350 about seven eight minutes until they're about 160 internal melted our butter and mixed our lemon pepper with it tossed them hit them with the lemon zest hit them with some parsley and man we got a fire lemon pepper wing am i missing anything nope but now you got me nervous cause you just recap so well i think your video gonna be fire
