okay so i'm going to cook the most delicious chinese inspired steak sliced up with a beautiful dressing of chili and ginger i'm using a rib eye here and if you look at it it's beautifully marbled with fat you can tell it's good quality so what i want to do is rub this with beautiful beautiful flavors so first things first i want to do the salt and regular pepper and then as far as kind of like the chinese flavors are concerned there's a couple of ways to really get that in there the first one is szechuan pepper and it's really weird because it gives your tongue like a kind of glow like a it kind of makes it a bit numb i really like that i've got a tablespoon here i'm going to pound that up in a pestle and mortar just pour that in your hand and then season that around your steak as well and then chinese five spice you can get it in all the supermarkets you know about a heaped teaspoon of that just sprinkled from a height and then just a little bit of olive oil to go on top and then we pat it in i'm going to put this griddle pan onto full whack because to do a proper steak you need to have it on a screaming hot heat let's get the steak on it's had that beautiful rub and it's gonna have a really beautiful flavor so i'm gonna cook that about medium i'm gonna turn that every minute minute and a half and look after it maybe give it a turn look at that sizzling away that's what we want just have a feel i'm happy with that i'm just going to put them on to the side now they've had a minute and a bit on each side so they're cooked about medium what i want to do is get some chili some garlic and just a little bit of ginger first of all get your garlic crusher put your garlic with a skin in don't bother peeling it and just crush it on to the board then i like to use like a fine cutter on a box grater or one of these little manual graters just grate your chili about a teaspoon's worth ginger about the same but you don't need loads of this stuff scrape that off and then some olive oil in there and a little bit of lime juice and just use the lime just to mix it up right here you go look that's exactly what i'm talking about get that steak move it around that is how you're gonna get amazing flavor and then at an angle slice that steak and look at that just blushing so there's your steak get your coriander and just pick some of that over like that bit of lime in there if you need it little drizzle of olive oil just to sort of mix of all those resting juices and there you go a perfect platter of lovely chinese style steaks people are going to be fighting over that lots of love guys thanks ever so much and enjoy subscribe and check out some of the other chefs on foodtube take care guys bye
