hello foodies welcome back to sherry the chef today I'm going to be showing you how to make a delicious savory ham and bean soup and we're gonna do it in just a little under 30 minutes so we're gonna do this from dry beans and again in 30 minutes with no soaking and no boiling we are going to do this in a pressure cooker so you're gonna need one of those maybe you have an instant pot I'm going to be using pampered chef's quick cooker and I prefer this one this one has handles on the side but mainly for safety reasons it stays cool to the touch the entire time you're using it and our steam release button is here verses back here where the steam actually comes out so I have it set to see her right now the first thing I'm gonna do is toss in about three tablespoons of butter so I turned that on just a few minutes ago so it is nice and hot and our butter is melting yeah and then I'm gonna add two ribs of celery that I've already chopped then two whole onions that I've also chopped already start to saute this a little bit [Music] not a whole lot I'm just gonna shred some in here and I also know using the tamper shut grater which I really like because you can use it as a traditional tabletop or you could do it right over the top of your pan so again not a whole lot [Music] [Music] and I'll be adding more in later but we've got a secret ingredient in that we're gonna use here and that is gonna be some instant mashed potatoes so years ago when I first started cooking I would make things like ham and beans or even like chili and a lot of times they would be like really soupy like watery and so one of the things I realized like like making chili for instance I used to drain off the grease and then I would put my beans and my meat and you know my tomatoes and everything and I thought well there's no liquid it's mostly all beans so I would add water or maybe even tomato juice but then it was just like I said really runny and soupy and so I realized that instead of training off the grease I would put flour in with the ground beef and then that way it soaks it up and it becomes like a roux and it actually thickens your chili so when I first started making ham and beans again I like it thick and creamy so what I would do is after it was done cooking I would take a couple of cups of beans and I might put them like in the food processor with a blender and get them mushed up and then I would add them back in and that would kind of thicken it up then I started using sometimes like leftover mashed potatoes I love to use leftovers to make other things and incorporate it into maybe like the next night's dish and so eventually I realized the easiest way and absolutely flavor too is just to add a package instant mashed potatoes so we're gonna add in a little more chicken stock we've got something to absorb our potatoes alright package of instant potatoes so you could even do like a flavored one I don't think I have the I think it's Idahoan makes the garlic ones that are really really good so see how that's already sticking it up just a little bit alright so then I also have I made a ham a couple weeks ago so I saved my hand both from that I'm gonna go ahead and toss that in and of course I've got some of the ham left over but I'm gonna wait and put that into the end just to see how much room I have left so of course we need some beans we're gonna use a pound of beans that's the two pound bag and already use half of it so we're just gonna dump the rest in there and those I've already picked through you know we want to make sure that you don't have any rocks or anything like that so as far as seasoning goes I told you the bathroom has potatoes were like the secret ingredient but I always say the other secret ingredient love but sugar love and sugar about the same thing to me so I'm just putting just a couple of teaspoons in just like salt brings out the natural flavor of food sugar can bring out the natural sweetness so I probably should have stirred that up before I put in that big old bone all right I'm gonna add a couple of bay leaves well I need a whole bay leaf and not the ones that are broken up pull them out like this seasoning is just a couple of dashes of Worcestershire maybe don't have worked you're sure you can use soy sauce all right never really should've mixed all this together before all right so now we're gonna put in our chicken stock actually we're using vegetable stock you can use chicken stock if you have it on hand now it's turn up just a little bit better oh sure we're not above our max fill line here and that it's probably good oh the only thing we need to do is replace our lid all right and then we've had it on seer so we're gonna cancel that and then we're just gonna turn the dial this actually has a dial or a setting I should say for beam so we're just gonna turn it all the way to beams and we're gonna hit start so it's on twenty five minutes it will take a few minutes to build the pressure but as soon as it's done building pressure then it's gonna take about 25 minutes to cook and we're gonna have ourself a bowls ham and beans so I'll see you back here in just a minute okay so the timer just went off on our quick cooker and what happens when the timer goes off is it goes into a warming mode so if you're outside or maybe you love to go to the store and you have this cook and while you were gone it will automatically go into a warming mode and it will stay warm until you open it up or indefinitely I guess I'm not sure how I know I've had it for two three hours before I've actually opened it and it is still hot so so be careful opening it up but what will happen now is let's say that you did do that that you were away and you didn't open it for you know hour hour and a half the steam will naturally release on its own however we're going to do a manual release we're gonna hit the button and the steam is going to come out of here so this has a safety mechanism on it there is a little I like to call it a little bobber it's a little red I call it a bobber stands up when all the pressure has gone out there that's gonna drop down and then it will let you open it right now it will not let you open it at all so and again that's a safety feature so we're gonna press the button to come out so one thing I'd be careful about it's putting your precious sister like under your cabinets you wouldn't want the skin or the moisture to get up under there and children those so look at my other video I just did a video on cornbread this one is better than him our Bowl hands being with one boy fried potatoes my husband really likes participated fried potatoes and beans cornbread and then he mixes it all in a bowl [Music] and if you let it do it naturally it's gonna take probably I don't know 15-20 minutes I'd say on all the steams probably out of it but again it will stay warm so and you don't have to hold the button down oh this is one thing I want to show you so the button has been pressed as you can see it's kind of indented there so the steam is coming out now before I can use it again I would want to push that button so that it seals it back down so I have done that a couple of times I'll started to cook something else and I've forgotten to push that button and then I'm wondering why my pressure cooker isn't building pressure so like I said you don't have to hold the button down it just seems to come out a little bit faster and our little bobber has dropped down so now we are able to unlock it and look at that and I will tell you anytime you cook something at a pressure cooker it is extremely hot extremely so we have got our bone down in here and you know what I was gonna try to fish that out but I might make a big mess on camera you watch the cornbread video almost dump all the cornbread and the floor and it's about done so I'm gonna be posting that video here shortly to don't look at that or me a nice big bowl and as you can see it's thicker because we put those potatoes in there that would have been had we not have put the potatoes in oh that's one thing we need to do I'm gonna grab a spoon real quick because I need to fish out a couple of bay leaves and I just saw one in my bulb there it is right there so what's he gonna find the other one real quick before I forget it might be well there it is whoop there it is I hope that's that there is time all right so we've got those out of there and that's it I do need to take the bone out but I'm gonna wait till it cools off just a little bit if I happen to drop I was gonna use my tongs but if I happen to try and I will burn myself so see if I can taste this one thing I really like to eat in my hand beans though his hot sauce and some raw onion so I should have chopped up some extra onion there save some and then but what I put in there earlier I'm probably gonna burn my lips oh my goodness that's delicious and the bean beans are cooked just perfect you know they're not tough anymore they're soft but they're not falling apart so anyway I hope you enjoyed that again it only takes about 30 minutes so I'll see you guys next time bye
