you've been requesting more instant pot recipes your wish is my command so I went into the Test Kitchen to make a delicious in some part vegetable soup because now more than ever we want to increase our vegetable intake to support our immune system so let's get right into it [Music] let's get your washed veggies ready and then start by cutting off the ends of an onion and peeling it then chop it really finely peel three cloves of garlic and chop finely as well add the chopped onion and garlic to a bowl and set it aside now grab a red bell pepper and cut off the stem and seeds and then first slice and then dice it and do the exact same with a yellow bell pepper now get the carrots cut them lengthwise and then slice thinly and do the exact same thing with the celery get some cauliflower and cut into bite-size pieces until you have enough to fill about two cups now I cut the zucchinis lengthwise and a slice cut the asparagus into about 1 inch long pieces and lastly the stem 3 leaves of curly kale and coarsely chopped leave the kale on the chopping board because we bone pressure cook that now pull out the instant pot connect it and then press this ot button once the displace is hot add a drizzle of avocado oil into the instant pot and your chopped onions and garlic and saute them until slightly Brown once the onion is browned add a splash of vegetable broth and place the bottom of the pot by scraping off any bits stuck to it turn the instant pot off at this point and take your time scraping then add all the chopped vegetables except for the kale 2 cups of cooked chickpeas 4 cups of vegetable broth and this seasoning that is 1 teaspoon paprika 1 teaspoon dried sage 1 teaspoon dried basil 1 teaspoon dried oregano 1/2 a teaspoon black pepper 1 teaspoon salt and 1/2 a teaspoon chili powder give it all a quick stir and then add one can of finely chopped tomatoes do not stir the tomato sauce into the broth let it sit on top of everything and place the lid on the in some putt and turn the valve to the ceiling position now set the instant pot to high pressure for five minutes once the pressure cooking time is over carefully turn the valve to the venting position and manually release all pressure when the safety pin drop it's safe to open the pot and this is when you want to add the chopped kale and give this soup a good stir the heat of the soup will make the kale wilt without making it all mushy let it sit for a minute or two and then it's time to serve sprinkle with a little freshly chopped parsley and enjoy we love eating the soup with some toasted bagels YUM I hope you enjoyed this instant vegetable soup as much as I did if you're gonna give this recipe a try please don't forget to snap a picture I love seeing when you make any of my recipes and if you've enjoyed this video I'm sure you're going to enjoy this one
