it's a rainy day today so I'm making vegetable soup this is just chock-full of vegetables so much nutrition in this you're gonna love it and you can make it vegetarian completely if you want to by swapping out the chicken broth that I like to use for vegetable broth either way it's still delicious so I'm rockin Robin and I can't wait to show you how to make it right after this [Music] did I tell you that this recipe is super simple I mean it's almost the point where you just take care of all your ingredients to dump them in a pot cook it for 30 minutes and you're done I mean it's that simple anybody can do this now you do have to spend some time chopping up vegetables but it's not a big deal and it goes pretty darn quick and we are gonna saute just a few things for just five minutes on the stove five or six maybe seven at the most on the stove to bring out more flavor because you know I love to bring up the flavor in food and make it taste just amazing right so that's what we're gonna do here now so let's go over the ingredients and you can see what's in it so first up I have my chicken stock I got this at Trader Joe's they have a nice brand there that's very recently priced I highly recommend it and we've got some Muir Glen I'd like to use the there fire roasted tomatoes these are chopped already and they have nice flavor I've got some kale back there that I've broken up into small pieces and here I've got some leeks that I've chopped up and with the leeks you know you want to I just used two and then I ended up not using it all but you want to chop it up and then rinse all the parts because there there is dirt in it so make sure you clean it pretty well all right so we have our what's called a mirepoix so I have some yellow onion here carrots that are diced and celery and along with the leeks and we're gonna that's the part that we're gonna cook on the stove for just you know five to seven minutes I like to add potatoes so I have some Gold potatoes back there some sweet potatoes and then you can see a little bit of some chopped up zucchini that I have there that's organic I have some Canelli beans they're from a can and I just rinsed and drained so for our spices I have right starting right here is some paprika and then going around this direction I have oregano garlic powder chipotle chili pepper some dried thyme onion powder this is cayenne pepper and that's optional if you don't want to have it too spicy you can even leave that out totally if you want but I just used a little bit some basil and in the middle is some salt so back over here of course I have some broccoli that's cut up into nice sized pieces and I've got a lemon here that we're going add at the end along with some parsley and then we have some olive oil and some pepper all right to start our soup I've got my large frying pan here over about medium heat let's get this started I'm gonna add some olive oil to the pan and we're going to saute up our onions carrots and celery [Music] and we're gonna add our leeks to this too like I said I'm gonna saute this until it you know softens up cooks down a little bit and gets a little flavor to it and I might even add just a touch of salt to this so while our mirepoix the onions and the celery and the carrots are cooking we've got time to start loading things into our pot I'm using a pretty large pot here because the next size down that I have is only six quarts and it crowds me a bit I don't I want to have plenty of room so that's why I'm using such a big pot I'm not gonna fill it so I'm gonna add some chicken broth to this pot and start adding some of the other ingredients now some of these ingredients cook faster than others so I'll show you which ones we're gonna start with which is going to be the carrots carrots the we're going to start with the potatoes because they take the longest to cook so I'm going to drop these in now I'm going to go ahead and add the beans because they're fine the tomatoes with the juice here's the kale and all those spices I'm just gonna toss them all right in and I'm gonna add some more chicken broth I'm gonna turn the heat on to medium low give this a stir now that zucchini and the broccoli you don't take quite as long to cook so I'm going to add them just a little bit later I put the lid on that and let it go so here's our mirepoix this has been cooking about actually I went over so it's about nine minutes and things look nice and soft and the onion looks a little translucent so I'm gonna add this to our soup now [Music] once you bring the soup to a boil lower it and to a simmer and then cover it for 25 minutes and you're gonna want to check your seasonings so go ahead while it's starting to simmer like this and take a taste of the broth because you might want to add some more of those seasonings in there or not it just depends I can use just a touch more salt and I think I might go with just a touch more paprika we're down to the last 10 minutes of cooking so I'm gonna add our zucchini to this now and the broccoli I just don't like it to get overly done and you know turn mushy so we'll add a little pepper and cover it and cook it for 10 more minutes all right soups done very quick very easy one last thing or two last things to add to this I'm gonna toss in the parsley I just took a bunch of fresh parsley fresh herbs are so good in soup and if you have fresh basil you can use that instead of the dried and it would make a difference I really like using fresh but I didn't have it and I couldn't find it so we had to settle for dried now I'm gonna add a little bit of fresh lemon juice just like maybe a teaspoon and I'm just gonna squeeze it in brightens up the flavors adds a little something and then I'll stir that up I got me a nice pot of soup for the rest of the week great way to get your veggies in everyone it's just a super great thing to do I can't wait to dig into this look at that and if you want to add Parmesan cheese on top or anything like that feel free I also want to mention that you can substitute any vegetables you like if you have some favorites put those in if you don't like some of these leave them out it is so customizable that's the beauty of it let me tend to get a little taste [Music] so I can try it that is delicious it's very savory and it's
