so it used to be back in the good old days instant pot had one model maybe a few sizes of one model and then every time they came out with a new product it was an improvement on the original but now it's the pot that's gone crazy they have been releasing models all over the place all different kinds different ones for different stores and they all seem to have a little bit different features and so it's really hard to know what is the best model and what model should you buy with the recent release of the duo evil plus I've had quite a few people ask me what the difference is between that model and the instant pot max which came out last year because a lot of people are looking for the top-of-the-line instant pot and it's really hard to know which ones better and the short answer to that is neither are better in my opinion they're just very different so I wanted to go ahead and highlight the differences so that you can be better informed and better able to decide which one would work best for you first off can we just all agree that the instant buck max has a better name duo Evo plus does not roll off the tongue it is also extremely confusing because there's an instant pot duo and there's an instant pot duo plus and for whatever reason the duo evo plus looks most like the instant pot ultra i think they could have called it the instant pot evo and it would have been awesome instant pot Max is so easy so clear so quick that it definitely wins on the name let's talk about sizes the duo evo clucks currently comes in an 8 quart in a 6 quart and the instant pot Max just comes in a 6 quart and I do have the 8 quart duo evoke blast so that is the why you see a big size difference between the two but if we were comparing the 6 quart of the duo evo plus it would be comparable in size to the instant pot Max so the Max is only available in the 6 quart I was expecting that they would come out with an 8 quart version at some point but it seems like they kind of abandoned the instant pot max model and moved on to other things so I don't expect that's gonna happen but we'll see so both instant pots have all the things that you would love in an instant pot like a saute setting a yogurt setting they both have the sous-vide setting they both can do high or low pressure they both have the widened RAM which is nice that makes it easier for cleaning and they both have an auto seal mechanism so that when you close the lid the vent seals automatically you don't have to worry about flipping a little switch to make sure it's on sealing so now let's get into the features that each of them have that the other one does not starting with the duo evo plus the biggest bonus on the duo evo plus model is the inner pot with the handles the handles of the inner pot keep it in place and allow it to not spin while you're cooking it's easy to lift out with the handles when it's hot you don't have to worry about using hot pads at all also the inner pot works on the stove so if you have something in here that you want to heat up real fast on the stove you could totally do that with the duo equal plus interpunct the next thing that the duo evo plus has is the metered steam release cap it causes the steam to come out a little bit more in a soft cloud rather than a big spray and the instant pot max is more of the traditional way that the older duo is release steam in kind of a big spray the method for steam releasing on the duo evo plus is a little switch that you flip from seal to vent like I said it'll go to seal automatically when you close the lid but when you're ready to do a quick release you flip it down to vent the instant pot max is a lot different than I will show you that when I get over there the other thing about the duo evil plus that is different is that they have a new feature called quick cool and this is something that apparently the tre Ford is not available for purchase yet but you can buy it as an add-on later on you take this cover off and there's a tray here that you can put on here so you buy an extra tray you put it on here and you fill the tray with ice and it allows the pressure to come down fast so that is another new feature of the duo evil plus that is quite unique I'm not really going to talk about the different preset cook times because really those are just times doesn't cook any differently when you choose to cook poultry versus cooking stew or broth and so I find it not very practical to even use those and not really using it as a point of comparison so as far as the saute setting on the instant pot duo Evo plus you can do a low C a low heat a high heat and then a custom and then with that you can choose a custom level of heat all the way up to six with the instant pot Max it's a little bit different you would hit saute and then down here you have the temperature so you can do a low or a high or you can do custom and for custom you can actually pick the exact temperature that you want it at see how high it goes all right so the highest temperature you can put it loops highest temperature you can put it at is 390 to lowest is 221 degrees Fahrenheit and you can adjust Fahrenheit or Celsius on either of the models so just a minor difference in the way the sautee setting works now on to the features that the instant pot max has that the duo evo + does not first off I wanted to highlight that the instant pot max has an altitude adjustment setting so depending on what altitude you're at you can adjust and it will adjust the cook time for you when you're cooking which comes in very handy I'm sure for people at high altitude so another thing that you've probably already noticed is that the instant point max has a touchscreen and it's so intuitive and so easy to use it's absolutely my favorite display of any of the instant pots I find the dial with the pressing the button and trying to select and going back and forth to be quite obnoxious actually I did not like the instant pot Ultra it's just not a fan that control but the touchscreen of the max super super nice there is the concern I suppose that only the touchscreen it could wear out faster and break easier than regular buttons but I have not noticed that to be an issue for me my max has been working well I got it probably a year ago next thing that the instant pot max has is some cool venting options and it has a completely automated vent so that you can set it to start venting automatically as soon as the cook time is done and that is not a feature that they brought into any other models so when your pressure cooking you have the venting down here and there's three different options there's don't automatically vent and that would be a natural pressure release and then if you tap here it goes to a pulse release and that is where it just releases a puff of steam every couple of seconds and so it's not as extreme as a full pressure release a quick pressure release but it does make the pressure release faster naturally more naturally so you can set it to automatically start releasing just little bits of pressure until all the pressure is released or you can set it to quick release the pressure as soon as the cooking is done when the cooking is done it does a little spray of steam to kind of give you a little warning and then it starts releasing all the pressure so as far as the touch screen you can see the keep warm mode here right now it's set to go to keep warm mode after the cook time is finished but if you tap that it goes to no keep warm mode after the fifth time is finished it just stops and then you can adjust the pressure by tapping the pressure setting and I'll talk about the next pressure setting a second one more little thing that the instant pot max has is a clock all right now on to the different pressure settings on the duo evil plus and on the regular duo they have a low and a high pressure the instant Max is the first one that has an even higher pressure setting so it has the max pressure setting and that's here so you can toggle between low high and Mac and Max is 15 psi and that is similar to what a stovetop pressure cooker would be so if you have a lot of stovetop pressure cooker recipes you can use the same cook times and stuff with the max pressure setting now here's the issue that I found with the max pressure setting it takes a very long time to come all the way up to pressure and that makes sense that it would take a little bit longer because it is coming up to a higher pressure but it took so long to come up to pressure when you use the max setting that it pretty much negated any time saving that you get from cooking at a higher psi so you should be able to reduce cook time by a certain amount maybe 10 or 20 percent versus cooking on high pressure but it took so long to come up to pressure that in the end you barely saved any time at all so I love the idea of the max pressure setting and to be able to cook things even faster but practically it didn't really do a lot for me okay now on to the canning button this is something that the du Oliva Plus definitely does not have and this canning button causes so much trouble because the instant pot company has not gone through all of the tests necessary to get this approved by the USDA as a canning device a pressure canning device in the material on the instant pot max it says things like in line to be the first approved canner or pressure canner home pressure canner by the USDA or something like that and so it has not been approved yet and last I heard they were in the process of getting it approved but then I have not heard anything since then so it may not maybe it didn't get approved maybe it's just not moving forward for it whatever reason maybe instant pot is abandoned that idea and they're just not spending time on it I don't know so with the canning setting I use it for canning high acid foods like jams and jellies I do not use it for canning low acid foods because there's a lot more risk of botulism with those and it's a lot more dress and you really want to make sure you have a usda-approved pressure canner if you're gonna do anything like that as far as high acid foods it's very difficult to consume any high acid foods that have gone bad and that are gonna make you sick just because it's really really obvious and it's gonna smell bad and you're not gonna want to eat it and so it's easy to notice if it has gone bad so I'm totally comfortable doing high acid foods in here and I have done that I have a video on that that I will link up in the cards but I would not recommend using it for low acid pressure canning until the instant pot comes out and says that has been officially approved by the USDA another little thing that the Estefan max has that the duo of both class does not have is something called nutria moussed technology and this is basically on a couple of settings I believe the rice setting and maybe one other one maybe the soup setting I forget it will release steam periodically throughout the cooking time and what that does is it kind of stirs up the food inside the pot it kind of makes it boil and move everything around and apparently that's good for some reason so the instant pot max has that on certain settings alright one more thing on the instant pot max when you are cooking in the instant pot max say I'm going to use all of these settings and I hit start the temperature pops up on here and I think they work to make this happen because of the canning setting because you really want to know what the temperature is inside of the pot and so you will see this temperature climb as the pot heats up and I think that's a really cool thing just to be able to visually see what the temperature is and you can see on the bottom side of the lid this is the temperature gauge so if instant pot ever came out with a hybrid of these two models I think we'd be pretty close to instant pot perfection with the beautiful touch screen display and the colors I love the colors of the instant pot Max with the black and the the blues it's almost purpley and the automatic pressure really that you can set the post release or the full quick release along with the inner pot of the duo EcoPlus with the handles it would be pretty near perfect so let me know between these two models which one
