[Music] welcome back to Sevilla everything guys today I'm making some amazing sticky ribs has garlic on it he has so many things and it's probably one of the best ribs I ever made check it out these are set lewis ribs unlike baby back ribs I feel like they have a lot more flavor but if you enjoy baby back ribs more this recipe will be exactly the same you just gotta change them at least for me I feel like st. Louis ribs has a lot more effect so that means it's a lot more flavorful the first thing I like to do is to remove the membrane on the back it's pretty easy to do just get a spoon and start working your way around it to make sure you get a good grip make sure you use a paper towel then I like to put it on my pudding rack so I can start the seasoning and to make sure it's gonna stick I like to use mustard as a binder keep in mind that we're not seasoning with mustard is just a binary so make sure your coat is very thin I'm gonna be using my favorite rub which is googas rub this rub you cannot buy it you have to make it and if you have not seen the video that I show you how to make it before make sure you check around the description later on make sure you season all sides including the edges the next thing to do is to put a smoky flavor on these beautiful ribs and for now I'm gonna be using my Camp Chef smoker I'll be setting the heat to its slowest setting which is a hundred and sixty degrees Fahrenheit and I'll be letting it smoke for three hours [Music] since we have three hours it's time to get some amazing things done and we're gonna start off with our sauce remember exact amount and ingredients always in the description down below for you I start off with cherry vinegar followed by balsamic vinegar then add a good amount of garlic and mix it well you want to let this cook down and reduce once it has reduced it's time to add in some soy sauce make sure to mix it well and combine all the ingredients together then bring it to a light simmer the next step is to throw in a good amount of honey keep it in a medium low heat and combine all the ingredients together the only thing you gotta keep in mind is not to burn the sugar from the honey after stirring it and cooking it for five minutes your sauce is done as you can see it's very liquidy right now but once it cools down it will thicken up like this and that my friends is exactly what you're looking for to go along with our ribs I'm also gonna be making an amazing cornbread and these are all the ingredients I'm gonna be using the first step is to put all the dry ingredients together so I started off with a little bit of flour followed by cornmeal sugar a pinch of salt baking powder and mix all the dry ingredients together and for the wet ingredients we also gotta put it together and I started off with whole milk followed by two eggs oil and melted butter now mix it well in your wet ingredients are done all there's left to do is to combine them together and make the dough mix it well you do have a nice smooth batter remember to avoid any lumps now you're gonna make cornbread on anything but I love using these little mini cast irons and the first thing I like to do is to spray them to make sure that my cornbread does not stick now throw in your batter and make sure not to overfill it you got to keep in mind that once it's baking it will rise and the last thing you want is make a mess in your oven talking about that you want to bake it at 350 degrees Fahrenheit for about 25 minutes or until you have a nice golden brown color on top I'm telling you right now friends make this it is so easy to do but it's so tasty and at least for me and my family it is perfect for the ribs and one of my favorite things to eat are the edges that is where the cast iron shines as it's still hot to finish it up make sure you add some good old butter as the butter melts on the crust it just makes everything a hundred times better since the ribs are still in the smoker I decided to make an easy cream corn and here's how to do it remember exact amount of ingredients always in the description down below for you I started by cooking some bacon make sure you do not cook them all the way through right at 1/2 point I threw in the corn you can either use canned corn frozen core or fresh either one will work just fine but we all know fresh is always better than to give an amazing flavor throw in some garlic finely diced jalapeno and green onions make sure you mix it well and combine all the ingredients together then you want to season it with salt and freshly ground black pepper if you notice that the bacon released way too much grease you can always use the paper towel trick from chef char as you can see it removes the extra fat without any issue the next step is to add a little bit of heavy cream then you want to throw in another batch of corn remember this is creamed corn so you got to have a lot of it and trust me you do want to make extra because these are way too good to finish it off throw in a good amount of mozzarella cheese and mix it well check this our friends is there any way that this is not gonna be amazing I don't think so the only problem that you're gonna have is that you should make extra to make it even better than it already is I decided to make a crust of cheese come on that is amazing put it in the oven in the broiler setting till the cheese completely melts down and once that happens this is what you're left with this one was so good that we could not stop eating it and I do want to apologize because me and my family almost ate all of it before even the ribs were ready this is amazing talking about them ribs after three hours they were ready and this is what they look like as expected my smoker did its job I wish you can smell them the smoky flavor is nice and strong and wonderful that is exactly what you're looking for the next step is to back it up and get it ready for the water bath I'm gonna be cooking these beautiful ribs at a hundred and sixty-five degrees Fahrenheit for 12 hours and I can't wait to eat them all right everybody I got my beautiful ribs cooked at a hundred and sixty-five degrees Fahrenheit for 12 hours that is plenty to be nice and glide off the bone not so much fall off the bone but your little tug which is what I like it comes off the bone nicely with that being said if you have more time you can also do it for 24 hours at 150 which is sometimes I do it as well now there's a big dilemma should I smoke it before googa or should i smoke it after we already determined that smoking the ribs after sous-vide is better but I've never done smoked it before and smoked it after so I'm excited to find out and I'm pretty sure it's gonna be so good but anyway my ribs are ready it's time to take them out let's do it [Music] all right everybody so as you saw it there these are the juices you really want to save this there's so many wonderful things you can do it including ramen I've already made ramen Suvi and if you have not seen that video make sure you check it out now here's the plan I'm gonna be glazing it with that sauce oh I'm telling you right now that sauce is so good you can put it in anything everybody anything now I'm gonna be glazing it and putting it back on my smoker at the highest setting so that my glaze will set all right you have to be careful because it can burn if there's a lot of honey there you saw it with all that being said I know they don't look that good right now or watch this [Music] alright everybody here I have my beautiful ribs what do you think of my mom like a southern feast of engineer what's going on that's wrong that's right we do have kind of like a sudden feast over here but we have some ribs I have some nice beautiful corn without cornbread which one you want to go for a first that's not what the coin won't work as you guys can see everybody had to put in a different container and the reason is that you know my family members just attacked it like literally attacked this mama then I met another guest iron which was much larger and they just attacked and I was like oh man come on that is why this is not on the thumbnail everybody because it was at I know this is consider a side dish but I don't think so not much to say right it is supposed to be a side dish but I'll tell you right now this can hold its own as a main dish it's good you could just have it and doesn't matter by the end of it this is phenomenal van it's screaming savory sweet because of the corn and the bacon and it's extremely creamy near I mean you can tell each one of those individually and together it's good it's good yeah look what happened to the cornbread everybody it's not me it's my dear it's like Daddy do you really need that one can you just cut that one right now cheers mama come on sweet wonderful rumbly ready I mean it's like is that cake out of corn he's like a kick out of corn if you never taste cornbread that's what cornbread tastes like it's a cake made out of corn I mean when you eat ribs you got to get dirty so just go for don't be shy yes mom Ozzy I'm gonna drizzle this one here Joe look at that [Music] it's funny a partner by smokier before I'm gonna prepare satiation and smokey and after is the way to doesn't know my mouth what do you do putting the sauce in the corner try it because I might piece already it was funny and I have to take a bite oh you had it is absolutely fantastic Wow it is sweet and savory at the same time tell me the honey garlic sauce is amazing it is I know right the ribs guys I mean check this out everybody he's not exactly fall off the bone it is spool off the bone as you can see it is good night yeah me too I don't like it too much you know me it is you have to has a little tug but at the same time [Music] right as soon as you take a bite you just go like wow probably one of the top ribs I've ever made right here mmm this sauce absolutely
