[Music] sometimes of course out there you'd want a fairway you don't want to necessarily carry the whole carcass up he's just phoning it up for the freezer so here's a quick method of getting the meat off without having to carry the whole beast out okay now of course most of you will know the quickest way to get the skin off so [Applause] that's a feel but we needed extra sand you can use a knife in my hands right you get it freed around the edges they're basically just took another pullet but you don't want the membrane to come away how she teased them off once it's free round here just a bit we'll just pull let me get to the tail just a quick little slice through this would be any bit of membrane that starts to come away if you can just free it a bit but net thanks for coming off Mercer okay then you should be able to just pull it down how I feeling nicely you see bits like that you can just give us okay when you've got a dent here you can just run up the legs and you can just skim basically straight off okay so go around them okay when you got on the beer just free it around both sides you're going to just what the other leg as you can see this one's been Nick shot so just different slice through with the ears I know if you come prepared you don't have plastic bags but if you're not prepared like us you can use the skin you keep it pretty clean put all your meat on it as you do it nice and clean please you've got a little knife like I have you don't want to lose it in the food yeah first thing we want to do is take the shoulders off first thing we do you know the spline there put a slip right down there you can see that get your thumb in there we don't want to cut the back steak there so you just bring them around you can follow that thing up there you can see the back steak there this comes all the way down and just follow it down like that you do the same on this side kind of that way okay then once you got that just bring it right across from the big just slice it like that on the end all the ribs are in how to straight the other side the brisket come awaken like that so on this slide ground up there just follow it right down to the leg all the ribs are in beam down under the brisket okay you just cut it along across here it's basically the bottom of the big steak and you can basically just in this case we've got no neck so we don't want to take the neck meat so we'll just cut the shoulders straight off but some of you blokes if you're really hungry you can just follow the neck right around all these little going to because we've got no milk it's same on this side we just cut the neck cut the shoulders straight off you don't have to be a surgeon to do it skin spread yet you stuff straight on then it's nice and clean okay next thing we want to do is get two Phillips takes me up you want to pull up stakes bring this stuff around bring these flaps down see the gland in there you can get rid of that same on this side - that side right there just me you see the hole Oh shove your thumb and and follow your knife around let's go against the bone follow that down and see your Phillips take coming up there nicely and slid it down beside the backbone pull it straight out like that you have your thumb at stake there she comes here you go now you want to get just for that bowing down you can feel it there put a slice right across right to the back stage straight under the back leave come around the back all of it cut around be on the back stay can see it there follow the knife right beyond the back stake pushing hard and against it same on this side although this down the other side you should be able to peel this little bit of em brain off the back stay here I just see there right then reveals the back staying nicely you can feel the bone in the rib bones there just shove your knife in there just follow those rib bones down yeah when you get to here of course you hit the bone you can just follow me right down here once you've got the slightly knife all the way down the rib bones like this yeah you should be able to just put a few little cuts here just about pull it away nicely and you have it you guys probably Beck's thing okay get room flips off follow that live around here plus it right around here and beyond the brisket just slice the brisket just follow the bands around you have it back same thing on this side on the right around real quick okay when you're finished with the lower section you simply want to get it off so you just put your knife through this top joint here just put a slip there like that break it straight off just kind of straight off like that okay now we'll separate the back legs so that we don't have to take any more bone out there beneath you you just follow dates bone around here both sides you'll find the ball joint just in there you slit across that and tell me on the back you can see these bones here it comes down on the way on there you put your life and just follow it around okay just feel around for the ball joint put a slit there you can see it there cut around it you should be able to just pull this leg away turn them around just fall away okay once you've got that leg off this one you can just pull this down just keep cutting the rain a little fall away as you can see there it's like that leaves the balls would follow that right away so now we're gonna divide the leg into a few different muscles safe to carry and all the bone yet so you can see this but of a here we see the muscle well just to do is put us slit in there you can sub you summon you feel it's super writing like that right away the next thing you want to find there's this one coming down here the last one super over to thumb up there just put the knife in there right away pull it just follow it up if you know okay I'll swing it around give this one here I thought there you can see it just cut around it and then you can feel the bone bones right here you feel it with your finger just push your knife and against the bone just slide it there and you can see it they're coming off against the bone yeah and as you can see it hasn't sliced any of the other muscle just straight off okay then we just got to get this last lump off so you just come below this joint here put your thumb of me hold it just put a slice see little slice on that side that's the thing you can just grab it pull it come in come in we just kind of straight off that okay most of you won't want the shank meat but if you do get off real quick so there's all you meet Lobos the canary yellow this is the early and hopefully boards like you broke back with you carry it all out for you [Music] [Music]
