How To Set Up A Charcoal Grill For Smoking

[Music] hey guys a little while ago I did a video on the basics of using the charcoal grill since then I've gotten a lot of requests to do a video about cooking using a grill to be low and slow or smoking meat so in this video I'm going to cover the basics of getting a charcoal grill or a kettle grill some type setup to smoke meat all right the first thing we want to do is show you my grill what I'm using I've got a I've got a Weber 22 and a half inch kettle this is my go-to grill that I cook with most of the time you'll notice I've got this damper on the bottom set at about a quarter of an inch or so you want to keep this closed off because the idea of temperature range that we're looking for here's about 225 to 250 and you use that damper and the vent if you've got a vent on top of your grill you'll use those to control the air flow into the grill which will keep if you keep them shut off will help keep the temperature down as far as Torico I'm using a Kingsford original briquette I like to stray away from the long type charcoal when I'm going to do alone or low and slow cook because it burns a little harder and it don't last this long to me these four kids as you can see here they're more uniform and shape and size they're real close and they produce a consistent heat and I'm going to start out with one chimney full of only charcoals as far as the wood I'm using a Hickory there's a lot of different types of wood that you can use to smoke with and I prefer chunks over top of the chills to me they just they burn up really fast and produce a lot of smoke at first and then they're gone and with these chunks especially if you're doing a little grill they'll burn a little slower and last longer and you can keep the smoke going throughout the cook also I've got them just laying and running the pay in there I'm going to use that that's my water pan you want to use some kind of a pan and you'll put it in the grill here opposite of the coals and fill it with some kind of leak with water a lot of people like these apple juice and some people even cut up onions or maybe even freezing it what if that will do is it to produce a little stain while you're cooking and also sometimes if it gets really hot in there that can help absorb some of the heat as you can see I poured out a chimney full of charcoal on the grate and opposite that I put my water pan and I put two chunks of wood on here and you notice this truck I was on lead I've got 12 or 15 briquettes and my team nee that eyelid and I'm going to dump both right on the top of this just like that and then I'll fill up my water pan ideally so probably get that brick head out of there but put my phone back in so everyone head and fill this up and I put my grade on here all right I did a few modifications to my grill after about it one thing is I bought one of these grates it's got the hinges on it you know you can open and close it on either side what that's good for is that allows you to add taco or add wood if you need to now this amount or code that I put in here I've cooked for six or eight hours with this mount and if you go over there if you're going through a brisket or something that's going to take a long time you may have to add some charcoal but that's going to depend on I guess how fast that it burns during your cook how high you let your temperature get but usually this amount will do get least six or eight hours without having to add any and I usually don't add any more wood sometimes you might have a charcoal but I just don't add any more wood than that these two chunks for the most part give you a good smoke ring and usually put some good flavor in your food now the next step go ahead and put my lid on here and I'm going to shut this bent down to about a quarter of an inch as well that's a good place to start what you want to do now is let your girl come up to about 225 to 250 degrees shouldn't take too long if your grill doesn't have a thermometers you'll need you'll need to put you one on here you can use an oven promoter you you usually can pick those up for about four or five dollars you can put that X on the rack but like I was saying I did a couple modifications of this grill and one of those being that I add a couple thermometers to the outside I put one on either side that way I can see what my team from Korea is over the coals and especially I'm doing indirect cooking on the other side as well all right now I've got my lid on there and all I need to do is wait for the grill to come up to about 225 or 250 degrees and then I'll take a grill brush and scrape off my great and I'll be ready to put my food on that a couple notes to take into consideration I usually don't have to adjust the damper much but sometimes I'll have to open or close the top being a little bit to get the temperature up or down where I need it and also remember that when any time that you take off the lid you know the coals of the fire rather gets a a little bit of extra oxygen and sometimes when you put the lid back on the temperature is going to come up on you just a little bit sometimes that I fall back down on its own but you might have to close the vent off just a little bit until it falls back down takes a little bit of work just like anything else you kind of have to keep routing but usually starting out about a quarter of an inch with the damper and quarter of an inch or so with that top vent that keeps me really close you just have to kind of practice and it's like with anything is trial and error and you'll I'm sure you'll get where you need to be with it the more that you do this the better you'll get at it but I hope this video helped you out if you liked it give it a thumbs up and share it and subscribe
