[Music] hi everybody everybody i'm back everybody genie young is back and i'm back with again another amazing recipe i am so excited yet another day because today at the young's house gina young is going to share with you all how easy it is to make delicious salmon patties these salmon patties right here they're pretty much bomb they're so easy to make they don't require a lot of ingredients and you know you make them ginny young style they're going to be so tasty you'll never have my salmon patties before you better make you so here are the lovely ingredients you will need a fir of course you're going to need some salmon so right here i have some beautiful salmon and the can is upside down the reason for the camping upside down is because you open it from the underneath side so we have some gorgeous salmon here we're going to be using two cans and you're going to need something really interesting that my grandmom used to put in her salmon patties you're going to need a potato you will need a nice sweet vidalia onion and some bell peppers any color bell pepper you want to use absolutely that's fine you're going to need some bread crumbs now it's up to you to decide what kind of bread crumbs you want to use any kind is just fine okay and you're going to need a couple of spices so we can spice everything up here's what you're going to need you're going to need some old bay seasoning and of course you're going to need some garlic powder some black pepper and right here we have some chicken powder so you decide whether you want to use the chicken powder or the salt or the two together but be very careful because the chicken powder does have salt in it and you can't have a salmon patty without some hot sauce and there's one other ingredient we're going to be using some flour make sure your hands are impeccably clean let's get started with this really quick and simple yet so tasty recipe salmon patties i couldn't be more excited to make this recipe for you all now this is a highly requested video so now it's easy to make and it's packed with so much flavor let me know in the comment section below when is the last time you all had some homemade salmon patties or some people like to call them salmon croquettes now here's what we're going to do when you open up your salmon i can it's going to have some liquid okay so what you're going to want to do is pour that liquid off but here's something really interesting i'm going to kind of come close so y'all can see once you open up the salmon okay you will see some bones okay you will see what they call pin bones okay and there they are right there can you see that right there this is just a whole line of the bones now some people this is interesting as well some people like to keep the bones and just eat them they're very soft it's not a bone that can stab you or hurt you you know like i said most people like to keep the bones i like to take mines out and also another thing that i like to do is i like to take off this silver skin here so it's just some dark skin that i like to take off a lot of people say oh keep it on there it's just fine so it's up to your discretion whether you want to keep it okay so here at the young's house we take the skin we take the bones off and what i'm going to do is i'm going to do the second can the same way look at there look at that bones get them out there or keep them okay i'm going to do the second can just like this and i'll be right back to show you all what you should do next so now that we've taken the skin off of the salmon and we've taken the pin bones out here's what we're going to do next we're going to talk about putting the vegetables in now i highly suggest when you're making salmon patties or salmon croquettes that you saute up your veggies and the reason for sauteing up them is because the salmon patty does not take a long time to cook and if you were to put your vegetables in raw what would happen is they would remain raw the patty is going to get cooked quickly the vegetables will remain raw so what we're going to do is we're going to chop these bad boys up just like so i'm going to be honest with you you don't need a whole lot really it's just for you know it is for flavor absolutely it is but i love the color that the bell peppers put sometimes i like to put a red bell pepper into my salmon patty to make it even more beautiful when you bite down into it so what we're going to do is we're going to saute up our bell peppers and onions really just for about seven minutes just to get them nice and soft okay and then we'll mix them in with our salmon so what we're going to do now is let's get all of our veggies nice and chopped up we're going to use about a tablespoon of olive oil to saute the bell peppers and onions and once that happens we're going to take the bell peppers and onions and throw them in the refrigerator for a few minutes so that they can cool down okay so let's get that done and i'll be right back to share with you all what you should do next so now that we have our bell pepper nice and chopped up let's go ahead and get some onion chopped up please lord don't let the onions make me cry today i don't want to cry today i have the glasses on some of you say gina glasses might help you none of the tricks that you all have ever told me for the onions they don't work so i quit doing the tricks when the lady told me to put my head in the freezer she did she said gina put your head in the freezer right before you cut the onion i tried it and it did work but i know it did work but i do know that i can't do that every time i get ready to cut a onion look at that gorgeous and it's nice and small pieces so now here's what we're going to do let's go ahead and saute it a little bit of olive oil in the pan here and i'll saute them bad boys up for about five to seven minutes until they get nice and soft i'll be back to share with you all what you should do next now there's one ingredient i almost forgot to tell you all about but guess what it's never too late you're going to need some eggs the eggs is gonna give you a nice moist salmon patty that will not be dry okay so we're gonna crack two eggs into a bowl here and i like to crack them into a separate bowl just to make sure i don't have any eggshells you know make sure you got some nice fresh eggs there these are two large eggs we're gonna put them right in with the salmon just like so okay and then we're gonna go ahead and season with some good seasonings guys when you're thinking about seasoning different things as fish always use that old bay seasoning it's going to give you great flavor and don't skimp on it great flavor we have there and then instead of the salt i am going to go ahead and choose to use that chicken powder chicken powder is pretty much amazing it's going to make anything taste great look at that don't skimp on it and then what i want to do is we're going to put some black pepper that's a definite just like so garlic powder you definitely need it and then we're going to use some bread crumbs we're going to use about a half of a half a cup of breadcrumbs okay just like so if you wanted to put a little bit of ketchup and mustard in there absolutely you could you could even put a little bit of mayonnaise and that's also going to help you to have a nice moist salmon patty okay so here we go about around about a half a cup of the breadcrumbs any kind if you want to make breadcrumbs that's fine here we go just like this now i do want to talk about something really quickly before we go any further that potato that we had i put the potato right behind me in the microwave we're gonna cook it until it gets nice and soft that is the secret that gina young's grandma lucille used to do when she made salmon patty she would take one potato she would boil it let it cool down mash it up into her salmon patties and she would be able to stretch the salmon patties and make more but also while she was stretching the salmon patties to make more by adding the potato it gave it much more flavor it made it much more lighter and softer and it just really great okay so we have our potato going when that potato is done i'll come back share with you all what you should do next so now let's take a peek in at our bell peppers and onions they're done so what we're going to do is we're going to take them off of the burner get them into a bowl and right into the refrigerator so they can cool down the purpose for putting them in the refrigerator is because we don't want to scramble our eggs that we have in our salmon mixture so we cool them down for about five to ten minutes once that happens we'll grab our potato and our cooled down we're going to cool our potato down as well we're going to cool the potato and the veggies down for 5-10 minutes then they go into the mixture i'll be back show you what to do next so we've let our potato cool down we've let the bell peppers and onions cool down and another thing i know i spoke of the bell peppers and onions giving you great flavor in a gorgeous color but it also helps you to keep your salmon patties nice and moist i know i've spoke of this around three times but it's very important because this type of salmon can become uh you know dry if you don't put those sauteed veggies in it you know if you don't put um you know certain things in it to keep it nice and moist so now our potato has cooled down it's nice and soft we're going to kind of smash that bad boy up just like so another thing that you could use if you didn't want to use a potato you could use some white or brown rice okay so now it's time to have some fun we're gonna mix everything in just like so mixing everything in we got that egg that's gonna help as a binder it's gonna help to hold everything together along with the breadcrumbs is going to do that as well i'm going to show you a trick that i like to do so you can assure that your salmon patties will stay together and not fall apart on you okay so let's make get this nice and mixed up just like so when i come back i'll show you what we're going to do to keep our salmon patties nice and together so now that we have everything nice and incorporated the veggies have cooled down the potatoes were nice and cool we've mixed everything up i'm going to show you all what to look for to see if your patty will stay together or will it fail on you okay if you can do a little you know something like this kind of do that and it stays together guess what you got something going on it's right okay it's not gonna fall apart i'm happy with that if you were to do that and you felt like oh no it's falling apart just add some more bread crumbs okay add some more bread crumbs i did eyeball the bread crumbs it's just because i'm really so familiar with how much i need like i said around about a half a cup but if you happen to need more go ahead and throw you some more in there just don't get crazy with the breadcrumbs because that can potentially give you a salmon patty this dry look at that gorgeous now if you wanted to make a salmon croquette you're going to use the same recipe only make them a little bit smaller and you can make somewhat of an oval shape let me show you you could do like little football shapes or this this is what i call a salmon croquette you know something like that cute and simple but they're smaller in their bite size okay any size you want to do huge ones heck they're yours make them how you want okay so over here in this pan i have some vegetable oil use any kind of oil that you like i don't suggest using olive oil and we're going to heat this up and once that happens i'm going to show you what to do next i'm going to patty up a few of these but what we are going to do let's do something really quickly let me show you we're going to take our salmon patty that we've made we're going to just kind of dust it lightly in the flour but listen here you don't have to do this this is just something my grandmom did so i like to do it this way coat a little bit of flour on it kind of go between your fingers you know between your hands like this to get that extra flour off if you see any cracks just kind of smooth it together that right there is your salmon patty that's going to go into that hot oil and what we're looking for we're looking for a golden brown sear on all sides and when that happens they're done be right back now it's time for our salmon patties to go into the nice hot oil take them just like so put them in there look at that you want to see that sizzle if you don't see that sizzle just wait a minute so your oil gets nice and hot before you put the others in okay gorgeous and here's the thing don't bother don't bother them if you go in messing them with them with the fork or your spatula they will tear on you okay let's let them sit for a little while get nice beautiful and golden brown and literally you'll be able to look at them like this and you'll see a golden brown ring towards the bottom and that right there is your indication that it's time to give them a turn keep in mind these are not raw you don't have to cook the daylights out of them we're only going to cook them until they're golden brown on both sides time to turn the salmon patties i can see that golden brown ring that's my indication oh yes come on gina look at that this right here all the sweet memories of my grandmom's salmon patties look at that oh you gotta make you some gina young's grandmom style put the potato in it let me know what you all think now all we're waiting on the other side to get golden brown i'm gonna say an amazing prayer you all are gonna get that first bite look at that sizzle golden brown beautiful look at that and it smells good and it's not fishy this should never smell fishy let's check and see if they're done gorgeous that's what we're looking for that's the color we want and
