[Music] hey what's up everybody hungry hustler here and today on the hunger hustle cooking show we're gonna do a smash burger but not any other smash burger not no ordinary smash burger not some run-of-the-mill smash burger i've had a lot of folks say hussy i want to see you do the oklahoma smash burger a la george moats george i think it's moats not motts m-o-t-z he's like a connoisseur of hamburgers if you will seen him on the blackstone channel i've seen him everywhere on first we feast uh the burger show all kinds kenzie lopez uh on serious eats just everywhere god knows his burgers uh i know well i like burgers i just like to eat burgers so today we're going to do his oklahoma smash burger on the blackstone griddle let's get it let's go over a few ingredients first we got our this is 80 20 ground chuck you don't want to use really anything any leaner so it's 80 percent meat 20 percent fat all right i got a vidalia onion right here i'm going to slice it on this slick pampered chef a little mandolin i thought about slicing but i thought hey why not this thing does a really good job i've got some martin's potato rules here these are really good by the way nice and soft and luscious i got some american cheese again best cheese in the world and you know i've got some duke's mayonnaise right here yeah baby it's going to be good oh seasoning for our smash burgers this is my hamburger seasoning salt pepper garlic onion powder beef powder and that's it all right let's get to cooking these things all right guys so first things first a few things we want to get started with all right first thing i want to get the black stone i want to cut it on it's going to put it on loaf right now i want to get it nice i want to get it hot you've got to have your black stone nice and hot for this while that's getting heated up i'm going to get our onions prepped and i'm going to get our our burger balls prepped as well so i like this i really enjoyed this pepper chef i got it from a subscriber actually a local person they sell pepper chefs so i like to support local it's it's pretty nice it has this nice guard so you don't cut your finger off it's good for me because i'm very high prone to do that you put this guard on and that slides instead of your hand going across it put your you put your tomato onion whatever then this thing right here just kind of uh sticks into your item and you just go at it and it makes it nice nice and uniform i could do it with my knife my dollstrong knife but this right here just makes quick work out of an onion so i'm just gonna go ahead and quickly uh do this onion uh and and this has settings on it as well just like any other kind of mandolin um so i put it like i put it like actually on the half setting you can actually put it on the half i keep my thumb on it because you want it really thin for these uh oklahoma smash burger as you can see they're nice and thin like i can like i can see the camera through that nice and thin okay you just kind of press down on this little plunger until it's almost done pretty easy so that's one onion right there nice and thin so from what i understand about this burger in its beginnings is onions were cheap beef wasn't so cheap and really you almost had more onions than you had beef and because it was during the depression era and uh yeah it was just cheap cheap eating so one thing i want to do is take these onions and put them on this plate right here but also it's going to take a little bit of salt and that helps us kind of bring some of that moisture out and make them nice and flimsy for our burgers burgers burger meat 80 20. like i said you want you want your meat kind of loose you don't want it nice and tightly packed uh you want about a two ounce ball two ounce ball is not very big at all and i just kind of loosely come in here kind of like that and just make us make a ball and just make you another ball again lucy goosey that's good i'm only gonna make like four burgers there we go wanna wash my hands get all these cooties off i'll be right back all right all right y'all welcome back one thing i'm going to do i'm going to get some i'm going to get my rolls ready and what i see a lot of times is lack of mayonnaise on these things they just put the they just put the bun on there ain't no mayonnaise come on y'all y'all killing me gotta have some mayonnaise so what i'm going to do is take these nice luscious martin rolls and we'll go ahead and mayonnaise these things up because what you're going to find whenever you do these yourself is it goes really fast and you won't have time to do this so get your buns ready get everything ready because it goes faster than a new york minute i'll get my mayonnaise get my mayonnaise knife okay so i want to toast these also and then i'm going to put more mayonnaise on it because you know toasting you know toast my mayonnaise off so need more mayonnaise gosh these things are soft so what i'm going to do first is i want to get these toasted up then whenever the our burgers are ready i'm going to put this on top of the burger and then put you put that on top of the the bottom there's a name for it crown hill i don't know it's a bun a top bottom top bottom we're just going to get that get those burgers done that's pretty good so with that we're just going to take those off put them over here and then we're going to get ready to rock and roll with our burgers all right again just toasting that bottom just trying to get a little bit more flavor in it okay it's nice and hot i'm not gonna add any oil all right just gonna add our balls one two three four and then we're going to add a glob of onions per just like that oh forgot my seasoning burger seasoning it'll be all right push down like that now i got my big old burger press uh i'm gonna use parchment paper and then i'm just going to use a black stone press just like that and then just really really press it i mean you want it like really really oh just like that you can start seeing the little crusties around in here okay that right there should tell you oh it's time oh my gosh look at that crust it's caramelized immediately right after the flip you want to come in here with your cheese okay i'll come in there with that cheese just like that then i'm going to come in and i think george calls this letting it ride just put that right on top but i like to let it ride i'm gonna call it let it ride dirty a little bit of mayonnaise on it boom just like that because you know hussy likes mayonnaise just like that boom boy oh boy that is a beautiful now we're just gonna come over here we got our bottoms over here and we're just going to put them on the bottoms we'll put a little ketchup go ahead and put it on the bottom and then got a few pickles here i'm just gonna put down that's it that's the one thing about letting it ride like that is you can't put any really toppings on the top it's okay all right y'all let's get these off we'll put them on our bottom so we're gonna give them a try all right all right we're gonna come here and it's hot gosh it's hot beautiful i might be able to do it with my small spatula there we go [Music] i'm gonna let these cool off just a little bit then we're gonna give it a try y'all come back now yeah y'all these burgers they're done nice and cooled off i wanna i don't know well yeah i'm gonna slice one just so y'all can see it don't really need it it's not a really big burger i made it a single but it's juicy man that burger i mean the not burger but the onion cheers y'all first thing first is that caramelized onion that crust on that burger is phenomenal maggie girl you wanna bite come here come here all right good girl good girl my
