hey everybody welcome back to our family pantry today i'm going to show you how to make our family's jamaican beef patties now this recipe was passed down by my grandfather who is also known as the patty man and so i want you to come on in and i'll show you how to make these beef patties and i promise you you won't regret it i'm going to start from left to right giving you the ingredients for our filling we have our beef broth we have our white onions our scallions fresh thyme scotch bonnet ground beef worcestershire sauce plain bread crumbs our jamaican allspice our garlic also our minced garlic our black pepper and seasoning salt now once you come over to the stove and we'll go ahead and get started medium heat i'm gonna add some oil let that heat up some okay our pan is heated up now i'm going to add the white onions with the white onions we're just gonna put it in and cook them so they're translucent i like to sweat out the onions for a minute before i add the green onions and the thyme and so i'm gonna just go ahead and add these in right now add it just like that there we go i'm going to also add our mint garlic to the mix mix it around okay i'm gonna add our ground beef and these onions will finish cooking down as well while the meat is cooking let's break it up right here so i'm going to use the potato masher to help break down the meat because i i like my filling i'm not not chunky you know and so i just like to break it down just like that just smash and turn smash and turn go all around see that how much more fine it is now that's how we want it okay i'm going to add a half a cup of my beef broth right now go ahead and mix it through okay just want to fold it in let's get a good mix in the whole purpose of the bread crumbs is to be able to stretch the meat and to also make it softer so i just added some more bread crumbs and also some more beef broth right now i'm going to add the remainder of my seasoning which is my spice my ground pepper my seasoning salt it's good and then also let's not forget the worcestershire sauce okay go ahead and mix that in i'm going to pull the timeout at this point there you go just let the cooking process proceed okay i'm gonna go ahead taste it for flavor it's perfect now this recipe is for a spicy beef patty but if you do not want to be as spicy what you're going to do is you're going to leave the scotch bonnet whole and cook it out and cook it cook it but once you pull out the thyme you'll also remove the scotch bonnet pepper and so at this time what i'm going to do is i'm going to place the filling on a plate to let it cool for about an hour or so okay so ingredients that we need for our pastry is our flour our anato and with the natto uh the you really want to try to find it ground up we we get ours at our local latin market but if you can't you can find it at you can find the anato seeds and you'll need to use the mortar and pestle to just smash it up to ground to make it and turn it into a ground anato and so and so as i've explained the anato this is we have our grandanato right here we have our turmeric our salt and our sugar and we also have our snow cap lard and and so um when when my grandfather when he used to uh make the the patties he actually used beef suet um but beef soup is hard to come around nowadays and so we just turned to the snow cap lard which is more easily accessible the snow cap lard it's the same product as suet it's just the difference is it's manufactured and it's not coming straight off of the the animal and so that but that's what we use here and why don't you just come a little closer and we'll go ahead and get started with making the pastry i'm gonna begin by adding my dry seasonings let's pour it in which is the turmeric the sugar the natto the salt now if you absolutely cannot find anato you can go ahead and use paprika the reason why we do use the um turmeric and the natto is to give it a nice gold crust and so if you just use the natto the crust will be too red if you use just the turmeric it's going to be too [Music] orange but the the two combined will uh bring it into a nice golden crust when it's um finished so i just want to go ahead and continue to mix it around nicely okay and now i'm gonna add my lard now i'm gonna use my pastry blender now so some people use their hands you can use whatever i love using the pastry blender because i don't have my body heat melting the lard and so with the mixer i'm able to keep the lard cooler for much longer as i mix it in right now we're just trying to get it to be a pea size as i'm mixing the the mixture together okay this looks good you can mix around and see how it's nice and fine we have a little pea sized face going around now i'm gonna go ahead take my ring on off sorry take my ring off because i don't want any um pastry to get on it but i'm gonna add some water i'm gonna start mixing it foreign so i'm just gonna add a little more water because it's just so dry okay i'm just finishing up it's looking really nice just trying to get the remainder of the mixture off there we go now i just want to form it into a ball because what we're going to do is we're going to wrap it up and put it in the refrigerator to let it settle and rest for about 30 minutes now i have my saran wrap i'm just going to wrap it up and i'm going to go ahead and let it rest for 30 minutes and we'll come back all right our dough's been resting so i've taken out the refrigerator uh now we're going to go ahead and put everything together i have my silicone mat i like rolling out on the silicone mat because i don't want my countertop to stain and so um what i what i'm going to go ahead and do is i'm going to just get some some flowers pinch right there just spread it out and so when you when you do this this gives you a surface where your dough isn't going to stick to it and so i'm gonna start doing that unravel the dough looks beautiful okay see here so now what i'm going to do is i'm going to take a little pinch so let's roll it up i like to sprinkle well just a little bit so i can roll a little more flour up your rolling pin so i need more flour as you see it sticks i'll just spread it on the surface there we go that's what i'm looking for just want to roll it out okay place this bowl down just so i can get a perfect circle just cut it out remove the excess now if you have a bowl that has a straight edge you don't need to use a knife um but the reason why i use the my butter knife is because you can see that my bowl is more rounded at the lip but if you have a straight edge bowl you can just press down and it will just cut it perfectly and so that's that's my purpose of of that now i'm going to go ahead and transfer the pastry over on the parchment paper just kind of put it off center a little bit don't want to lose any of this yummy stuff okay now stretch it out get to the edge i'm gonna go ahead and press the edge down just to make sure that we're sealing the patty you make some vents in there just like that and transfer it over to the baking sheet and we're going to come continue and repeat the process now i'm going to go ahead and bring my wife in to help me speed up the process on making patties so let's have you come on in and get rolling all right here we go now my this is my like i said before it's my grandfather's uh patty recipe and in jamaica my grandfather he delivered ice and you know when they when they came over to the united states he you know did a lot of baking he was a baker and so um everybody was always asking him to bake something for them and he was he's all he was really known for his patties he was known as the paddy man in the neighborhood and this is his recipe that i'm sharing with you and and and my family so it's just been this recipe has been passed down from generation to generation i may be a little biased but i think this is the best patty recipe the best patties i have ever had okay and there you have it we have the patty man's patties the famous jamaican beef patties and it smells so good with its beautiful golden crust let me go ahead and give it a try it's perfect so
