foreign welcome back I'm Dave you're watching Dave's taste buds I got another great episode for you today we're gonna make something called cowboy candy what the hell is that which is actually candied jalapenos slice them up make our pickling spice with our sugar and our vinegar simmer it down make some so sweet it's the perfect addition to like hot dogs hamburgers anywhere you would use a pickle you can replace it with this you're making deviled eggs check out the episode when you get a chance deviled eggs delicious switch out pickles for the canyon jalapenos put them into your chicory board display that's a great idea do whatever you want with them they're so versatile you throw pickles or relish into your tuna fish throw them in there spice it up do what you gotta do they make a great gift if you're gonna make a lot of them it's gonna take a little bit longer only because well you're going to be chopping a lot more jalapenos slicing them food processor if you're going to do that so appreciate but they're not subscribing anyway all that put aside like a comment too all that put aside let's get into it jalapenos like I said got about a pound if you're sensitive and you're worried about it and you're worried about getting you know the burning sensation from jalapeno throw on a pair of gloves if you want to get them in like a quarter inch thicknesses because they are going to cook down a little bit something like that if you can see that something about a thickness of that so I'm going to go ahead I'm gonna get these sliced up I'm going to get them put into a bowl set aside we're gonna get my burner out the other ingredients are all ready and then we're gonna get right back into it so give me two seconds one two all right everybody here we go like I told you real simple not even a lot of ingredients like literally five ingredients something like that get your pan hot apple cider vinegar one cup to one pound jalapenos oh can't even describe to you how much I hate the smell of all vinegar but apple cider vinegar has gonna be one of the worst calm down but I'm going to suffer through this to show you how to do it this is a cup and a half of sugar it seems like a lot but we are going to dissolve this down candied so that's going in a tablespoon pickling spices now listen there's a lot of different recipes that I've seen out there a lot of them call it the turmeric garlic powder onion powder all that kind of stuff I like to keep it simple there's just about everything you need in here if you want to add a little turmeric that's fine but this is basically everything you need your mustard seeds your coriander your crushed red I've actually put a little bit more in there to kick it up a little bit but pickling spices get yourself some tablespoon going in teaspoon salt that's it I told you guys not a lot of ingredients so all we're going to do is just gonna take like three minutes we're just gonna get this hot enough to dissolve this sugar to get the sugar dissolve down we're going to throw in our jalapenos I'm really hoping that this paint is big enough contemplating switching to another pan but we like to see so this should really only take a couple of minutes just gonna wait for this to get heated up I'm gonna let it dissolve that sugar five minutes later we've got our sugar dissolved in here as we as you can see now jalapenos straight in set this bowl aside because we're going to use it in a minute and all we're going to do I'm going to take a couple minutes I'm going to let this simmer just gonna let it simmer until come on man my new apron [Music] simmer until the jalapenos start to break down a little bit you'll see them shrink up start to get a little withered get shiny then we're gonna take them out put them in that bowl simmer it down but you know what you'll see just stick around you'll see just wait till the end all right so we got our jalapenos in our liquid simmering nicely cut it to just about where we want to be I don't know if you can see but you'll see the edges the skin start to peel a little bit try to start to crumple up a little bit you can see that on here and that's what you want it means you're there I forgot to mention something else too you could throw these things into a spicy um I can't think of the word Martini jeez it's hot and dirty martinis out there you throw some of these in there Bloody Mary forget about it we're gonna take these jalapenos we're going to take them right out of here because they are cooked to where we want them to be for now out of there Next Step once we get all our jalapenos out of here we're gonna let this liquid simmer simmer simmer simmer simmer simmer I'm gonna let it simmer down it's gonna take about this much probably like six or seven minutes we're gonna simmer it down until it starts to thicken almost into a syrup and while we're doing that we're gonna get our jalapenos [Music] be careful please into our mason jars you don't have to say I'm gonna cut the cameras I'm gonna get the jalapenos into these jars I'm going to get that somewhere down and then we'll be good it's all set to be all right guys it's been about seven or eight minutes took a couple more minutes than I thought but we've got this simmered down to just the perfect consistency I got uh sliced jalapenos cooked down in the jar it might even be a little more than a pound so and it fit and I could Jam this into probably half this so I don't know moving forward I would have to say these holds about a pound and a half a piece just a heads up but we're gonna have room for the the liquid too as you can see we got a perfect syrupy consistency I'm going to go ahead and kill this heat if you're doing a recipe with the turmeric it does make it really boil up and it's orange looking because turmeric is orange and it's going to look a little bit scary don't worry about it just turn the heat down a little bit it'll drop all the bubbles you 'll be just a heads up a slide on this and on just in case there we go standard mason jar get them anywhere or off Amazon where I buy just about everything opinions in there [Music] syrupy Browning liquid we are just gonna drizzle that right in there holy smokes look at that [Music] I want to get all these seeds oh yeah oh yeah and that's it I'm gonna grab a uh paper towel [Music] just want to give your Rim a little wipe down [Music] cover seal this glass is hot that's it so the trick here is now it's a waiting game it's not like you can just cool this down and start to eat it like I mean you could you're not gonna get sick or anything but the trick is let this sit at room temperature until it cools down and then pop it in your fridge let it sit for probably a week if you really want those flavors to to set in there probably weak probably good I mean knowing me a couple days I'll just dive into it and taste it and see how it is and put it back in there if I want to but and it'll last in there about a month so that's it cowboy candy I'm from New England I'm not a cowboy but this looks good and I'm sure it's gonna taste good so in fact I'm probably gonna let this episode chill and not do anything with it for a week so that I can pull this out and taste it and let you guys know so you know what I guess at this point I'll see in a week okay remember a couple weeks back it won't feel like a couple weeks back for you but earlier in this episode I told you we were going to wait a couple weeks before we tasted this cowboy candy these candied jalapenos while that time has come I it's been two weeks I pulled these things out of my fridge and let's uh let's check them out very interested to see oh I smell like jalapenos and sugar and spices oh yeah actually looks really good looks like a at this point almost like a like a relish I mean oh yeah on a chicory board or a or a hot dog or a hamburger oh forget about it all right let's test it out hmm I left the seeds and all that white flesh inside the pepper in there you to give it a little bit extra heat and it absolutely worked there sweet at first and then really hot from the jalapeno and then the sweet comes back around pickling spices kind of pull all the flavors together it's uh it's actually quite delicious so if you need something to spice up your hamburgers your hot dogs your tuna fish you want to give it something perfect for gifts for Christmas this is the thing you jar up a bunch of this stuff you slap a you know rip to your neighbors anyway I'm glad it took a while pull this episode together and get it out there because I I don't like to do stuff that I have to wait because I'm impatient but it is what it is and it was so worth it two weeks from now these things are gonna probably even be
