How to Make Beef Jerky in the Masterbuilt Smoker | Beer-Peppered Jerky Recipe

armadillo pepper is one of the largest jerky stores around we have over a hundred different flavors of jerky but maybe you don't want to buy your jerky maybe you want to make it so today we're making a beer peppered beef jerky from scratch what I've got here is a three and a half pound chuck roast I would encourage you to buy the cheapest thing the store has you could use London broil or just about any other cut and in fact this was the cheapest thing they had the only thing you want to do is just make sure you trim off any excess fat when you're making jerky there's really no no reason to keep any extra fat on it so all I'm going to do is you can concede what we do to the muscle here I'm just going to cut this up into the pieces you can see this big chunk of fat here I'm just going to cut this fat off tonight doesn't have to be perfect nothing wrong with leaving a little bit on there I'm just saying any of the big chunks you know depends on the cut of beef you're using just get these big chunks off right you can see like we have right here now you want to slice this up right you really don't want very thick slices maybe a quarter inch at the most it's okay to slice with the grain on this you don't have to worry about that but hopefully you can let me get that off so you can see all right I think that's probably about a quarter-inch it is a little easier if you partially freeze it you'll be able to you know I won't move around as much and you'll be able to cut it a little easier but just kind of I guess it's just me parsley if I buy fresh cut of beef I I don't know I just don't want to freeze it even partially all right you can see we've got our meat here all sliced up okay see the pieces you know roughly a quarter inch some of them are a little bit bigger don't lose any sweat over that all right if you get a piece if you think that's too long you know any piece of jerky that big you can cut these pieces in half I don't think there is such a thing as a jerky too big now what I'm going to do is move this aside we're going to make this marinate I've got to Chipotle Porter beers I made this so obviously you're not going to have it just grab yourself two dark beers kennis works nice whatever your favorite is if you've got another Porter that'll be great so I got two beers here what I've got is 2/3 of a cup of that word I can say so well we're sisters Shire there we go I think that's close then we've got 1/4 cup of soy sauce I've got 2 teaspoons of chili powder okay we got tablespoon of garlic powder tablespoon of onion powder tablespoon each of kosher salt cracked black pepper and then oh yeah we've got yep we've got some honey here I've got three tablespoons of honey okay this is going to give it a little bit of that sweet sticky okay so we're just going to mix this up real well okay now it's off to you you can put this jerky in a big like baking pan you know we're baking dish I guess and pour the marinade over it or you can just put this turkey right down in the marinade it's up to you really depends on how big your bowl is and if you can get the coverage you could also put it in a big ziplock gallon tag what you want to do is just make sure turkeys all nice well it's not turkey yet your beefs all nice and covered I'm going to cover this with a little plastic wrap and then we're going to put this in the refrigerator overnight my recommendation is 12 hours minimum for me it's probably going to be closer to 18 you're not going to hurt it by letting it go 18 even 24 hours turkeys been in the refrig overnight ok got all nice and marinated here you can see the collars have changed now you want to dry this turkey off right I mean the whole concept behind jerky is dried we put in this smoker wet it's going to take even longer so all I've got here is the actual masterbuilt rack over a pan and just going to get all the jerky out we're going to get it on these racks and dry it off with some paper towels does take a little time prep time but on the other hand you're going to end up with something that tastes just absolutely awesome okay so all you want to do you know not too challenging just come in here and Pat this jerky off once I get this side all patted down turn it over and do the exact same thing on the other side so let's go take a few minutes as soon as I hear it all dry it off I'll show you how we're going to get it ready to put in this masterbuilt smoker you've got a couple of different options prepping this to get it into the smoker you can lay it direct on the racks that's one option and I'm actually going to put this rack in just like this I'll show you a second option here in a second bet this worked really good when you have these kind of small pieces now the only thing you might notice is when you take the jerky out you'll have these little great marks up on the jerky doesn't change the flavor doesn't change the texture it just changes the look a little bit now let me show you another option if we're going to do here I've got another great and what you can do is hang the jerky from these great using your regular old skewers right so you can see here that I can get about what 1 2 3 4 5 6 7 8 9 10 11 12 to 13 pieces per skewer all right so I'll show you here how we'll do this one let me just do one of them up so you can see what I mean and you'll want to you know dangle one piece in between each grate the key to jerky is air circulation so you know although we can touch a little you really don't want the jerky overlapping so we've got one of them done here all right all I'm going to do is come down here like so again this is just going to take a little prep time nothing difficult this little time-consuming that's all and what I'll do is get each of these down through the grapes and then we'll pick it up and I'll show you how it's going to look alright so now you can see they're going to hang kind of nicely going to get good for air circulation through each piece so let me just finish up the rest of this careful getting it ready and then we'll get over to the masterbuilt now the final step we put this in the smoker it's just to come back and hit it lightly with some coarse black pepper now you know this recipe is the peppered beer jerky if you don't like the black pepper just leave this step off but this will give a little additional flavor and a little additional texture on the jerky now you can certainly do both sides and I'm going to do both sides or you could just leave it on the one side right now the masterbuilt at 172 I think you want to target anywhere between 165 and 170 175 for this to turn out just fine and then for the wood I'm using a combination of oak and cherry now how I do this wood is I don't like my jerky you know real real smoky flavor and remember this is not like a roast or something that's thick these turkey pieces are real thin so you've got a lot of surface area that the smoke is hitting so I like to use generally a fruit wood and then either a combination of either oak or mesquite I put the wood in the masterbuilt no more than two times first thing we'll do is we're going to put that rack in for their land right on the rack and then we've got the hang in Turkey here now let's talk about the setup I've got two pans here that serve no purpose other than to help me with the cleanup and then do not put water in the water tray this is jerky right you want air circulation you want it to dry you don't want to keep it moist it's been exactly 45 minutes so I'm going to put one more you can see here just a little bit of wood in here right now it's not even the whole thing as well okay we got our wood in there and now what I'm going to do just pull this guy a little bit what this will do is allow more air flow through the masterbuilt again we're trying to dry this jerky and if I didn't mention it earlier you want that top vent open looking at seven hours about seven hours 15 minutes started raining so I hope you can see that I don't want to get my camera wet of course okay yep now it's hard to crack there this jerky is ready so we're going to couch let me get a towel I'm going to get our drink out give it a try okay we've got our jerky here you can see it still you can see it doesn't break into but it does start to crack that's just exactly what you want okay it's raining out here I hope you can see okay let me give this a try it's tender it's got a nice beefy flavor you definitely get that Porter beer flavor it's really awesome the black pepper it's really not overwhelming at all so if you're afraid it would be too peppery for you the way we did it it's going to turn out just great got that nice Worcestershire flavor the soy sauce it's really mild I don't
