all right to make a good filly it's really about the quality of the ingredients it's a pretty simple thing you just need your meat your cheese peppers onions your good bread that that's the key about making a good Philly getting good good bread nice you want a soft you want two fresh good fresh peppers I like to cut my peppers and I like to dice my onions now a good part about the Fillies the meat it's all about the meat this is ribeye and I give to the butchers I go there I find a good one that's got a lot of veins a lot of marbling in it you get bone-in or bone off and what I do is I just take and go right to the butcher and tell them hey I'm making some Philly's cut this up and they'll do it for you it's a nice fresh cut mozzarella now the bacon I know what you're thinking what's bacon doing there a lot of people get mad about that but the bacon we're actually gonna cook and we're gonna move to the side and we're just going to use the juices of the bacon in with that meat makes a little more fattier but you really taste a difference and it's really good a little bit of salt for all the vegetables and I'll show you how to make it let's get out to the grill all right you need a good work station to make some Philly's we've got our flat top grill here that's the blue rhino nice and seasoned we've got our work station here with our meats waters spatulas everything we need to go to get cooking so let's get started all right want to make sure your grill is nice and hot peppers and the onions they take the longest to saute and get going so you want to put them on first let them cook what I do add a little bit of the butter [Music] salt and more salt I throw don't roll bro keep some moisture and seeds to cook them a little bit quicker you squirt some water in there and that season cooks them everywhere now while that's cooking we'll go ahead and cook the bacon the bacon we could get cooked a little early that's fine because we're really just getting the grease out of the bank with that cook with that cook as soon as these are done and those are closer done we'll throw the meat on alright peppers are cooking up nice peppers onions I'm almost done enough okay while we're cooking the meat and stuff they'll still be cooking I think we left the dome on long enough we don't want him to get too soft we're gonna let them cook just like that the bacon the bacon is about done remember we're not eating the bacon we just want this grease here we're gonna put our meat right on that in this last section right here the burner is on low you know what that low or off because that's where we want to place everything onto the side while we're making the rest of this we're gonna call the bacon done won't be this good dogs later we don't [Music] here's me we got from the deli you can see we have them cut extremely thick and most elegant is tell them you wanna make Philly cheesesteaks and they'll know what to do look at that you can see through it it's a nice cut of meat right there so you want to try to lay it out so it cooks nice and fast [Music] look out fast that's already cooking she actually has to do this otherwise you're saying that the plane needs to whine you see those packages in the store where it's filling me already to go within a frozen section so that's good but it's not good once you do it this way you're not gonna buy that stuff anymore this stuff so good now what you wanna do is start chocolate break it up smaller pieces if you have to so it's pretty easy you just hold meet with one [Music] you don't want chunks of it once you got it broken apart real good you can start adding the cheese you see it's still red that's okay so we still gotta cook it for a while that looks like almost our peppers [Music] and we're gonna make two large size now you want to break this is your food songs this size little hotter size using it to do the peppers and onions [Music] provolone cheese on this is provolone cut right at the deli it's not in the packages of pre-cut really the ingredients really matter here so go to the deli gets a nice fresh cut provolone really does American store brand our Boar's Head but I prefer to get the more expensive stuff usually has more flavor or its strong if you're in a hurry you can't take your dome and cover it up it melts the cheese quicker but I'm not in a hurry I left the meat it was still a little red when I added everything so it can cook now we're gonna take the butter here we're going to smear all over there nice full butter there take one of our bread rolls just place it right on let that get golden brown will rip that off and do the other one this one here is on the hotter side it's closer to done that's more salt to Crossville this one's not done this one's about bugs what you do now when I take it and just mix it all up in there if you're not a mozzarella fan I'd say that's about done right I'm a mozzarella fan so I take my mozzarella just pile it on there let that cook like that from it now stamp on that's done that looks [Music] [Music] [Music] [Music] [Music] all the meats cooked now and we'll get to meet the bike lengths of the ball [Music] once you're ready since your bread right there going that direction wrongs that's your disability will feed a key I like to delicious Philly cheese steak subs little me on it for me I like the mail alright this is the Philly we just finished it it looks good smells good and this is way better than the ones you need at the restaurants it's way better than the frozen packages you get the thin meat that you cook that's just covered in grease a lot of those you pick them up in the grease pours out so a Philly it's just it's about the ingredients you got to get the good fresh bread cut it right before you're gonna use it right before you put on the grill get the good meat go and get the good cheeses and the taste is so much different I know a lot of people like certain kinds of cheeses different that's different that that's fine try that but just get the right meat get the right bread cook it so you're not overcooking it or burning it and I'll tell you what so we're really good let's get a
