First of all, thank you OP for posting my dads video on here!! I was checking his YouTube this morning, and I'm like where did all these subs come from! Really happy that everyone is enjoying the video :)

I don't mean to hijack this thread in any way, but someone else did mention that he did have a 360 video version of his sauce, and I wanted to include it here as well. In addition to that, last summer my fiancee and I went to my dads home town Orsara di Puglia to create another 360 video about making tomato sauce and the drought that was going on. My dad is at the mid point of the video making his homemade sauce.

I remember my mother having to have surgery right before her roma tomatoes came in. The patio table was stacked 3 feet high with them - about 100 pounds; maybe more. I worked the weekend before her surgery all day one weekend processing those things. Cutting them all up; boiling and sieving. Then canning them. That was a looooong weekend.

Dang. That video made me hungry. Never have tried fresh tomato sauce.

Questions:

There's no water added on the first boil is there?

What are the leafs he puts and why?

He jars them... You supposed to refrigerate them right after? Did he say he leaves them outside a couple of days?

40 different pots and utensils for 11 cans of sauce. Reminds me of my grandfather. My grandmother always wanted to kill him for that. Looks really good!

ok today I make homemade tomato sauce. This I was making in Orsara. Tomato sauce, homemade. It's like this This is the plum tomato I wash really good. And before you, because I gotta chop and put over here. I want to take the bad thing out. And to take it out, you do like this, you chop. ok now this, when we was make this in Italy, the tomato sauce, for the, with the plum tomato you see four clock in the morning you see like maybe hundred two hundred people that go on the road everybody was a go on their own farm, pick up the plum tomato Now, for reach on the farm, because it is really far, it was take like, 4 hours. Walk. After you pick up your tomato, on the box, about, let's say 100 pound, you put it on your head. And you gotta carry for 3 hour, to go back to the city where I live. And you see over there, where they make the sauce. Everybody on the street, was making sauce. but before the my city was like it maybe three or four car nobody have a car, everybody gotta carry by hand, on the head or the shoulder I was carry like this. And when we was make the sauce, the people was put a fire on the street. And they was make the sauce. And you see everybody. After, everybody cook and they was eat together. And that's the sauce we was make. But now today , I told you the truth, I go to my city. Now, all the time. No like before. Nobody make the sauce like before. Everybody go to the store, and buy in the can or what it is. But I like today, still over here I'm making a sauce like I was making in Italy. The the way to make it. After I show when I got put on the fire every thing. it's really hard to the make the sauce that's a lot it's a lot of work it's a lot of work, see you got to make sure to wash, take the bad thing out. It's, but when you eat it, the pasta, any kind of thing you make with this kind of the sauce you enjoy yourself that's a really really good. this is the way my mother she was make the tomato sauce. ok now we start with the fire and let's see okay ok It's good, the fire start pretty good. now you've got to make a sure that this tomato It got to go all the way down, and it has to cook a little bit. And after I gotta pass with the machine. Still it has to cook more. ok now this was cooking for 35 minutes we give a nice little turn like this everything could go is still its hot and now it's time to take out I gotta drain before i pass with the machine ok now we take this tomato out like this, we put it over here. the drain that take all the water out Okay, it's enough for now. I waited to drain a little bit. And I gotta start of the pass to the machine Pick it up this tomato dump right over here like this and now it's the work, it's a lot of work. I take my time. And you do it like this. Now this that came out over here, I pass it again, maybe 3 or 4 times more. I don't throw away this. On now we put it back because this has to boil. Ok now this has to boil for 3 hours. After 3 hours, we see it has to be nice thick sauce Okay let's bring on the fire. It's a lot of work, huh? Well you gotta, you want a good sauce? You gotta, gotta sweat. You no sweat, no sauce! okay look a nice red the sauce. *speaks Italian* *speaking Italian* Okay now the sauce was cook for 3 hours. Now we take it out, and I gotta put it inside the jars. all right now the sauce is ready but I want to taste to see if there is enough salt. Need a little bit more salt. ok that's it salt is ready it's enough okay now it's a time to fill up the jars Make sure the jars are nice and clean. Look how beautiful! ok And we put a couple leaves (basil), make sure the leaves are washed and dried. good I was a dry with paper and this has to be sealed really good. look how beautiful! now you put the bottle over here. and you take another one. The plum tomato I was make sauce with today, I was buy at Quick stop food and paper in Red Bank. Now this, when I put it in the box, I cover it with a towel. And this will cook more it will come more thick, when you cover good, and stay for a couple days. it's hot squeeze the last drop come on all right look at this *speaks Italian* 11 jars it came out, 11. okay make sure to cover really good. because this when you cover like this The sauce, still is boiling inside the jar. and I put 2 or 3 towels. stay for couple a couple of day like this.
