his business that way he doesn't he's hiding in the kitchen and he's not facing what's happening outside i'm surprised he's walking straight guppy guppy isn't over drinking he's drinking to the point really evaluate the business there's giselle looks like a rat just came in through here and just like completely ate this couch it is totally gum so gross this bar is disgusting everything's so dirty and there's this grand smell of straight piss how do they expect to stand up to the competition if this place is such a tall look at that guy right there swatting all the flies away if i was them i'd be checking my drink for flies anytime you see them around that's oh yeah oh he just you just found a fruit fly in that drink and the owner is sitting right there listening to this does nothing about it what's the matter he's like three fruit can i have another one that's funny that's totally funny there's only a couple now oh my god there really is wow we made another drink with more fruit flies in it sorry all right sorry about that so i just ordered this drink which they had to remake three times because the flies that were in it disgusting look you can actually see them i can't sit here and let these people drink this yeah that's great i've got people drinking bugs and an owner that's not doing anything about it i can't sit here and watch this they cannot consume any drinks [Music] here i had roto-rooter come in here to clean our drains these are the drains right behind your bar this is where you're mixing drinks to give to the public now he's going to send a camera down your drain to see what the problem is what are those things sanitaries mosquitoes mosquitoes are the worst flying insect in the planet kill over a million people a year carries bacteria malaria and diseases that'll kill you that's your responsibility that's getting people sick and that's why i'm pissed but you ain't seen nothing yet this came out of the ice machine this is infested with bacteria and bugs gross this is the efforts of your professional career [Music] this is what you got to show for it the sickle it was beyond disgusting i never saw anything like that and this is where you work room and a half hour so the bugs came out it's been a rough one right we have bugs in the bottles we have no consistency i think it's best we just shut it down now and get to work if i can have your attention i want to thank everybody for coming out as we do have some problems to fix though i want to welcome everybody back we'll get this right we'll be on point even better than today man i was they're getting the bar wipe down that's a good thing look at them staring at him and nothing is happening he could have said hello and ask them what they're having yeah even if you have a busy bar you should always acknowledge the guest okay i get you guys i'll have a strawberry margarita whiskey cola he made the wrong drink that's not what she asked for this is supposed to be a strawberry margarita my bad one second i've already made like five margaritas today so it's in my head i've already made five margaritas is not an excuse as to why you don't give your guests what they asked for there's just like gunk all over everything maria you had a strawberry margarita yes this is your margarita mixture strawberry mix it expired in august of 2012 over a year expired a year expired we have traps for bugs they're full look at that so you can't even afford a professional exterminator wow bugs you know the drink that you had that tasted so terrible that's why that's where the soda gun sits grime and sludge because it hasn't been cleaned that's what you're drinking bugs bugs into bottles come on even if you get straight whiskey you're not safe in this bar this is your business this is your reputation here's what we do with this that's responsibility you understand this makes you a bad businesswoman does she have pride in this place no she does not have pride in this place larry at what point do you pull the plug and say that's enough 60 days so you got two months missy you're gonna have to try a lot harder than you've been rod stand up come here heather come here why are you the office the other day and i was i was like you gotta change or i'm out joe do you respect him as a businessman no i can't say i do rod let's come what do you see john besides all the clutter back here what pisses me off the most can you uh do me a favor and look into these bottles for me and tell me that you're serving your guest bugs what they're floating around we can get a flashlight you're not lying no i'm not lying that's ridiculous this is foul it's bad it's disgusting and you don't even know it i don't know that much about the bar business but you've been in it for two years stop drinking stop partying and start doing something okay let's get out of here this kitchen is infested with bugs and so are the liquor bottles tonight i expect rodney staff to clean this bar so tomorrow i can train in it the building looks completely abandoned half the letters are missing from the sign when i'm looking at headhunters i just get this creepy vibe that something inside isn't right about this place when we say something it's an opinion when the customer says it it's a fact watch this people that just walk in will be like oh let's get city all right time to go to that next one i was look at it there's one of them look at that guys that's a roach that's disgusting i'm out of here i don't want to touch anything else or see anything else i'm repulsed you can't have that much filth and that many bugs in a place unless you just don't care how often do you see a roach every day a few every day probably where do you see them did they walk across the bar yep yeah we had them in our cast registers with our money when people ask about headhunters they're like oh that bar that smells real bad that's us and what does our owner say about this stuff nothing i'd like to meet this guy where the hell is he and how are you john paul pleasure to meet you thanks for coming pleasure let's walk over here and talk to me sure let's go my wife orders a drink the bottle's filled with a cockroach and bugs wow the other liquor bottles are filled with bugs the staff told me that they see cockroaches every day here cockroaches and bottles let's go ask them chloe yes how often do you see cockroaches here uh about every day about every day so your staff is pulling your liquor bottles they're telling me there's roaches here every day you don't see it you don't know it chloe why don't you tell me uh about this why why are you telling him that but not me i've told you that we have a problem in this place you're supposed to know these things there are no bugs in the bottle do you know this is happening or not yes or no do you know it do i know what that there's bugs all over your bar there's bugs all over austin there's bugs all over america this is a college town they don't want clean it's not the culture austin doesn't like that is it a sterile clean room environment no it's not we're not in that business you came down here to tell me i have roaches in my bar oh i came here to fix your bar but i can't fix a bar when i'm pouring cockroaches out of glasses man come on i'm impressed with all the experience and knowledge you have in the world you got all the way here to tell me that roach is in my bar i'm astonished really steve can't admit to anything i tell him there's bugs in his drink he says there's no bugs in the drink this guy is filled with excuses and holds himself unaccountable for everything that's gonna change i know when i see it i mean they are there either you knew it and you didn't give it are you going to lower yourself no because you're frustrating the hell out of me and when i talk to idiots i get loud cockroaches shocked at your professionalism you know what a professional is yeah a professional because you don't serve bugs to your customers maybe you're the biggest bug i'm responsible even if steve isn't i've only got five days to fix this bar and i think it's the worst bar i've ever seen so i'm bringing my experts in right now and we're going to work jesse's going to walk the bar and see what other bugs of filth i haven't seen yet and joe's going to come behind the bar with me and we're going to see what's going on back there there's mold everywhere in these ceilings this place has never been cleaned you see all that that's all mold growing i never noticed it yeah it's not connected to the ceiling it's falling in your drinks that's right which means you're drinking mold let's show what happens when a [ __ ] defends failure this is what happens there is about 30 cockroaches in there look at that seeing that many cockroaches was disgusting look at this guys those are bugs those are cockroaches he had people standing in the crowd looking at him with utter disgust and he was still sitting there smiling and laughing thinking it was a joke and that it was funny it's not a joke this is the livelihood of a good 10 to 15 people you need to get angry at this you need to be embarrassed about this take accountability john tover flew off the handle about bugs so we created a drink after him called the bug bomb i am gonna get on the phone and i'm gonna fumigate this building tonight you didn't have the balls to do it i'm gonna you didn't wipe the check i'm gonna i your employees joe and you jesse are not walking back in this building until we can do so safely and you my friend you're 300 000 in debt and you better get you together or you're going to lose everything landlord's going to take your bar your wife is going to take your freaking family and then you'll get what you deserve well you tonight back in the kitchen the orders are pouring in you need a cup of gumbo right behind that's ice cold what nothing worse than cold gamble man yes you're right i decided to taste the gumbo the gamble wasn't heated up properly it's bad duncan was sour throw it out and make new ones it's not a good gumbo i don't think the chef knows how to make it right i can't i can't stomach it i'm gonna would you want to eat that little little musty smell down here huh yeah what is that smell what is this this is a natural spring that we have in our basement natural spring water this is not natural spring water smell this [Music] it's what was here when i got the building you've just come up with some pretty incredible ideas but this you walk by every freaking day look at this that's terrible look at this smell it i don't want to smell it this is not spring water you could have fixed this and i hold you responsible this could be dangerous that's gonna get people sick and that infuriates me you know i got to tell you something you want to give away liquor you give away liquor but there's food eight feet from here i'm gonna have this tested in the morning there's black mold in here we're learn this outside i come in here i'm all set ready to start working in the kitchen and all i smelly look at this come here guys get over here this is your grease trap a grease trap is used to remove grease and food solids from waste water to prevent them from clogging the sewer system if not cleaned out regularly bacteria-laden solids will accumulate and block the outgoing line a clot grease trap gives off a nauseating odor and is a major health hazard these guys haven't cleaned the grease trap and god knows how long we've had to call a plumbing company and we've lost the whole day of training it's pretty bad it's something that probably should have been taken care of months ago [Music] margarita bloody mary whiskey style uh bay breeze mojito irish coffee irish coffee you said yeah i ordered a series of drinks every bartender should know how to make we're gonna do uh three fairway burgers and then one of everything else okay beautiful it's gonna be a minute [Music] oh this is man separation from raw to cook product i don't know how he lasted eight months look at that oh look at that that bowl has not been cleaned since this place opened the t-drop oh and they're putting that over food this is inexcusable absolutely she's pouring the profit away and the cat is killed we don't have another ticket are you kidding you don't have another cake look everything was in front of white and then look at the over holding the first thing that hit my tongue was a very very hard metallic taste oh dude that's bad right when it hit the bottom of my stomach i knew something was wrong my stomach started curdling beer starts to go bad after around three months so i'm thinking the cake had to have been sitting there for at least a year any chance you can check on some food for me wiped off the mushroom's grown you're serving your neighbors this food what have you done about it i try to help clean so you try to help clean do you yes if i walk through this kitchen it's going to around there fruit flies can go in there they can lay eggs and next thing you know somebody's drinking that the fact that this thing is so sticky and this beer is warm foamy nasty good drink it knock yourself out how's that taste it doesn't taste good you're good you showed you had bowls you don't want to clean but at least you have balls fair enough all right while i'm standing here shot glasses does that look clean to you how about that when was the last time that was cleaned get a good scrub okay and the only reason i don't have more on there is it's caked on it won't come off this bar is a disaster and it's your fault nobody gives nobody it's bull man you can't blame it on anybody else that's bull that's complete look at this do you see the maggots that are actually underneath that bar there's maggots under there maggots you're telling me that that that maggot right there is not gonna crawl through a hole go into that glass and then you're going to pour into a tap or pour a drink container that is disgusting we don't have anything to clean with we put our own money into cleaning products so many times before you've put your own money into cleaning people we have bought clean cleaning power bartenders they run out and then we don't feel like spending our money anymore on it [Music] this thing looks like it hasn't been touched in a year i have no idea what it is you don't even know what it is do you know what it is it's what you use to clean the bar we can't even begin to train or even reorganize the bar and get it to be a functioning bar with how filthy it is i saw things that made me want to throw up before he can get to work chef duffy must assess the current state of the kitchen what works in here and what doesn't work okay the freezer it wasn't keeping temperature okay and so they just decided to unplug it and leave it there where's your freezer now and that's not a freezer i have to put frozen food in the refrigerator because our freezer is broken which means that it goes bad now my biggest concern would be things like this you know what that is it's probably mouse poop okay so that is a mouse dropping i've been in and out of restaurants since i was 14 years old i have seen things that would make your skin turn but i'll tell you what this place is as screwed up as it can possibly get it's disgusting the fact that you guys are still open shocks me i i i gotta get you know what hey taffer i gotta get you in here bud what's going on well we have we have mouse droppings oh wow complete and utter disregard for the basics of food sanitation so many violations happening did you know you had mouse droppings in here this is the inside of your hood system oh the grease that builds up in the hood i didn't even know that existed that's probably never been cleaned this is the grease that drips down onto the food can you serve food in this kitchen no is that acceptable to you is that acceptable to you not acceptable guys roll up your sleeves cause you're gonna clean this kitchen once you guys take a look in there oh my god the odor is unbelievable i have no kitchen experience i don't know what the hell a kitchen is you know it's i just don't know what the [ __ ] i'm doing and have it for three years clean this place man i'm gonna make this staff clean this bar it's disgusting push keep going as soon as i realized that we have to pull the freezer out because it hasn't worked in months i could feel it in my bones that there was going to be something back there all right is that insulation or are those bones kitchen not filthy and i cook touching raw chicken and then cooked product i know people are going to get sick and i get angry that causes salmonella poisoning and i am not going to let them serve anyone else nachos i'm going in now to fix it i hate starting a rescue so angrily but when i see raw chicken mixed with cooked product and no people are gonna get sick i can't contain myself i had to crab with your hand pick up spices with your hand shame on you i have never seen anything like this before how many times have you picked up raw chicken have you ever washed your hands yes besides myself is this funny to you what's the deal didn't see it you didn't see it she's touching raw chicken and she's not even washing her hands don't you know that's wrong that was it you do know it's wrong yeah so you don't give it do give no you don't care cause you're not doing anything about it okay all right somebody who is irresponsible like you ain't getting me sick and doesn't give up that's right i like you you can be one second you're like a criminal call me all the names you want why because you know you're right yes those people are gonna know you're an ass when i walk out of here too you're gonna get sued from this take that food throw it away throw it all the way shut it down nobody eats clean this damn kitchen i'm not out of here could've gone better don't eat anything
