What's happening guys? How are you? Glad to see you back in Akis kitchen! Aki's pita bread, homemade pita bread, is on the menu today! This is not the Arabic thin pita bread, it's a Greek pita bread that is
usually served with gyro and souvlaki. It's soft, puffy and a little more breadlike.
You will not even need to use the oven. I have already shown you how to make Greek souvlaki. Today, we are making the pita breads. I will serve them with roast
vegetables and tahini. It's veggie and very easy to make! Guys,
if you try once to make homemade pita bread at your home, you will never buy again store-bought because it's very easy to make, no preservatives added, and there is no comparison. So, let's go! In my bowl here, I'm going to add 1 teaspoon sugar, 2
teaspoons active dry yeast. Yeast is your friend; don't be afraid to use yeast. Yeast
works wonders! 160 milliliters milk, 80 milliliters water, both at room
temperature. Just give it a mix until the sugar and yeast dissolve. Perfect! Set
aside for about 5 minutes until the yeast starts to activate and froth. I have
another bowl here where I will add 320 grams of strong flour, 1 teaspoon of salt and 1 teaspoon chopped fresh thyme
leaves. Give it a mix just to combine. The yeast
should be activated by now. To this, I'm going to add one tablespoon of olive oil
and add the yeast mixture to the flour, and work it in. It will start to thicken, so
keep mixing until the flour is incorporated and it comes together to
form a dough. Lightly dust a nice clean working surface with flour to make
it easier to work with the dough. Turn out the dough and knead it for four to five
minutes. You need to let it rise now. Look at that! It's nice and soft. Grab a bowl, brush
with some olive oil; this way, the dough won't stick. Put it in the bowl, cover
with a towel and set it aside for about 40 minutes, until it doubles in
size. Look how nicely my dough has risen! Now, place your pan over medium heat and brush with olive oil your working
surface. Drop the dough on the surface and press it down to remove the air. Divide it into six equal sized pieces. You see how easy it is? Τhey look like little
mozzarellas! Spread each piece out and use your rolling pin to roll it into 20
centimeter disks. The first one is ready and it's time to cook it. Few drops of
olive oil in the pan, and into the pan it goes. Cook them for about 1 to 2 minutes
on each side. They puff up a little when they cook. While the first one is cooking,
let's prepare the next one. If you see that it's hard to roll out,
just drizzle some olive oil on the working surface. Let's flip it over. Look at that!
It's so crispy! Amazing thing to make homemade pita breads. I think the first
one is ready. Look at that...Amazing! Set aside and cook the next one. And the last one is ready! Now, let's
prepare our beautiful platter! Hot, hot! I will quarter my pita breads. Look
how moist they are inside and how crispy they
are outside...Amazing! I will drizzle some tahini. If you
don't know what tahini is, it's just sesame paste; it's very healthy and very
tasty. Some lime zest, lime juice over the vegetables, and come
on...We are in Greece, so Greek virgin olive oil goes everywhere! Salt, pepper,
some sprigs of thyme and...Look at that! If you serve this platter to a party,
everybody will get mad! This is amazing... They are so soft on the inside and so
