Hello my good friends and welcome back to my kitchen! Today, I will show you how to make chicken gyro. You just need to make a super marinade, put it on the chicken, mix it mix it very well, and then cook it 5 minutes and it's ready! It's very juicy, aromatic, tender, and you have only to cook it for 5 minutes! And let's begin with the marinade. You just need to simply mix everything. In a mortar and pestle, or a food processor, add 1 tablespoon coriander seeds, grate one clove of garlic, the grated zest of one lemon, 2 tablespoons of smoked paprika, 2 pinches of chili flakes, and 1 tablespoon dry thyme. Crush them until they become very finely ground. Add salt and pepper, 60 ml Greek extra virgin olive oil, the juice from half a lemon, stir until the mixture is completely combined. And your marinade is ready. Set aside and prepare your chicken. It is better to wear gloves when handling chicken. I have three boneless skinless chicken thighs that are 600 grams in total. You can also use chicken breast but the meat from the thighs doesn't dry out easily. Cut the fillets into thin strips and transfer to a bowl. Add the marinade and mix until the chicken is completely coated in the marinade. It smells so nice! At this point, you can refrigerate up to two days; the longer you marinate, the tastier the chicken will be. I'm not so patient, so I have to cook my chicken now. Add the chicken in batches, so it can brown and caramelize in the right way. It is very important to remember not to crowd your pan; you want it to brown nicely, so don't mix it too much. It actually hardly needs any mixing at all; until you see it starting to brown. If you mix it too often, it will boil instead of brown. When it's ready, add 1 tablespoon of lemon juice and stir. The first bach is ready! Place your chicken gyro in a dish. Wipe down your pan with a paper towel and place it back over high heat. Let it smoke and add another batch of chicken. Cut the pita bread into pieces, arrange them nicely on a platter, drizzle with some Greek extra-virgin olive oil, sprinkle with some dry oregano, salt and freshly ground pepper. Slice up some tomatoes, thinly slice some onions, drizzle with some more olive oil, add some fries, some Greek tzatziki sauce, and of course your chicken gyro. This is my chicken gyro platter lovely people! You won't be able to get enough of this dish! I am warning you; and you saw how easy it was to make! You can do it any day of the week or when the guys come over for game night. You don't need a lot of ingredients to serve the chicken gyro - just tomato, onion, some tzatziki sauce, some chips, and some pita bread.
