This guy is all over the place. I feel stressed just by watching him fling his arms around and yell out the ingredients. But a great vid none the less. Didn't know you add dill to tzatziki. Is that a regional thing? Because the greeks I know never used dill in their tzatziki.

Hello guys and welcome to my channel! My name is Akis and today I'm going to show you how to make a very appetizing and savory sauce that no souvlaki, gyro, or kebab should be served without. This is a traditional Greek sauce so, if you want to make an authentic Greek souvlaki this is a must! So watch me carefully! On today's episode, I will show you how to make a healthy Greek tzatziki sauce which uses yogurt as basic ingredient. It can be combined beautifully with any type of meat and vegetables. I'm going to begin by peeling my cucumber. Now, I want to grate the cucumber and I'm going to use the large blades on a cheese grater to get longer pieces. Now, let's add a pinch of salt and a tablespoon of white wine vinegar. Give it a toss and set it aside. While we are waiting for the cucumber, let's make our sauce. We need the yogurt and 1 clove of garlic; not even 1, 1/3. We don't want any large pieces of garlic in the sauce, so we are going to beat it in a blender. Put it into the mixer. I'm going to use 3 tablespoons of Greek virgin olive oil and beat until the garlic has been completely broken down. In a separate bowl add the yogurt, the olive oil and garlic mixture, and the vinegar. Salt and pepper. One of the key ingredients here is the white wine vinegar, it is what gives the tzatziki its characteristic flavor. Mix until it's combined and creamy. Very easy! It's time to add the cucumber. Cucumber should have released its liquid by now, so squeeze it in a towel, ring it with your hands to make sure all of the liquid is released. Perfect. We don't want this liquid to be released in the sauce. Why? Because it will ruin the perfect creamy texture of our tzatziki. Now, we can add it into the sauce and stir it in. Pepper is good, vinegar is good, salt; maybe a little bit more salt is needed. And our tzatziki is almost ready. The last ingredient we have to add to the sauce is the dill. This should be enough. And mix it. The best type of yogurt to use is Greek strained yogurt; not because I'm Greek and I want you to buy Greek products but because it is the best type of yogurt to get creamy and thick results. Let's give it a taste! And finally, our sauce is ready. You will love the way tzatziki will complement your vegetables, pita bread, souvlaki, kebab, whatever.
