ah good life full of fun seems to be the I hey guys look at my kitchen another exciting day in my kitchen take a look at this right here my judges that was awesome so I went to the butcher today this morning the butcher I you go on a sounds like Brooklyn right and I got myself some pork chops I had them cut of an inch thick right with the bone beautiful I let them chat a little bit because I don't want cold so that's got some weight to it so we got pork chop I mean pork chop when you have to report yup suddenly some some Mafia the mob guy rocket is just some you know little dive and uh you know the processor vocal only did I book it be a fourth job my mother my grandmother always used to make pork chops and they made this like actually delicious encrusted flavor you know with cheese and bread crumbs and sauce on it I want to recreate that for you so we're going to calm like a cheese and crusted pork chop I mean with garlic they're going to be absolutely absolutely phenomenal I'm going to show you just a couple of little tips or tricks just to take it from awesome to you know forget about cooking the challenge yourself you know what I'm saying great recipe ok so for pork chops they'll stop from so excited I've got two cups of breadcrumbs here so 2 cups of Italian flavored breadcrumbs I've got 1 cup of cornmeal that I'm going to add to the breading because we're looking for a crunchy looking for a little different flavor because the breadcrumbs are going to be a big part of the flavor of the pork chop okay so we want to add a lot of flavor to that so I've got 1 cup of corn starch so I've got a cup of corn starch in a cup of cornmeal that I'm going to add I'm going to add almost 2 cups shredded but it's a cup and 3/4 of Parmesan cheese ok Parmesan Reggiano so I've got some Parmesan cheese there we're going to add to the breadcrumbs oh my god I'm telling you mix all that with parlo I'm so excited I'm slamming things together some whole parsley absolutely delicious ok then I've got for a whole cloves of garlic so I'm going to mince that really fine and I'm going to add that to the breadcrumbs along with the cornmeal for insurgents in the Parmesan cheese and it's really going to add just an enormous amount of flavor to that it's going to be absolutely delicious I need to dredge it right so I've got some milk I've got 2 cups of whole milk and I've got 3 whole eggs ok now I've got my salt I've got my pepper I've got 3 tablespoons of butter the reason being is we're going to take these pork chops we're going to pre season I'm here in a minute with some thyme so I've got to add about 3/4 of a teaspoon of thyme I'm going to cover them with olive oil I'm going to season them with salt pepper and thyme I'm going to let them set for a good you know the half hour 45 minutes ok then I'm going to sear it in a pan after I've read it and get it nice and crust it okay then I'm going to put in the oven so preheat your oven at 350 degrees we're going to let it set in there like 20-25 minutes then we're going to pull it out I'm going to show you a couple other tricks oh my god I'm telling you it's going to be absolutely I'm so excited to have this one of the key ingredients here is going to be olive oil so you guys know I need my regulars you got to sit through my 30-second plug here evita macho's although so I got to farm in Italy and I make my own a low boil I name the company after my two boys Vito and Joey and it's right in your Puglia or it's info I should say it's just near alright so north to Bari about you our common question I get and we've got about I don't know eight nine hundred trees right now we've got to coop with a group of other farm to bring you essentially a trip or a bottle of Italy all right for your own kitchen it's absolutely delicious it's earthy its grassy um and it's just got that little pepper kick in the end oil ty it's the real stuff I mean the real olive oil pick from all Italian out all prepped in Italy bottled and they'll absolutely delicious so so we'll you see we get start here I want to start with seasoning my pork chops first so when we season one of the things that I would like to I like to add a little olive oil first that way everything I put on there actually ears and steps okay so I'm going to put some olive oil right over the top and that's video on Joe's obviously the greatest olive oil in the world okay so I'm going to just roll those now there it looks like a lot of olive oil but I mean we got a lot of porkchester so I'm going to really cover all how that elbow is small so good same thing see I want to make sure every bit of the pork chop is covered in olive oil then what I want to do is a lot right I want to cover it in time and then flip it and time is a beautiful herb it goes so great with meat and certainly goes great with fish it's one of those nice Italian herbs now I want to hit salt and I want to hit pepper so now I'm going to hit salt and so you definitely want to preseason a lot of people forget you want to season every layer so I'm going to hit the salt and actually rub it in you guys make some chunks of salt and it's going to rub in now I'm going to flip it again the last but not least so I'm going to hit that pepper and a lot of pepper that's going to give you that nice little pot rub it in there with the Tong so it sticks right flip it I mean you're never going to have the pork chop as good as I'm just telling you and I say that humbly and I ask that you guys share our videos if you like what we're doing and share stories so I'm going to rub that end I'm going to let that set and get everything else ready and I'll let these set for a good half-hour 45 minutes all right now we're going to make that brining which is going to absolutely be so delicious and that's what's really going to give it a kick all right so I've got my my breadcrumbs right I've got whoa there you go so fresh is jumping right out right got my cornstarch I've got my cornmeal you want to mix it really well I'm going to on my Parmesan cheese right you just want to give it a really good thorough mix all right it's garlic crying so I'm going to mince this garlic up so delicious I mean just go so well with everything you'll come people don't like garlic and or the flavor garlic you know if you have people and you might over and they till I kind of long crest why are you hanging out with that's my attitude you know one of my eating kicks were you young chefs you know man or woman and you guys like hey listen you know our little girl can you make a difference when we put lobster garlic in there you know your sequins or sizzle I don't like garlic you know they're Dawson I mean honest to god why are you hanging out of that person I mean reality you know you put on Sinatra Dean Martin Bobby Darin right you hit a little girl and you rock and roll's it that's the reality of it right they don't like it scrape them off that's the reality here alright I'm going to put no more dating advice area so I'm going to mix that really well alright so now I'm going to add a little person I'm going to hold a little back there I want to use that as a you know it's just a beautiful way to dress your final dish and our plate okay it's going to mix it I'm telling you this smell in here you know it's just great from for my little cracked pepper just to give it that little extra you know that little background of heat all right so I've got my three eggs gonna pop those in there so one of the things I like to do is get those yolks going first okay and just get it all really mixed quality here to add the milk to that and then just add your milk slow so I'm going to dip it in the milk bread it really well plate it I've got my pan going over here which we'll trade on it I've got about a little bit more than a quarter-inch of olive oil and you're going hot so I almost want to fry it you following sayings get a nice sear crust on both sides then we're going to bake it I'm going to take that first job I'm going to put it in the milk egg mixture very quick okay then I'm going to put it in my breadcrumbs I'm going to make a nice little bed for it comb my fork shop are you doing and again now you don't want to rub it but I want to press it so I want to get a nice thick layer of cheese I want those ends good you know you want to make sure see those little gaps in there get in those gaps all that's going to be good and just really squeeze it on there all right so we're breaded and those are beautiful so I guess you all going it's nice and hot here's our challenge we got to get all four of these puppies in there and I will do it so we're going to go a good two to four minutes on each side we're gonna get a nice brown crust on there then we're going to flip it okay it's been about four minutes I just want to show you how beautiful that looks look at that oh I mean can you see that that right there is heaven you want to be gentle because you want to knock all that beautiful flavor and bread crumbs off now I'm going to let it go in other formats I mean look at that it's just beautiful nice and crusted and then when I'm done with that we're going to throw right in the oven all right guys about four or five minutes the other side is absolutely perfect so what I'm going to do here is I want to hit this in the oven the oven preheated 350 so I'm going to turn that handle we're on get our in 20 minutes it's going to give you an internal time but one of the things tips on where I teach you to really send it is I'm going to pull it back out of the oven and I'm going to use those three tablespoons of water and give it one extra crisp before I serve it Oh 20 minutes is passed okay beautiful that's still cook so got my three tablespoons of butter right so I'm going to split that up because I want it to get all over okay and it's going to melt and it's just going to give it a nice little cream and deliciousness you see how that beautiful crust and with the butter it just gives you that that that next step that next well you just can't refuse absolutely delicious beautiful or what that oh my god all right so now what I'm to do is I've got all this delicious you know flavor so I'm going to take it off I'm going to take some of that and I'm going to just put it right over the top any of those bread crumbs that left you know the garlic you got that beautiful flavor with the olive oil and I just want to grab some of that flavor and now I'm just going to hit it you know a little you don't have sand just a little home and then when I got going back here and that back pot is a little pull out that I use the lobbies so I'm going to take this guy right here which just looks fantastic and just all now while thinking is a little at all I mean just that I think it may be just a little bit more hype my copy right you guys ready for deliciousness and you could it could be more perfect I'm just telling it oh my gosh perfect right look at that Oh a little bit of crumb on there I'm going to do with just a little bit of flat oh my god oh I'm using minute you put it in mouth to gap that butter I'm going to play with the oil the meat the salt the pepper look at their Parmesan cheese the flavor the bread comes you know that Italian seasonings are time and the counter ness of the pork chop which beautiful tzer's flavor all the way through just all the way through you know I'm thinking a nice white wine right there like a Riesling oh my god absolutely delicious absolutely delicious guys thanks so much
