for some reason everybody seems to think they make the best grilled cheese which is like I get it it's such a simple thing to make today we're really gonna put it to the test maybe scrutinize it just a little bit [Music] it's grilled cheese you know what it is it doesn't really need that much of an introduction grilled cheese in just about any format is somehow decently good even with the process waxy cheese and I and I hate to say it but it's true there's a lot of new projects going on right now but a lot of them are kept on the down-low unless you see my Instagram stories which by the way if you don't follow me my Instagram and all that is in the description including my tick-tock yeah I want to talk we got the plug out of the way so let's do this shall we okay so let's address the first elephant in the room mayo verses butter for toasting everybody seems to sort of thinking that May was a better option versus butter well let's just let's test it out so I've got two of the exact same types of bread here I'm gonna spare my butter on this one and I'm gonna spread my mail on this one the butters room-temperature by the way then I place them both in the exact same pan at the obviously the same temperature right off the bat is that the mayo toasted way faster than the butter did my guess is just the oils heating up faster because the butter has to actually go from like softened to melted and then start toasting but you know that's just a guess okay so on the left is the butter and on the right is the mail obviously the mail got a little bit over toasted but just a little okay so the first thing I'm noticing is the butter got a much deeper sort of kranji your toast and the mayo got sort of a thinner crispity ER toast let's go by smell so let's see the butter one smells great smells like butter the one with mayo smells like mayo which is kind of gross however you make your mail or if you buy your mail your bread is gonna smell like that we'll taste it and we'll make a decision so first the butter listen so that's great now it's really buttery because it takes way more butter to slather that on there and get a good toast than it does the mayo for the Mayo okay hmm but it's got like a twang to it that I'm not in love with I just prefer the butter one I like butter the butter is the winner it's more flavor and you still get a great toast with it so I don't know why everyone okay it works that's cool but it's not it's not it's a little overhyped also I might add the male one goes soft real fast you don't want anything going soft earlier than you expect it to so now let's test a couple ways to make you grilled cheese for the sake of nostalgia let's start with the American cheese one I'm sorry we have to do it she's gonna take two extraordinarily high glycemic index slices of bread and give them a nice even coating of softened butter you know salted unsalted whatever floats your boat now place one of the slices in a cold pan butter side down put a couple slices of American cheese on there as many as you want I did three and then top of the other slice of bread butter side facing up let that toast form anywhere between three to six minutes over medium heat until nice and toasted give it a flip repeat and well that's well that's it that's a it's a grilled cheese it's ridiculously easy I grant it I will say this thing toasts immaculately it's insane how this type of bread toast it's like really strange this is too nostalgic for me too wispy there's a lot of things that I have strong opinions on and oh gee grilled cheese like this is just an American thing and it's one of the few things that I actually really do like that is just you know like horrific like Frankenstein cheese and goes against everything that we talked about and yet for some reason this childhood memory just continues to deliver og out of the way let's go okay so let's make something a little more our speed so I've got a country sourdough loaf of bread slice that bad boy up slather it with butter the exact same way not too thick or not too thinner I would say about a half tablespoon or 7 grams per slice maybe even more three Jesus cheddar raclette and howda it's pronounced outta but yeah Gouda great a quarter cup or about 28 grams each and also be careful with your grater please so again place your bread butter side down in a cold pan mix those cheese's together and top with all the cheese compress it and sort of press it down and so I guess like a grated cheese patty if you need to add more add more then top with the other slice of bread butter side up turn the heat on to medium heat and toast for five to eight minutes or until nice and golden brown cheese sort of beginning to mount flip it and repeat until Jesus melted and he got toasty Brown Brown I prefer this bread for a lot of reasons well cheese pull tested past could have put a little more cheese I think in the center always listen to the sound nice oh yeah so should be talking about this boat I just want to eat it well you know it's in the brain okay next one is gonna be a caramelized apple and Brie grilled cheese can't go wrong with that so to caramelize the apples are gonna use two apples peeled cheeked and then cut it into small bite-sized pieces which equates to about 242 grams total after it's been processed toss that with 3.5 tablespoons our 44 grams of granulated sugar a small pinch of salt let that sit for about 20 minutes set the pot over medium-high heat and bring to a boil then reduce to a simmer and simmer and tell well caramelized and sticky its that's it we're not making a jam I want them caramelized in the outside but not mushy on the inside by the way that recipe is enough for like one sandwich I recommend doing probably a triple or quadruple recipe so got a brioche loaf of bread and sliced that into slices slather it the same way with butter place it butter side down in a cold pan add a single layer of the caramelized apples some grated cheddar cheese and enough sliced brie to coat the whole surface I know this is stacked a little tall if you need to toss it under the broiler you always can add sure there's slice of bread butter side up toast for five to eight minutes on both sides or until cheese is melted you got a nice crusty brown brown it's the classic cheese and fruit combo the soccer moms are right it's savory sweet you guys know I love that crispy on the outside the apples are still have some texture to them and not cooked all the way through and they're nice and sweet so it okay we got that one next one look I think you get the gist I'm not gonna run you through the whole process again but I'll give you the lowdown on this last one it was made with a pan all a sort of loaf some cooked bacon just a little crispy and a lot of pepper jack cheese I will say that the pepper jack cheese has an incredible cheese Bowl nice and crispy on the outside but then when you pull that look at that stretch it just goes on and on and on it's beautiful it's really beautiful hmm oh wow all right so I think I have my verdict sourdough butter cheese more bread that's it the more that you add to a grilled cheese and starts to become less of a grilled cheese and more of just like a grilled sandwich really a matter of bread and cheese close runner-up honestly was the pepper jack and bacon and the second thing is using better cheese and better bread does it make a difference and will make a better grilled cheese more flavor more texture blah blah blah you get the point but do you want to know what else has more flavor and more texture alright guys and that is it so there are many ways to make a grilled cheese but like I said before you know it you can only put so many things on a grilled cheese before it stops becoming a grilled cheese so let's let's all collectively sit together and remember that if you want a grilled sandwich with a lot of cheese on it that's fair but it's not a grilled cheese anymore by the time
