recipe right start the recipe by testing your yeast salt to the warm water add one teaspoon of sugar the temperature of your water should be around 40 degrees Celsius that's a hundred and four Fahrenheit and once the sugars dissolved add your yeast you can use instant or active dried yeast if you're using fresh yeast you'll need 20 grams now give it a good mix and set it aside until it starts to form up that usually takes around 10 minutes [Music] time to make the dough do a ball add the flour and mix in the salt and now I'll add the yeast mixture and as you can see it's well active if there's no activity in yours then your yeast must be dead there's a couple of reasons this might happen one that may be too old and out-of-date and 2 it could be the chlorine in your tap water that's killed it the chlorine in tap water is there to protect you from harmful bacteria the trouble is it doesn't know the difference between good and bad bacteria always try to use bottled or filtered water when making bread now add the oil I'm using vegetable oil but you can use olive oil if you prefer [Music] okay I'll roughly bring that all together using my trusty wooden spoon handle [Music] right I'll tip it out onto the bench and start the kneading process by hand make sure you scrape all of that flour out of the ball [Music] now the work begins bring it all together into a dull ball [Music] the monsters don't set your timer for 10 minutes stick on some tunes and start kneading like I'm doing you can learn a lot more from my dinner roll and cottage law videos about kneading techniques you can of course use a stand mixer to knead this door for 10 minutes but if you're able it's a good upper-body workout [Music] okay the 10 minutes are up and that's all of the physical work out of the way and you should now have a nice smooth ball of dough right the next step to a nice warm bowl add 1/2 teaspoon of oil and spread it out a little caught the top of the door with the oil as shown now get it covered for its first rise I like to use my shower cups of this these are available in the website shop if you're interested now put that in a nice warm spot and set your timer for 30 minutes right so far so good after the first quick rise of proof your door should have at least doubled in size now turn it out onto the workbench you shouldn't need any flour for this as it's a fairly low hydration door 57 percent if you're interested now knock the door back that simply means get rid of all the gas out of it [Music] and get it back into the ball for its second rise cover it unlike my last video on proof in mine in the oven was just the bulb on as it's an ideal proofing temperature of around 25 Celsius that's 77 Fahrenheit now set your timer this time for 45 minutes okay like I said at the start you don't need a loft in for this but you will need a baking tray and this is the one I'm using the tray dimensions are on screen to prevent the bread from sticking I'm greasing mine with a little oil the sheet of parchment or grease proof paper will do the same job right I'll set that aside until needed okay that 45 minute proof is up [Music] you should have a much better eyes this time [Music] now once again turn it out onto the bench and knock it back as shown this time with a little flour sprinkled on top always have a baker's scrape a handy for any sticky [Music] [Music] now form the door into a ball and slightly press it down [Music] now carefully place it in the center of your baking tray sprinkle a little flour over and cover it with the dry lightweight cloth this is important if you use a towel that's heavy that will restrict the door from rising upwards these tea towels are dishcloths aren't too good for drying dishes but a great for proofing the door they will be available in a channels website shop very soon right I'll get that buck into the bullet oven and set the timer for the last 45 minute proofing and while that's proofing in the oven I hope you don't mind I forgive my very first recipe book a bit of a plug the book has lots of our favorite recipes from our kitchens in it and is available in the channels website shop of your screen once there's only ten minutes left on the rise I'll remove mine from the oven you may have yours proofing somewhere else right it's risen quite well and that can just sit on the bench for the final 10 minutes while I preheat the oven to 200 degrees Celsius that's 394 in height or gas mark 6 and to give the bread a crispy crust I place a pan of hot water on the lower shelf of the oven [Music] okay when the final 45-minute rises up I sprinkle a little flour over the door and give it a couple of quick slashes with my Baker's lemme oops I tried that one a bit but it'll be fine we call these mistakes character right all I gotta do now is to get it into the preheated oven and set the timer for 30 minutes okay times up unto smell in my kitchen is absolutely fantastic and out it comes and this loaf is looking amazing now I'll get it onto a wire rack and allow it to cool for 20 minutes then I'll come back and cut a couple of slices off and there you go you can clearly see the character mock right as you can hear it's got a wonderful crispy crust and the crumb looks soft and light on the inside I'll try a little of my homemade butter on this end piece [Music] and that has a wonderful flavor and great texture this is a good all-rounder it's great for sandwiches toast and ideal for making garlic bread for dipping in your favorite pasta sauces and as usual gets a big thumbs
