i'm rachel from rachel cooks with love today i'm gonna be making some delicious beautiful donuts and i'm gonna be making them for my grandkids and it's a easy recipe and super delicious let's get started so the first thing that I'm gonna do is I'm gonna make my dough now I'm gonna be using a standard mixer but if you don't have one you can do it by hand as a matter of fact I have made more donuts by hand than I have with a stand-up mixer so it can be done okay so I've got four cups of all-purpose flour in here and I'm gonna dump it in and here into my bowl one stick and I'm using unsalted butter I've got one tablespoon of instant dry yeast 1 teaspoon of salt one teaspoon of cinnamon and this is optional but I like the cinnamon in there so it's 1 teaspoon and then I've got 1/3 of sugar I've got two room-temperature eggs and these were large eggs 2 teaspoons of vanilla and I've got one warm cup of evaporated milk now I always use evaporated milk when I paint I have used fresh whole milk but I like you've apparated milk so it's 1 cup I'm gonna put in my hook I'm just going to bring it in together I'll bring it in together for about two minutes so it's coming in together really good so now I'm going to raise up the speed and I'm gonna let it mix like that for ten minutes I'll come in about the five minute mark and show you what it looks like so this has been going on for five minutes if you can see it it looks a little bit sticky at the bottom but it's supposed to look like that so I'm just gonna leave it alone and not touch it for about six minutes so total it's about I can say about twelve minutes so it's been a total of about 12 to 13 minutes and I want to you to see just how we that's come off all the wall there's it's not sticking in the wall which is exactly what we want and it'll come off so easy from the hook look at that see see how easy it comes off look at how pretty that is and look at how we left them all like that I'm going to lightly flour my counter like this put my goal so you rolling it in tucking it in see how beautiful it is so I've got a little bit of oil right here in a big bowl like that I'm gonna get my dog putting it in here and I'm giving it a turn just like that and then I'm gonna cover it with some plastic wrap so now that I've got it all nice and covered like that I'm gonna let it rise for about an hour or two and I'm just gonna put it somewhere where it's just warm and away from any drafts or anything like that usually I just opened my oven and I just let it sit in there when I wait until it doubles in size so my dome is perfectly ready as you can see it has doubled in size and it was about an hour and 15 minutes so what I'm gonna do is I'm going to dust my counter here with a little bit of flour just like that then I'm gonna dump it over [Music] it is so perfect so what I'm gonna do is I'm gonna roll it out and I want to roll it out to about half an inch thick and you don't have to press real hard that's it's not necessary and I would say that's good so then I've got a biscuit cutter when I improvise and I'm gonna make my donuts with this and then I'm gonna use this to make my holes if you don't have a doughnut cutter which I do but it's in Ohio but you can use anything you want to make it work like this you know remove this we're gonna put it into my bowl and I'm just gonna cover it up just like that just to keep it moist and I checked some parchment papers right here for the donuts so I'll lift it up and keep them into a real nice little circle like that with a lot of love you have to put a lot of love in what you do when it comes out so good see and then when you put it down on your piece of parchment paper like that you know you can reform it into a little perfect ring like that as best as you can because how you put it is how it's going to set see see and then these are gonna be my little holes the little donut holes I'm gonna cover on loosely with some plastic wrap and I'm gonna let them rise as you can see they already want to do it see so I'm gonna cover them up just very loosely like this because you want to give them room to to rise I'm gonna let them rise and I'm gonna stop them when they are about halfway through I don't want them to double in size I only wanted to get like halfway through and then we'll try I'm gonna make my glaze while my doughnuts right so in here I've got one cup and 1/4 of powdered sugar and I'm gonna put in 1 tablespoon of milk I'll put two of them and I'm gonna put 1 teaspoon and a half of vanilla and I'll mix these up real good and you want to mix it real good until it's real smooth it has a little color to it because I use the dark vanilla but once it goes on the donuts it looks clear and here you go see this is gonna look really pretty once it's on the donuts so I'm gonna go ahead and set this aside and I've got the same amount of sugar over here and I'm gonna make some chocolate glaze so I've got three tablespoons of unsweetened cocoa right here and I'm gonna mix it in here with my powdered sugar and I'm gonna add two tablespoons of milk and then I'm gonna add one teaspoon in about a half of the net and I'm gonna mix them up just like I did the other one and here's my chocolate see I wanted a little bit thick because I don't want it to drip off the donut so this is about the consistency that I want see and if it gets a little thick after sitting there for a few minutes I can just put in a dropper too low so I'm gonna lay this aside clean up my area and get my doughnuts ready my donuts are ready and I've got my oil nice and hot and I'm gonna put these right here so what you want to do with your oil is you want it to be about 320 degrees so if you don't have a deep fryer like this you can just get you some type of a pan or a deep pot and you can put your oil in there and get it nice and hot you don't want it very hot because you don't want it to get real dark brown from the outside and still be raw from the inside so what I do is I get a piece of dough like this and I've got mine set at 320 degrees and I'll drop it in there and that's how I want it to be like that as you can see see it's not a rolling boil but it's just a nice move a nice bubble that's what I want let's kick this out so I'm going to go ahead and drop my old donuts in like this and I usually leave them in about a minute or a minute and a half and then I flip them over and as you can see it's not a real hard boil it's just a light boil and that's the way you want it to be because if it's boiling a lot more than that they're gonna get real dark from the outside and they won't be cooked all the way inside so you want to be careful here's one that I just flipped and I'm gonna flip the other one over just like that you see the color I'll leave them in there a minute and then I'll take them out so these are ready like that now leave them in there about a minute so while I've got those donuts in there I'm gonna go ahead and glaze my doughnuts you see they're nice and warm so I'm gonna dip them in here just like that turn them over send them right there and I do one neither one you want to make sure that you quote them really good just like that I'm gonna set this aside and I'm gonna do the chocolate one so what I'm gonna do I'm gonna do some sprinkles because my granddaughter loves sprinkles so you just want to go in like this about halfway lift it put it into the sprinkles see I'm gonna do it with all beat because she loves the color pink see yeah look at how big and beautiful these are these are my sprinkles that I have that I use throughout the year like for Easter Christmas you know you can like - this pink I'm gonna add a little bit of purple because I ran out of the pink so I'm gonna add some purple in there oh and that would be really pretty look at that when kids just love this like that see you can just do whatever you want like right here I've got some plain sugar I'm gonna do some sugar once too so you can see that you can do some plain just some plain sugar doughnuts see look at this see how pretty that is just some plain sugar ones like this look at that see see how pretty that is you've got a combination I'm gonna go ahead and do an all chocolate 1c and you want your glaze to be a little thick because you don't want it to stay and you don't want it to drip off but if it drips off it looks nice to see just like that I'm gonna do one another I'm gonna let these cool down just a little bit before I dip them into my Daisy I think I'm gonna sprinkle some yellow on this one just to see how it looks who isn't this nice you see and if you can get all this set up at home you you don't need a deep fryer you don't need a stand mixer you can just knead it by hand it'll take you a little bit longer like maybe 10 to 15 minutes you know doing it by hand but you can take a break in between and then continue needy and then if you can get all your sprinkles and all your sugar like this you can have your kids participate and they have so much fun and even if they mix all the sprinkles together and all that they just have so much fun and that's what it's all about so here are my doughnuts it even the little donut holes now remember remember that bit of dough that I had that was leftover so I went ahead and kneaded it again in my stand-up mixer I went ahead and rolled it out and I cut it out and I'm gonna let him rise for the second time and then I'm gonna do the same thing continue on and finish those but I wanted to show you this this was the first batch so now for the taste test I think oh no let me do this one and I like the sure ones so look at how soft they are look at that see see how pretty it is from the inside look at that mmm look at that oh my gosh these are delicious I've gotta say we're not gonna be able to eat any of these because I'm gonna cover them up and I'm gonna take them to my
