[Music] foreign [Music] another amazing recipe I am so excited yet another day because today at the Young's house Jeannie young is going to share with you all how easy it is to make delicious Southern smothered chicken this chicken right here is amazing it's so easy to make doesn't require a lot of ingredients and if you make a genie young style it's going to be so tasty hands down y'all never have my Southern smothered chicken before better make you some here are the lovely ingredients you will need now when it comes to smothering chicken please feel free to use any piece of the chicken that you would like to use here at the Young's house we happen to love chicken thighs so that's what I'm going to be using my chicken thighs are skin on bone in okay now I have washed these beautiful chicken thighs off using lime juice salt and cold water and then we've Pat them dry with the paper towel and we've taken away any unwanted feathers and fat okay you will need some flour so right here I have some all-purpose flour any kind of flour you have you may have rice flour almond flour a self-rising flour that will do the trick okay can have some other chicken without rice on the side so I will be making up some white rice and then you're going to need some broth you can use vegetable broth or like in my case I'm using chicken broth if we make our way over this way you'll see that we got a nice beautiful sweet potato onion and some gorgeous spices these spices that you will need would be paprika it is not smoked paprika poultry seasoning black pepper onion and garlic powder salt and vegetable oil make sure your hands are impeccably clean let's get started with this really quick and simple yet so tasty recipe I couldn't be more excited today to share with you all this easy delicious recipe I mean come on let's talk about it how many of you love fried chicken right the world loves fried chicken and then you think about pairing it up and smothering it in gravy listen here you have a match made in heaven and it's so easy to make okay so the first thing that I want to do is I want to go in with the paprika the paprika is going to give a color and it's going to give a great taste this is not smoked paprika I really like to emphasize that because I'm not a fan of smoked paprika okay so I'm going to put some salt in my hand I really like to distribute salt this way versus using the shaker bottle because sometimes the shaker bottle doesn't put the salt where I want it to go I'm using a sea salt and I'm going to vigorously season both sides of the chicken we must put seasoning and flavor into this dish today okay so now we're going to go in with garlic and onion powder just like so hold on guys one second I'll be right back sorry about that everybody someone was at my door and sure enough those little puppies will let us know so now we're going in with some onion powder okay we definitely when you are making poultry you need poultry seasoning in order to make this thing taste good right so I'm putting poultry seasoning on and some black pepper okay so now when I come back we'll get this flipped over and season the other side really good just like so same seasonings on this side just like so in this manner and I want to talk about something really quickly while we're seasoning make sure when you take your meat out of the refrigerator you make sure you that you don't cook it right away let that meat come up to room temperature and it'll cook up better okay versus if you take it out of your refrigerator and you decide to cook it right away and it's really cold the meat will seize up and it'll cook up dry okay so let it come up to room temperature before it hits that hot oil and it's going to turn out delicious for you every single time okay so let's get some paprika on there beautiful and we'll let this set for about 20 minutes so let's talk about what we did before we dredge our beautiful seasoned chicken we let the chicken set marinating in this beautiful spices coming up to room temperature for about 25 minutes I would say okay so now that they've came up to room temperature nice and seasoned and clean let's go ahead and dredge them okay now this is just flour this does not have corn starch in it I know there has been many times where Jenny Young fried chicken and I put corn starch in it but today is not one of those days for this recipe Okay and like I said this is just the all-purpose flour so if you take a look over here in my pan I'll go ahead and use my fingers take a look and see how much oil I will be using okay it's not a whole lot we're going to put the chicken down skin side first all right and you got to see in here that Sizzle if you don't see that Sizzle and hear it don't put no more in because your oil is not hot enough and the oil has to be nice and hot in order for your dish to turn out perfect okay we're going to cook this chicken until this beautiful golden brown on both sides and then I'm going to show you all what we're going to do next okay let's go ahead and put this in always shake your chicken off the purpose for giving it a nice Shake is we want to shake off the excess because naturally flour will fall into your pan but where does it go when it falls into in the pan it goes to the bottom and it kind of burns a little bit you don't want for your chicken to have a burnt flavor so you shake off the excess okay and and save yourself the stress of of getting that burnt taste of all that flour that burnt at the bottom just because you didn't shake it off so we give it a nice Shake just like so once again going in skin side okay and when I come back we're going to get started cooking up some rice so we got our chicken frying up on a medium-high heat if you check over here we have some water that has been salted I'm going to put the rice in and just cook it for 11 minutes all right what I want to do right now is go ahead and cut some onion okay because I feel like when you smother something you must have onions you know and sometimes I feel like you must have onions and mushrooms but we're not going to do mushrooms today okay so now I have a nice beautiful sweet Vidalia onion we're going to go in and slice that baby up just like so chop it slice it however you want to do okay and what we're going to do is we're going to saute it up a little bit right before making our gravy okay beautiful I don't feel like I need the whole onion I feel like this right here is plenty enough now I want you all to take a look over here so my husband doesn't like rice so I figured I'd make some mashed potatoes for him and for something else as a side dish we're going to have cinnamon apples and I'm going to have the rice underneath my smothered chicken so now when I come back we're going to flip that chicken over and we're going to put a lid on it okay we're going to put a lid on it so the inside of that chicken can get fully cooked let's turn this chicken over we should have some beautiful color onto that skin look at that like seriously when you see that color you know it's going to taste good look at this one oh yes that's how you do it and you can see that the oil has changed the color of the paprika you know we got some good flavors onto this chicken let's cover it up with the lid so this right here is the oil that is left over and believe me it's seasoned this is the oil that was left over from frying of the chicken thighs let's go ahead and put your onions if you want to use mushrooms and bell peppers put that in with the onions and we want to sweat them just a little bit okay so let's go ahead and move them around just like so in this manner let's aim to get a little bit of color onto them now these onions is going to get give amazing flavor to your gravy now there was a little bit more oil in this pan that I decided that we did not need so I poured that out of the pan okay so let's let these cook and sweat for a little bit and let off some amazing flavor and then right here I have some flour that we will be using leftover flour from dredging my chicken and we're going to put it into our pan I'm going to show you how to make this really delicious flavorful gravy genie on style take a look at the beautiful chicken that's what the chicken looks like now we did let the onions I would say saute for about five minutes and you can see those lovely fond bits they're scraping up all that's going into our gravy now when you're making a roux typically you'll use equal parts oil to equal parts flour I'm not going to measure this because I know how much I need okay but in the description below to help you all out I will tell you exactly how much of the oil and flour you will need to use so what I'm doing is I'm kind of you see how I'm uh like incorporating the flour gradually into the oil I like to do it that way and you'll have absolutely no lumps okay so you grab a little bit Stir It Around grab a little bit Stir It Around okay you don't want this to ever look like a plaster or paste you don't want it to get that thick now once we get all of the flour and I'm going to put some more flour in so I can have more gravy once we get all of our flour well Incorporated we are then going to put our chicken broth in chicken broth is going to bring lots of flavor and not only are we going to put that in but the same seasonings that we use for our chicken we're going to put in our gravy minus the poultry season when I come back now there's one thing that I didn't mention is I need for you all to let the flowery taste cook off for about four minutes before you put your liquid in okay so we're going in with chicken broth just like so and literally once you get your broth in you start stirring vigorously and then when you achieve that beautiful consistency that we all know when you think of gravy that's when I want you to stop putting in your liquid so right now if you look at it you say uh well too thick right so if it's too thick what do you do you put more liquid in okay and you keep doing that until you see the consistency you're looking for okay so while we're doing this let's go ahead with the other hand and season up our gravy a little bit of salt will do not too much a little bit of garlic and onion powder all right paprika is going to give you some great color and a nice taste okay and some black pepper okay get in there just like so all right and then I'm going to continue to put that broth in and then very quickly we're going to be adding our chicken we're gonna put a lid on and let it simmer so if you all take a look I did sneak a little bit of chicken powder in there feel free to put chicken powder in there as I did and now we're going to take these beautiful crispy chicken thighs we really want to Nestle them down in there get in there and look at the consistency that's the consistency of gravy that I'm looking for and the pieces that you're seeing in there don't forget we put onion in there look at this now listen this is what you call Southern smothered chicken Gina Young style you better make you some and if you don't tell the whole world about it if you don't
