Hi everyoneee :) Today I'll be making a super delicious bread bun with no oven :) This custard bun recipe I studied from Sweet the MI but I changed almost all of the ingredients so it's more accessible for you guys and it fits my taste a little bit more :) I'll start with the custard filling first I'm going to use 3 egg yolks. This recipe will have a 1 egg yolk to 100ml milk ratio Whisk in 50g of sugar with the 3 egg yolk. It doesn't have to be fully dissolved Next I'lll add 30g of corn starch. You can replace this with regular flour Because this is a custard filling, I'll be putting more con starch than usual so the filling won't be absorbed into the bread Next, pour 300ml of unsweetened mik with 40g of unsalted butter into a pot (you can skip this but not recommended :)) Then put it on a stove and start boiling until small bubbles appear. Don't let it reach a full boil since we will pour this on the egg mixture earlier. If it's too hot, the egg will start to scramble :) When the milk is starting to boil, turn off the stove and pour it slowly into the egg bowl, and remember the slowly part because you guys seem to mess up everything you do :) Mix it while pouring to help get rid of the raw egg smell :) Sieve it to make sure there's nothing left but liquid Next, turn on the stove at medium-low heat and cook the mixture while constantly mixing And no you can't be lazy and not mix it :) It WILL burn and that is a promise :)) When the custard is starting to thicken, add in 1tsp of vanilla extract so it smells good :) You can skip this step Now pour the mixture into your cute litlle kitty bowl, And a kitty bowl specifically and only :)) I'm just kidding, you don't need to pour it into a bowl and wrap it with cling film and put the whole pot into the fridge. But I'm me and this is an aesthetically pleasing channel :)) We'll move on to the outside bun now :) I'm going to use 300g of bread flour and 4g of dried yeast for bread making :) Adding to that is 40g of sugar and ½ tsp of salt And 130ml of unsweetened milk Lastly is your favourite unborn chicken :) Using a spatula, mix the ingredient until it looks like a mess just like your lovelife, actually just life in general :) Throw that flour clump on the table and start kneading. I kneaded it for about 20min, just push it out and pull it back, rotate then repeat At first, the dough will be a little sticky and wet but after a while it'll start to stop sticking. The dough will be ready after 20min of kneading. If you have a kneading machine, it'll only take about 15min Next, put in 40g of room temperature butter and knead it with the dough Because the weather is so hot, the butter was melting so my dough is a little weird :)) But don't worry, after about 5-10min the butter will mix in with the dough See? The dough will be super soft like this and it won't rip when you stretch it like this :) Now just put your dough baby into a bowl and cover it wil cling film and wait for it to rise for 45-60min. Just wait until the dough has risen twofold My baby has grown so much :') He's so puffy and big just like my belly :)) And yours too after this quarantine so don't laugh yet :)) Punch him a few times and knead for about 1-2min to teach him about the hardship of life :( and also get rid of the air bubbles :) Then I'll divide the dough into 8 equal parts. You can use a scale to make sure it's all the same I'll press the dough down and knead it into a small ball Give it a 15min rest. Remember to wrap it to prevent drying the dough After the rest, bring him out to continue the torture :) Roll the dough out into a longer dough :) Then put the custard filling on top of it. If the custard is a bit jello-like, just give it a quick mix and it'll return to normal If you want a lot of custard, add more. If not, add less. But it is really good so go wild :) I did say go wild but don't overfill it or it'll leak out :) After that, close up the dough and make sure there's no holes left After that, just shape it gently with your hands and then cover it up for another 20-30min rest until the dough has risen more We don't need an oven to cook this, just a non-stick and thick pan works quite well Put the buns before the pan is heated. Don't put them too close to each other Remember to have the heat on super low. Cook it for about 10-15min with the lid on When you flip it, if it hasn't turn golden then continue to cook it. If your stove is too powerful remember to check it before the 10min mark Flip it then cook for 5 more minutes, just until it turns golden brown Now let's feasttt :) The custard immediately spills out right when you tear into the bun :)) The outside bread is super soft and smells so good and buttery. The yeast smell has completely disappeared The custard filling is so creamy and fatty there's a faint vanilla scent that ties everything together :) It's so good and so easy to make After that, I'm feeding these 2 gremlins so you can be happy :)) They get nothing but luxury in my house and y'all keep complaining :)) You guys are never satisfied, are you?
