Hello and welcome back to The Fish Locker
out on the shore, now I actually I'm just on my way down to an area what was going to
go on scavenging some shellfish. Tides just ebbing off now we can see behind me and just
as I was walking down I noticed this guy here look, see this this is what you're looking
for, see him splashing. That there's a King Scallop. Take the seaweed
off his back. Just heard another one, there look.
See it. Its only a little tiny one that so I'll leave
that one where it is, but I just heard him splashing. See there like that. I can hear
another one over there actually, so I'm gonna see if we can pick up few of these. A few
cockles a few clams, some other bits and bobs. We'll see what we can find and see if we can
cook them up. But that was a good start. Here is another one look, you can just to
say see it, they hide in a little hollow... Too small too small to take, but that's what
you're looking for. They have like you see they're look they have like a little hollow
what they're sit in. Big side down and just filter feed like that. We'll cover him up
and leave him where he is, but you're looking for like a little hollow like this. And they're
sometimes sat in them. There's something else look, there's a nice
cockle. I'll take that. All I'm doing is I'm just
scanning around, you can see little shells and everything about the place. There actually, is a top shell. There's another
one look, there's another one there. If you wanted to eat them your could. But they're
not my favourite. They have like a little shield, if you can see that look. It's pulled
like a little hard shield in like a door behind it. That little door is actually called an
Opercullum. That hole there, that will have something in that will either be a clam or
it'll be a razor clam. When we get further up to the bed, let me
get further up to the bed that I'm looking for I'll show you some of these and we'll
see if we can get some of them out. Here is another one I will just walking along
and I heard it clapping and you can just see hiding there, there look.. *Clam splashing* Oh there's another one actually, just heard
it clap then... There look. Just heard it just as I was talking to you
then. Just heard it kinda... *clam splashing*
like that ... Theres 2 beauties!! I was just gonna.. haha. I was just gonna
point out I've actually found one down here by my bucket. There look. A little tiny one. Look how small
that one is. But they're lovely aren't they... Tuck that one back under there and hide it.
Hide that one there and make sure nobody sees it. All I'm doing look is I'm just scanning around
in some of these you'll find.... in some of the hollows there's nothing. There's look, theres some slipper limpets
there's a little tiny clam I'm just walking around looking. There look
there is a tube worm. This is good to see as well, you see this
track here. There's another one there. If you follow it, there will be a live creature
at the end. There's a Winkle and there's another one. There's some Mussles. Some more slipper limpets, another little
tiny clam. Let's keep going and we'll get out onto the
bed that I wanted to get to. Here is... there is look, a little Queenie
Scallop. Can see it? You can see it when you compare it next to
a king Scallop look. Look at the difference. Little tiny one there, to that one there. Here also, is an Oyster. That's too small, and more importantly. I
don't like oysters. So I'll leave that one there. There is the shell, a broken shell of a king
cockle... and theres the other piece. There look. Get a couple of three of those and its a good
feed. Getting onto a better bed now you can see
there's more... more holes for clams and shells. Aww Look. There is a beauty!! That is a is
a cracking scallop that one look See what I mean about how they clap and splash.
That's what you're looking for. Fantastic!! There's the old shell of a little spider crab.
Plenty of slipper limpet shell there look all sat on each other's backs that's what
the like that's the shell. And all of these ones are just live ones just sat on each other's
backs. There's another queen scallop, see there look. Little tiny Queenie. *Clamps clapping in bucket* You can hear them clapping in there can't
you.. When you're walking along an area like here. Look out in front of you because you will
see like little squirts of water just squirt up. And they'll be coming from little holes like
this. When you see a little squirt of water that's an indication that there's a clam in
there. Could be a razor clam could be a Gaper clam. Theres another one look, see the hole. There's is a whelk... and that's that Operculum
that I was saying about. Now you could take that and eat it, again
I don't like them. Just like salty rubber to me. But yeah, that's something else you could
have taken to scavenge. There can you see, it's another tube worm.
When I touch it it'll shoot back inside. There you go see. Each of these has got a Tube worm living
inside of it. Right we've go out onto the beds now and I'm
going to start salting I'll find some little holes for you I'll show you what I'm looking
for we'll put some salt down them see like like so these and these what you're looking
for is a little tiny slit.. Oh what's that? Oh its actually a little hermit crab.... What
you're looking for is like a little slit in the sand like that like a little keyhole that's
a razor clam. Here you see there's another oyster. There
look, I don't know if you saw there as well, that little tiny squirt that come out of there?
That's a little razor clam hole, there's another oyster just hiding it's a little hollow like
that. Also, there's a little clam.
There's a cockle, you see just there. Now then. Yalright? *Father says hello to
child in Northern* Aye father *Son replies* Me and that kid have
been making mischief over yonder. *Father* You gonna give me a hand....? *Kid walks off* Nay chance old man!!! You seen what I've got me bucket? Oh yeah... We found a couple of little holes like these
and you just pour a bit of salt on them. See there the hole formed again, there's another
one there, and there. See how it's purging the salt out. Now what
should happen here is the clam should come out there now Doesn't happen straight away but you can see
how it's blowing it all out can't ya.... Here it comes. There it is. And when it's out like that, just take hold
of it and give it a little wiggle... there it is. Razor Clam. If you salt a couple of three holes like
that, and you see you like how Hannah is doing over here.... and then if you walk off and come back.. See he's trying to bury himself back in the
sand the cheeky fella. We'll put him in the bucket. That's that's a decent size. No smaller than
that would I take. *Child sneezes *.. Oh bless you You see how..... its trying to spit the salt
out of the hole. If it's a round hole like that, usually it's
a clam. Where if it's a slit like a little keyhole shape like that it's usually a Razor
Clam. Well there's ever so many clams here there's big Gaper Clams. If we find one of those we
might try and dig it out with James' little trowel... I don't think this is a razor clam just because
he's taken that long to come out. Shall we go up there and try to find some more? In this area here we've got a couple of clams
you see there, and there and there. Some tube worms and a cockles look. See that. Can I borrow that salt please? Thank you.
Okay all you do.... you just give them a good salt in the hole... And if it's a razor clam it's usually a pretty
quick reaction. There look that might be one there. There look you see this what's come out of
there, that there looks like a thumb sticking out. That is the tongue of a Gaper Clam. Now
that there could be that long so we'll have to dig that out. I might get Jim's a little shovel and we'll
dig that out to show you those are usually about a foot down. **Child - It'll cost you a Kinder egg to use
my shovel** Yep are you gonna get it? You want to try
and dig him out? Or am I going to do it? You're going to do it. Okay. Right just dig around the edges then.....
*Clam squirts water at the child* *Child reacts - That cheeky creature has just
spat at me father!! Shall I fight him?* *Father - No son, save your strength for the
battles ahead* There look do you see more of it now? Try and get hold of it and they're just straight
down, you'll never pull them out like that..... That there right.. I can feel as deep as
my finger and it's still going. So it's already well that far underneath the sand we aren't
going to be able to dig that out. If you had a fork or if you had a spade you'd get them
but they're a big Clam that's about that big called a Gaper Clam. *Child - Do not fear father, I shall get it
out with my trusty trowel* Thats another Gaper clam in there. Theres another Whelk. And a little Queenie scallop. Tides just starting
to turn and we're not going to get out of these locks properly. What I'm looking for. Thanks. There's a slipper
limpet there and Winkle. That's what we're after... I'll take that
any day!!! That'll do. When you're picking up crabs like this, you're
better off picking them up. If you hold their back legs like that. I mean this one, this one's a male, this one
won't do much.. you give him a knock in his eyes like that it closes right up. You wanna stick this in't bucket James? There's a collection of slipper limpets,
see them all look - one two three four all sat on each others backs. Look inside of there.... there is a dogfish
egg Thats a dead one... That'll be a Ragworm or a Lugworm living in
there. There you see here, where this sand has been
turned out of there, you can see because it's darker. There will be.... perfect. Thats what I was gonna say, there'll be crab
or a fish living under there and there's the fish. Probably be a Rockling. Yeah, a little Shore Rockling. If I can get
it to show you. Leave it tucked in underneath there, go on
get yourself back under there you. Like I said that you could see where it turned
that sand out, that's what you're looking for. You see usually scooped out underneath by
the side of a rock. Some sea sponges couldn't even couldn't even
try and tell you what they are, if you know what they are let me know. Paul you'll probably
know what they are there's another cockle shell..... Turning out to be a lovely day
now it's absolutely horrible earlier on. Just walking over this patch here I found a couple
more oysters next to this empty Scallop Shell. That's literally all I'm doing is I'm just
walking along just looking by my feet where I'm going. there's another couple of Queenie scallops
look there's one there's another one just holding onto this little piece of scrap iron We'll make tracks now cause it's starting
to rain. Now that I'm approaching up to the shoreline
you can see that not only is it starting to change but it's not sand anymore it's down to pebbles but the things that live in here a different
as well. You're getting more clusters of Winkles look, see them clinging onto the rocks...
and getting more Mussels As you work your way up... you can see there's
more and more. Now the reason there's more of these up in the rocks is they have like
little tiny stalks little tiny strings like little cobwebs almost.. which they hang onto the rocks with. So if
there's no rocks for them to hang on so you won't find them there. There's some big limpets
as well. So we might collect half a dozen of these
decent-sized mussels, and if you can find any big winkles. These are all pretty small, but you can see where they all are. Loads
of them isn't there. Find a few of these mussels, theres a couple
of nice ones. Stick these in the bucket as well. Its not bad. He's a beaut!! Don't know what
he was doing up here? Right you can see we've got our bucket of
bits, we've got fantastic Scallops. I'll talk about them in a minute... First thing we're gonna do is going to deal
with his Crab, now you can see here he's blowing bubbles All they are... You can see this is a male
Crab, fantastic find I was just... as I said I managed to wade out a little bit towards where some of the rocks were and it
was just tucked in underneath there. You can tell it's a male because it's got
a long strip under here, it's only got a fine V where your females got quite a wide pad. I'm gonna kill this and I'm gonna break it
up into pieces, so if you're a little bit squeamish about that.. maybe don't watch now but all you need to do is... the head part
there this part here you could either get a screwdriver and stab it in there and wind
it around or you just take the corner of a rock like
this and I'm gonna hit it against that, that way and then all I'm going to do is I'm going
to break off all the legs and the claws at the same time so you handle it you take the
back off. So you want to hold on to it like this and
just hit it hard like that. and then you take both sides off if you can
kind of... try to show you this for the camera You just take the back off.... like that,
now both of these, these are the gills. These are called like the dead mans fingers. Take out take out the face part because there's
no meat in that. And all I'm gonna do is I'm gonna break these
in half, straight down the middle and then you're
gonna take it and wash it out This goop here is gonna get washed out but
everything else in there has got meat in it the legs have got meat in it the claws have
got meat in it I'm just going to wash this part out now. All we've got her is I've got our little camping
stove. I've got some clean saltwater in there,
I'm just bringing it up to the boil. You can see here with the crab, I've broken it off
and I've cleaned it up so there's none of the dead mans fingers and
there's none of the goop inside. and all we do to cook it.
It hasn't got a set time, all you need to do is you need
to get your water to a full rolling boil. like now. You put your shellfish in...
doesn't matter if it's a crab or it's a lobster and when the water is fully boiling again
give it two more minutes after that. So I'm expecting this is going to take probably
less than five minutes so you can see here look it's a proper rolling boil now All we're gonna do...
just put those in there like that. You see look how straight away it's stopped
the boil because it's cooled it down. When it gets up to a full rolling boil again
you see it's already changing color already going bright red When it gets to a full rolling boil again,
two more minutes after that and it's ready to come out While that's cooking there I'm gonna talk
to you about these scallops. These scallops here these King scallops the
minimum landing size on these is 100 mm. 10 centimeters same as a razor clam You see these are well over 10 centimetres.
These if you if you come down and you find any of your buy any, you can keep these alive in your fridge for
quite a while all you need to do is you need to store them
this way up. You see it's got like a round side.. it's got a flat side, you need to store it..
the main of the body of the shellfish is in the rounded side in that
bridge side so you need to store them that way all I'm gonna use to shuck it is I'm just
going to use a butter knife and all you want to do is you want to go
into the side of it whenever you're getting shellfish, doesn't
matter if you're buying it or you're collecting it. It needs to be properly alive,
these when they're properly alive are tight shut. They might open for a little bit, but they
are tight shut. All you need to do is put your knife in the
side give it a bit of a twist a bit of a crack just to try and open it up a little bit and
then what I'm going to do is I'm going to take my knife and I'm gonna run it along the
inside of here and just scrape it off that side then this flat piece will come off. There look you see how I've popped it open
and then you.. I'll take a sharp knife to make it easier on myself. I'm running in and I'm scraping along the
flat side. There look like that... see where I've scraped
it off there This is the whole of the scallop in there.
There's the main muscle there is the coral and there is the frill.
The easiest thing to get them out of the shell like that is a spoon and all you do
is just scrape underneath... And that's it... now I'm gonna take the skirt
off I also don't like eating the coral. See look
how I've just pulled them frills off. And then this coral, I don't like that it
doesn't really taste of anything and it goes really rubbery straight
away and this black part here is the stomach so
all of that wants to come off and all even we left with is a lovely little medallion
of white meat You can see here it's come properly to the
full rolling boil again and giving it another minute so I'll ease it off. You can see perfectly
cooked.. now I'm going to take it out with this water.. Ideally what I would do at home
is I would have some iced water to put it into, to stop it all from cooking but I'm
just going to leave it out in the wind and hopefully it'll cool it down quick
enough. Right just just start the stove up again,
the mussels.. you saw when I was picking them up they were covered in little tiny barnacles
so just took the back of the knife just clean them off as best I could The Cockles and the
clams all we're gonna do is we're just gonna put them straight into the pan.. Now they're just gonna cook under their own
moisture which is kind of like steaming them if you wanted to add a bit of onion or a bit
of white wine or even a bit of cream or if you're gonna make em..... oh how do you say
*Unconvincing French accent*.... Moules Mariniere.... I can never say properly, but if you wanted
to make one of them.. add some tomato sauce to it as well. You will know when they're cooked because
they will be opened up, if any of them don't open up, you don't want to be eating those
ones. These are getting to the point where they're
going to be cooked in a second you see look how the starting to open up...
squeeze a bit of lemon juice in there.. They'll be done in the
next 30 to 40 seconds. All we'll do is just lift them straight out You can see here look how off I've shucked
all the scallops off. I kept that coral just because it was so
vibrant I thought I'd give that a try.. and all we're gonna do is do them in a frying
pan, but there you go, no fresher than that and all that is just
meat These are done now...
Just take them off the heat.. That one's not opened we'll get rid of that
one. There's one of the cockles there Now these scallops will only take seconds
so we'll get these straight on the frying pan now. So we're just gonna cook us the scallops so
just melting some butter in the frying pan I've got some onion... normally you'd add
like garlic and pepper and stuff but we don't have any of that... so the onions gonna take longer than the scallops
to cook because they literally you just want to like just flash them for a couple of seconds
each side.. so we'll just wait for the onions to fry... We'll just add in the scallops.. I wonder how long this goldfish takes to cook? and then you want a good squeeze of lemon there's about a trickle in there.... and 20 pips.... you'll normally have a good squeeze of lemon

quick... its just turned to a little piece of rubber hasn't it. and they're pretty much done... A normal dish would have like bacon, garlic,
white wine but we don't carry that in our picnics 😔 Right that's the scallops done... Ha ha ha... I'll have that one.. I don't know about you, but I'm keen to get
amongst... keen to get amongst them.. that's a cockle the only problem with that... tasted lovely
but it was just a little tiny bit gritty for me All you do, you just open them up. There you can see the sand in there, Really tasty just a little bit gritty. Now
the Razor Clam, wasn't too sure about that. Try this.. take that part off. Now its first time we've cooked these.. I
feel like that was a little bit overdone. Yeah, I feel like that razor clam was just
a little bit overdone but these scallops.... Awwwww...... Them scallops are delicious!! Awwww.. that
lemon juice as well.. Oh geez its lovely. The crab.. I'll show you
how I'm going to do the crab. Right with these crabs.. I'll show you real
quickly I'm gonna do this... each section of this crab claw. Is gonna have meat in it. So I'm just going
to take a little rock. You break the pieces off.... that is all meat all
that there is meat and it's delicious One of the things, one of the tricks I learned
when I was younger. Was if you actually if you take the end of a crab leg, look you have
a pick to pick the rest of the crab up with. Same as with lobsters, you see that there
how I broke it, I broke it all the way around. Sorry I did that quite quick.. I broke it straight across so it cracked
all the way around and then you can just take it off like that. When you break it
away, in this part here the movable part of the claw there is going to be a disc of cartilage
inside the meat so when you break you the part off there's a jelly claw from the other
side but inside this piece there will be like a disc of cartilage. There look, see that.
If you're going to bite straight into that you would end up biting into that. Another
good chunk of crab meat.. Absolutely delicious.. Again break across the middle. Sorry I'm talking
with my mouth full. Break across the middle take it apart.. there
look. Absolutely delicious. With the legs you can
take a leg off and you just use like a little bit from the end to kind of
pick it all out There look.. you can pick the meat out with
the end of the claw It is really delicious. I wish I could I wish
you could try it... doesn't get any fresher.. Just use my little picker look... *Hannah* You might wanna do your sign off now

a little scavenge along the sea shore. Just down on the low tide mark
and we had 4 or 5 different types of shellfish. Scallops,
a fantastic edible crab, I wasn't expecting to find one that big.. maybe
a little one or a little spider crab Aye that was perfect. There's some fantastic
meat in them, just cooked up really simply on a little camping stove.
It doesn't get any better than that the only problem with today was the poor weather and
the noise. Typically now that we're finishing the guys stopped working with our pressure
