ooh time to make gumbo ladies and gentlemen all right one cup of oil 1 cup of flour nice little ratio now make sure you stare that regularly keep stirring it's gonna be a little bubbly in the beginning but don't worry about that just keep stirring as you can see all the bubbles subsided got a good tan color going now we keep stirring till we get a good chocolate color going we're coming along now got a nice look caramel color still looking for that chocolate now look it's gonna be a point where this thing starts to smell like it's burning but don't let it fool you keep going for that chocolate color yeah looking like a Willy Wonka chocolate factory time to add that Holy Trinity onion celery and bell pepper oh yeah oh yeah first all right ladies and gentlemen we're going to let this cook for a little bit then we're going to add our smoked sausage and let that simmer for a bit as well all right let's throw that smoked sausage in there bar whoo lost a few pets with casualties it's okay now usually I like to sear my sausage in a separate pan and then deglaze it and throw the juices in here but kind of just throwing it all together all right now that has cooked down for a little bit we are going to go ahead and add 2 32 ounce containers of chicken stock now look at this point your rooms gonna look all broken up and that's alright because we're going to cook it down for quite a while it's going to be just fine seasoning 1 tablespoon tawny acessories 1 teaspoon salt 1 teaspoon garlic powder 3 bay leaves pack hoo-boy I guess the tailor smells up in here is delicious all right we've been letting that sausage and vegetables simmer for a bit so now we're going to add some chicken now some people like to prepare to chicken themselves me personally get it from rouses nice good local fresh rotisserie chicken oh look at that right there alright now we're going to add a little bit of water now you get this thing nice and juicy all right we're going to go ahead and add roughly four cups of water alright now we're going to get this thing to boiled I'm going to let it simmer at this point if you want a spicy gumbo add you a little bit of cayenne my god alright we got a little bit of a boil going so we're gonna go ahead and cover that and turn the heat on low that is simple now just a little word of advice some people simmer for about an hour but if you want a really good gumbo some of that bad boy 4 - I love during your simmering process go ahead and stir that maybe every 15 minutes or so just keep things honest alright I know some of y'all struggle cooking right so I'm gonna hook y'all up 1 cup of rice 2 cups of water repeat repeat if you feed in the crowd but if you got four people 1 cup of rice leather-covered so just add a little bit of salt and then bring it to the bar alright once you got that boiling you're going to cover it up put it on low heat and then set the timer alright your rice is done so what you do from here you put it off to the side you let it sit at least five minutes before you open that top alright five minutes is up look at that perfect rice every time every time alright our Gumbo's done boss so we got one last little secret we add a cold bottle of water and turn the fire off and that my friends is cajun chicken and sausage gumbo 101 get some juice now
