hey welcome back to how to barbecue right i'm malcolm reed today i'm going to show you how i do a chargrilled chop sandwich now i've got a piece of pork loin that i'm going to cut into some thick chops and then pound them out thinned where i can really get some grilled surface area on them season them up get them over some hot coal caramelize a sauce on at the end of them so all those bits get good and sweet and crunchy then i'm going to make an awesome summer sandwich with it let's get to cooking so i started with a center cut piece of pork loin now it weighed about three and a half four pounds i cut them into big thick chops they're about two and a half three inches wide but i'm butterfly those and then i take a jacquard and tenderize them a little bit we want to start flattening them out but to really get them nice and thin i took a ziploc bag split it and put each chop in there and then used a meat mallet to pound them out flat as they can be you can see these chops are pretty thin now i kind of pounded them out to about a quarter inch but they're gonna grill up fast and they're gonna be really tender it's not gonna take a lot of time for them to cook over the hot coals now we're going to season them up first i've got to get some flavor going on them so i'm going to start with some of my barbecue rub and you could use whatever you like you've got a favorite barbecue rub by all means go for it i'm going to sweat that in a little bit pat it in get both sides seasoned and for a little bit of extra texture i'm going to add some of my coarse steak rub it's really great on chops too you don't have to go real heavy with it we just want some texture some of those herbs some of that coarser salt and pepper it's going to make a nice little crust on these chops we'll flip them over do the exact same thing just another little light coat so i'm going to let the chop sit here and sweat just for a few minutes while i fire up the grill today i'm using my weber kettle you could use any kind of grill for this cook you just want some hot coals got some royal oak charcoal going in a chimney couple tumbleweeds to get that fire going after about 20 minutes those coals are good and hot then we're going to pour them in the kettle i'm keeping them all to one side to create that two zone fire that way i've got a safe space to move the chops around if i need to get them away from the hot coals i'm gonna put my cooking grid right over the hot coals get the lid on just let the grill come up to temp it's not gonna take but about five minutes we'll be ready to cook all right the weber's good and hot so it's time to grill these chops we're just gonna put them on the hot side i want that sizzle i want that char but i have a cool zone if i need it one more to put over here on the hot side i'm gonna put the lid on i'm not gonna walk too far away because they're going to grill fast so about two minutes we'll come back and check on them just about like cooking a steak all right it's been a couple minutes i just want to kind of peek at these oh yeah we're getting some char that's what i want to see it's not going to take these long they are looking good but i do want to go ahead and start getting some sauce on them and i've just got some of my the barbecue sauce and squeeze bottle you could use whatever kind of sauce you want i'm not going super heavy i'm going to start caramelizing these chops no need for a brush i'm just using the back of the toms here just kind of spread it out a little bit i know it's going to be sticky and good put the lid back on just a couple of minutes we'll flip them back over keep repeating that till they get done and we're going to get them flipped over sauce the backside and since i jaccarted them they're going to be super tender they're going to be packed full of moisture we're cooking them hot and fast now we're just wanting to get them charred up really easy grilling chops this way a little more sauce on the backside and spread that around as well man these smell amazing over this fire they don't need about a minute on each side once you get them flipped with the sauce you don't want to burn them so we're just kind of checking on them see how they're doing we've been on about six minutes total now go ahead and flip them over and see where we've started char grilling that sauce in we'll add a little bit more keep those layers of flavor going right here that's what char grill is all about letting it cook in without burning it kind of old-school pork chops i love it seven minutes in we are almost there there's some good char action i'm gonna move this one over and see if i can slide him up in here look at that there we go get them all over the hottest part about another minute we'll char that side we just sauced these chops are going to be done almost time to make a sandwich i'm going to flip them right back over and these chops eight minutes in i'm about ready to call them we'll get a platter to take them up in got some char on them the sauce is caramelized down that's what you want to see for a pork chop sandwich now they're going to rest for a little bit because i got to saute some onions to make these sandwiches chargrilled chops is where it's at though super fast super easy it's going to have a ton of flavor just grill knocked off real quick so i got to put my iron skillet on here caramelize some onions now i've got my iron skillet right over the hot coals i'm going to saute some onions first i'm going to start with a couple tablespoons of butter just get it in the iron skillet get it melting and i've just got one vidalia onion thinly sliced i'm gonna let those get happy in that butter and i'm gonna season them just with a little bit of steak rub keep those flavors going when that hits those coals that smells awesome and the onions don't take long they're grilling up nicely you just want to soften them we're not trying to caramelize them just trying to cook some of the rawness off that's how i want to eat them they're about there they look good i'm just going to ease these onions over we're going to throw our buns on the grill just for a minute to get them toasted it's not going to take them long buns only take a few minutes i'm just using my hands to get them off all right the chops are grilled they have rested you can see a little bit of moisture come out i want them to stop like that because if you serve them up right when you take them off the grill you're going to lose that it's going to make them dry this way they're going to stay moist got the onions sauteed over the grill got our buns toasted it's time to make a sandwich so what i'm going to do bottom bun i'm going with some pickles you could use whatever you like on a sandwich but this is my way for a char grilled chopped sandwich now i'm ready for one of these chops right on top the pickles let it hang off the bun we're gonna do another little drizzle of our barbecue sauce gotta have it saucy right a little bit of the grilled onion right on top and for a little crunchy element i'm adding these crispy jalapenos i just picked them up at the grocery store it's going to give us a crunch a little heat nice little surprise there that's what i call a char grilled chop sandwich i'm going to make one more then i got to try it that looks awesome so one more bun let's go with some pickles on bottom i know what shell's thinking so mayo would be good on this right we got the big chop char grill glazed little extra sauce over the top let it run onto the board the grilled onions and butter steak seasoning on them crispy jalapenos that looks perfect doesn't need anything else but to eat it is that time of day my friends we've got to try this chargrill chop sandwich that's awesome y'all check that out perfect bite cooked all the way through it's tender take one more bite hang with me one second i gotta do a little housekeeping on that one you're gonna need a wet nap that is like the best mac rib that you'll ever eat in your life the chop itself is tender it's juicy char grilled up you really taste all those seasonings the flavor of the charcoal in it that good grillness the sauce caramelized down the sauteed onions man they pop with it crispy jalapeno's got a little bit of heat going but i like the pickles on the bottom too that's the ticket y'all got to try this one cause it's super simple it's a great summertime recipe and it cooks so fast it only took about eight minutes total time those chops on the grill hey it's hot out
