[Music] all right everybody my name is Tommy this is the gallery factor barbecuing let's take her in there you know my name is Tommy and this is the gallery backyard BBQ on today's show I have a little bit of a challenge this goes out to a Kevin a comparison to cooking I'll leave a a link up above and a link down below alrighty basically what we got going on today as I am going to take a ribeye steak and I'm going to cook it the best way that I know how which is basically on a hot cast-iron skillet and I got some rosemary and some time to go along with that I'm gonna butter baste it with some garlic and this is about the best way that I know how to cook I got a rib eye steak be a challenge for Kevin is to cook it the same way and also to pick another ribeye and to cook it his way okay he's got the family that will do the test to see which way is better of course and now listen this isn't of me against him this isn't my recipe against his recipe this is nothing like that this is basically just a UH now this is basically just for him to compare because listen that's what he does right listen and that's it again this is not of me against him this is my way of cooking a ribeye and he'll pick away whether a sauce bit or whatever it's called I don't even know and or Webber or in the pellet grill and then he'll cook them both ways my way his way and and his family will future uploads right that's very important to the channel and I do a thank you very much right so listen I got a 1.32 bone-in ribeye right this is an Angus a ribeye from my wally world that i will bring up to a room-temperature and assaulted with some kosher salt of course and some fresh cracked black pepper you know right now listen this is about the best steak that I know how to cook I'll leave a link up India up in the corner there card in the corner to a last cook I did a mistake and uh this is top notch stuff right and my challenge to Kevin is to cook one this way right like I said and to cook one his way and his family cannot try to decide the ultimate a steak right that's what we're trying to get here right so listen I got my cast-iron skillet hot smoking then I'll add the oil hot pan cold oil of course and when you drop your steak down you want to drop away from your right away from you you're gonna cook this sucker for minutes right this is about it one and a half inch remaining like I said this is one point three two pounds with the up bone right so four minutes and then you're going to flip it you don't want to touch it you don't want to peak you just want to go four minutes and deadness [Music] and I'll leave the ingredients listed down below and like I said I'll leave a card above to my last cast on and revive which was about the best state that I've ever cooked in my life right and so we're at four minutes and we will give it a flip now you notice there I got I'm not to a dark right that's up probably because of the bone so what I'll do is I'll put a hammer there smash it on top to try to hold that meat for good contact no big deal alrighty so you'll flip and then you'll wait one minute after the flip and add your time rosemary garlic right and you'll let that cook for about another minute and there's my flipper now riding after about another minute of that cooking then you want to hit your water right so your total of cooking at time so far is approximately 6 minutes right we go 4 minutes 1 a sign flip wait a minute add your rosemary and thyme wait another minute and add your butter and basically what you want to do here is just let that water now I'm going with about a quarter stick of butter you can do a little bit more and what sauce you want for us and you just basically want to just let that the butter melt don't do anything you just let it know right and that really takes about 30 40 seconds events of what you're doing is you're building a nice fragrance of the garlic and butter with that rosemary thyme I mean this is a good stuff I guarantee [Music] and listen once that butter is melted you want to a start your basting a process right and total in now on this a steak is about seven to eight minutes in total right seven to eight minutes total and we will baste it to a medium of wherever that's based its way you'll perfect medium-rare about a hundred and twenty three or so on the tentative on there right and remember on one you take it off to it will go up another degree [Music] and you want to keep that claim for the white or the hot right you want to walk broken face broken faith and you're getting all those flavors that oh look that sugary the buttery the sugary saltiness of the borrower that time rosemon and garlic I mean this is good stuff now as you see we're 119 my little bend at the mom now I'm gonna let it go about another minute or two and then pull that sorrow I mean that is a flavour right there my friends [Music] and welcome once a right [Music] now basically from here what we're gonna do is we're gonna well we're gonna pull this off we are gonna get some of those juices right put that in a little law put down a little cup we're gonna put a little a stick of butter but Lola maybe a teaspoon of water on the steak and loosely cover it with a foil right loosely cover on the floor and an add a little eyes you right there what you want to do is drop a teaspoon of butter to crushed garlic cloves and a dash of kosher salt right all right look after about three four minutes you can unwrap this bad boy right now I have a little bone in mine so I'm gonna walk I'm gonna take that bone out right so I have a nice slice [Music] and as you can see we are juicy and we are pretty perfect at a nice medium-rare right now I do apologize by eating with my fingers but I hey you know is what it is right and that sauce comes into play and you dip that in that salty sweetness of that sauce with that rosemary thyme and man you are golden and this is good I mean this is you know these are just always one of the best steaks I've ever eaten I mean the flavor is just a waffle the charts off the charts [Music] [Music] and now what I got here is a little Alabama white a sauce from Mya cook a couple days ago I'll leave a card to that video and let me tell you something and this takes it off the charts even further I mean this sauce goes good with everything [Music] right and look as
