it's going on people today I'm going to show you how to cook Cajun boil crawfish like a pro I'm gonna walk you through these steps but first we got to clean them I'm going to show you how to clean and in all that flavor to the crawfish trust me why I want to add the wise danos low then I'm going to add in a frozen corn [Music] [Applause] [Applause] should I think I need a bigger part mm-hmm you think man look at since the corns all been precooked I'm just gonna let it soak in all that flavor all right now I'm gonna hand in ice but I just kind of draw in all that flavor and do the crawfish trust me you're gonna thank me for it it's so good [Music] all right not landing in the ice what is gonna do is gonna drop that temperature but when that happened that's it's gonna draw in all that flavor and do the crawfish that's gonna taste so damn good oh yeah I do put it on top that's it that's all you guys do nothing else just put it on top and let it melt about 15 pound bag of ice I got some leftover ice that's right just let it melt put it on top just let it melt now you're gonna set your timer for 20 minutes let it soak that's it after 20 minutes as you can see all that crawfish singing down to the bottom and that's where all that flavors in is inside a crawfish now there'll be some good eating okay the 20 minutes is up now it's time to scoop those baby out notice those crawfish have sunk to the bottom it's pretty much drawn in all that flavor from the broth which is mushroom right here oh yeah look at all that goodness that's why I show you guys look at that yes that shall appear mm-hmm in that piece of sausage let's actually look good a white man I got some boiled crawfish boil a shrimp sausage the coin right on Memorial Day yes sir about to go down you I got to chime in here being from Assumption parish, where the real pros live...

Someone asks you how you season your crawfish you tell them, ORANGE, you want your water orange.. it's a special kind of orange you feel in your soul. You got to use the liquid zatarans, you got to use the powdered zatarans crab boil, you need about 5 lemons, a bunch or garlic, a bunch or onions and you need your crawfish, not crayfish not crawdads, those won't do. You know then comes the fixins, I roll with potatoes, garlic, corn, onions and mushrooms. Rookies put things such as oranges, I have even seen pineapples(it ain't bad but it ain't my swing). Now if you are feeling frisky a califlower in a boiling sac is tasty. And if you got any son of a bitchin vegans there a broccoli the same way will feel them.

Now, do I need to tell ya how to purge a crawfish? I hope not but if I do this is it.... you put them number 10 tub that you get from yo ma-ma and dem. Then hit them with the water, cover them with water and shock em with some salt. Swish them around with your hand because you are a man and if you are a man they don't pinch you.

Then you can pour them in a basket and hose them down...

NOW IF YOU DON'T HAVE A BASKET...

you hold the sac over the ends of the tub to drain them like a strainer. Wash them off and redrain..

Get your water seasoned and boiling then put the potatoes in.

Put the crawfish in the pot (in the ORANGE water)

Get them boiling...

Boil until you feel special... ok seriously it's a feeling where you just know the crawfish are done....

Now you are at a crossroads where people differ.... I say cut the fire and let them soak for 10 to 15 mins.. some people cut the fire and then add ice to the pot or spray the pot to stop them cooking. That's wrong, if you want to shorten the cooking time kill the fire at 12 mins.

Now the point of this post is this, if you don't have a basket and you aren't too drunk you put your steel toes on, grab the sac the crawfish came in and dump the pot out through the sac.drain them that way and dump em on the newspaper..

I feel that this should be known by everyone up and down the bayou as well as those rice ponds up 90.
