I got to chime in here being from Assumption parish, where the real pros live...
Someone asks you how you season your crawfish you tell them, ORANGE, you want your water orange.. it's a special kind of orange you feel in your soul. You got to use the liquid zatarans, you got to use the powdered zatarans crab boil, you need about 5 lemons, a bunch or garlic, a bunch or onions and you need your crawfish, not crayfish not crawdads, those won't do. You know then comes the fixins, I roll with potatoes, garlic, corn, onions and mushrooms. Rookies put things such as oranges, I have even seen pineapples(it ain't bad but it ain't my swing). Now if you are feeling frisky a califlower in a boiling sac is tasty. And if you got any son of a bitchin vegans there a broccoli the same way will feel them.
Now, do I need to tell ya how to purge a crawfish? I hope not but if I do this is it.... you put them number 10 tub that you get from yo ma-ma and dem. Then hit them with the water, cover them with water and shock em with some salt. Swish them around with your hand because you are a man and if you are a man they don't pinch you.
Then you can pour them in a basket and hose them down...
NOW IF YOU DON'T HAVE A BASKET...
you hold the sac over the ends of the tub to drain them like a strainer. Wash them off and redrain..
Get your water seasoned and boiling then put the potatoes in.
Put the crawfish in the pot (in the ORANGE water)
Get them boiling...
Boil until you feel special... ok seriously it's a feeling where you just know the crawfish are done....
Now you are at a crossroads where people differ.... I say cut the fire and let them soak for 10 to 15 mins.. some people cut the fire and then add ice to the pot or spray the pot to stop them cooking. That's wrong, if you want to shorten the cooking time kill the fire at 12 mins.
Now the point of this post is this, if you don't have a basket and you aren't too drunk you put your steel toes on, grab the sac the crawfish came in and dump the pot out through the sac.drain them that way and dump em on the newspaper..
I feel that this should be known by everyone up and down the bayou as well as those rice ponds up 90.

Apparently he thinks the strainer basket is just for washing them. And, his pot is too small for a whole sack plus sides. He got most of the basics right, but definitely not professional.
