hi everybody i'm rachel from rachel cooks with love today i'm gonna pick something really delicious and that's my beef enchiladas these are my Ron's favorite he loves beef enchiladas and all this time that we've been here in Texas he's been asking me when are you gonna make the beef enchiladas so I said you know what I'm gonna do that today so let's get started before we get started I want to show you this apron this apron was a gift from a very faithful viewer who also happens to be my cousin Hilda and we had a family reunion and two of my cousin surprised me with an apron I usually make them myself every now and then when I see one that I like I'll buy it but I would say nine out of ten I make but this was a gift and I just thought it was so beautiful and I thought I would wear it today so I want to say thank you Nilda for my beautiful apron let's get started I've got one pound of ground beef so I'm going to go ahead and Brown this and to my girl geez I'm gonna add one teaspoon and a half approximately of my all-around seasoning I went ahead and put a link below so that you can get the recipe to it but you can put as much as you want now when I make my enchilada sauce I'm gonna add some more spices to it that are in here so I don't want to add too much to my name so I'm gonna go ahead and add one teaspoon and I have just like that my ground beef is ready and it smells wonderful I have drained it already and I'm gonna go ahead and set it aside and I've got this pan here warm because I'm gonna make my enchilada sauce now the first thing I'm gonna do in here is I'm gonna add two and a half tablespoons of melted butter and I'm going to add flour because I want to make my room I'd like to use I like to use butter instead of cooking oil when I make the room because it just has such a delicious taste so I'm just gonna whisk it slowly like this until it changes its color and it gets to a pretty kind of like a dark golden color like that and then it gets a real nutty taste as it starts to get a little darker when the flour starts you know coming in together with a butter my flour and my butter have turned into a beautiful dark golden room and this is exactly what I wanted right here so I'm going to add two tablespoons of chili powder and continue what my whiskey like this you can use any chili powder that you have now I make my own chili powder but you can use your own chili powder that you have and I'm also going to add one tablespoon of paprika and I'm gonna keep on stirring cuz I don't want to burn it just like that when you see it bubbling just a little bit you add some of your chicken broth now I've got three cups here I'm gonna add a little bit of my chicken broth in here and I'm going to continue whisking it because you don't want your chili powder in your paprika tool to burn you just want it to come to just a little bit of a bubble and that gives it a delicious taste when it's in your room so once I add a little bit of my chicken broth like this and continue whisking I continue with my ingredients now I've got one teaspoon of onion powder I've got two teaspoons of garlic powder I've got one teaspoon of cumin I love the cumin in my enchilada sauce but it's optional if you don't like cumin don't add it but I wouldn't make my enchilada sauce without it I'll add a little bit more of the chicken broth like this so that it'll all come together now I've got half a teaspoon of sugar don't let that half a teaspoon of sugar scare you I have one teaspoon of good Oregon on here and continue with your whisking just like this you don't want it to clump up I'm gonna go ahead and add it all in there just like that and that's three cups that I have of the chicken broth and I'm gonna continue whisking and I also have one teaspoon of chicken bullion I like the chicken bullion in there I think it gives it a really good taste if you don't like chicken bullion you can leave it out but I love it in there at this time I'm gonna go ahead and add a little bit of pepper I'm gonna put in like Oh less than half a teaspoon of pepper but you can add as much pepper as you want and I'm gonna add just a little bit of salt now the salt and the pepper are all up to you you can put in as much as you want just whatever it tastes good every now and then in is I'm stirring it I'll go in there and I'll taste it just to make sure that it's just right but I pretty much have gotten it to where it's just right but the salt and pepper are up to you now once I stir it like this with my whisk and it has all come together really really good I'm gonna go ahead and set it aside over here and I'm gonna go ahead and add three spoonfuls of my ground beef that I have over here I have one - and I'm gonna add a third of my ground beef in with my sauce can you see that oh that just looks and smells 104 and I'm gonna leave it there then let it continue to simmer my enchilada sauce tastes wonderful and it's steaming that's just the way I wanted I don't want it to boil just a nice steam like that so I'm gonna cover it back up and I got my oil nice and hot and I'm getting ready to do my tortillas I'm just gonna put one in and out I don't want it to get crispy you don't want to get up Chris because then you just can't roll them and this would also be the time for you to adjust the salt in your enchilada sauce if you want a little more salt or pepper you go ahead and add it I'm just gonna put them in real quick like that [Music] just like that my auntie Lada sauce is perfectly ready so it'll be here and I've got my thoughts yes ready so what I'm gonna do is I'm gonna put one in at a time just like that and I'm gonna do them all be careful because it is hot but I've been doing them for a long time so kind of know what to do just like that I'm gonna put a little bit of my ground beef the center like this you don't want to put a lot so that you know you're able to enroll them now my my Ron and I both like to put onions inside them but you don't have to leave them like that now I've got shredded fresh shredded mild cheddar you can use any kind of cheese that you like but I like mild cheddar so I'll put them in just like that I like to give them a little bit of space when I said I'm in the dish I don't like to put them in real close just like that and I like quite a bit of cheese in there and I roll them just like half way like that and then roll them in like this hold him put them in like that now I think I have like seven or eight tortillas in here but you know it just depends you know how stuffed I get them just depends how many I'm gonna make I do like them you know pretty chubby you know so that they really do taste good but it's up to you to make them the way you like them see just like that and I give them just a little bit of space now if I have to bring them in together a little bit more I will but I do like to give them a little bit of space like that get it in nice and snug like that they're gonna be nice and chubby [Music] now nobody said that it was a neat job here but that's just the way it's gotta be I got my nice and rolled up here actually just a little bit of space in between them like that cuz when you serve them they're a lot easier like that and it's just for me and my Roni so after I put them in there like that I will sprinkle some of the ground beef that's left over like this like that and I'm gonna go ahead and sprinkle some onions there too just like that now I'm gonna put in my sauce right here I like plenty of the sauce on them [Music] just like that now my mom never liked rolling up the enchiladas and and putting some across she never liked to do that and she taught me not to do that because she said when you scoop them out they're just so easy to scoop them out without having to have one the other way but if I was going to make a lot more I would just go ahead and use another dish but I won't do them across like that and I like a lot of sauce in there just like that now I'm going to go ahead and put my cheese on top my Ron loves them with a lot of cheese that's like that now I've got my oven set at 375 and I'm gonna go ahead and put them in here for about 25 to 30 minutes and I'm gonna check them at about 20 minutes I'll put it right in the center like that and I'll check them in about 20 minutes to make sure that the cheese is melting just right and then I'll be right back my enchiladas sorry it's been about 30 minutes they're very very hot I'm gonna go ahead and let them sit there for about three or four minutes and then I'll serve it it's been about four or five minutes they settle down so I'm gonna go ahead and serve them oh my goodness look at these and they're very very very hot see I like them nice and full and I like there to be plenty of the sauce but this is not the way we like to eat them I'm going to show you how we like to eat them I like to put some shredded lettuce on top like this I like to put some of the tomatoes on top like this like that I like to put some cilantro on top and I do like a dollop of sour cream just like that pretty let's see hmm oh my gosh oh my gosh they're delicious mmm and let me show you something else that we like to do I had some shuttle beans that I fixed earlier today because my Ron loves them so I'm gonna fix some of these serve myself somebody just like that look at that so we'll have shuttle beans with them so these are my into us make them just the way I did and you will absolutely love them mm-hmm you haven't just subscribed please subscribe give me the thumbs up if you like them send me a comment share with your friends let me know what you think so these are my beef enchiladas thank you
