welcome back to my channel i'm joe with smoking joe's pit barbecue can you believe i've never smoked baby back ribs on an offset smoker well today is the day stay tuned [Music] so all right let's get started on these baby back ribs essentially there's not much trimming you have to do on these and i got to tell you they're really expensive right now i paid like 14 or 15 dollars per rack which is super expensive compared to spare ribs but one thing i do like to do is to remove the membrane on the back of these baby back ribs so it's been about two years since i purchased or cooked some baby back ribs and i don't know why but i always lean more towards these spare ribs now i will tell you that it's much easier to remove the membrane on these baby backs in fact you can just stick your finger in there this membrane is a little bit thicker i think and it comes off much easier so i'm just running my thumb with one hand through the bottom of the membrane just like that then i just grab a paper towel grab the center of it and lift up look at that super easy compared to spare ribs all right let's take off this other membrane as well super easy got a little bit of fat that i'm going to trim on this end here but aside from that there's going to be very little trimming on these baby backs i know that when they cut these baby back ribs off sometimes there's little bits of bones on the edges so just take a paper towel and wipe that edge off both edges all right so i've got a brand new set of gloves on we're going to start this off with some mustard as a binder now this mustard is mixed 50 50 with some pickle juice just to thin it down a little bit flip the racks over and apply some binder on the top as well so the reason i added a little bit of pickle juice to the mustard is because the rub was kind of caking on a little bit and that mustard was a little too thick so i wanted to thin it down that way that rub lays nice and flat and doesn't get caked on if you will all right let's apply some rub the first rub i'm using is my homemade spg which is just salt pepper and garlic just a very light layer this is going to give us a savory flavor [Music] all right let's add another level of flavor i'm going to be using this rub from ps seasoning this is notorious pag this rub right here is absolutely amazing on pork and i cannot wait to taste these baby back ribs once they're done this has some red pepper flake as well it's not too hot just a little bit of kick so add enough rub to the back [Music] you can see that red pepper flake on there yum e all right pat that rub down [Music] now there's no meat on the back of these bones but i just like to add a little bit of rub get some of that flavor right in between those bones yes sir all right let's season the top of these baby backs i'm going to add a little bit more rub on the top side i gotta quit messing around with a small jar rub and order the gallon size from ps seasoning this stuff is wonderful all right and just to kick up the flavors a little bit more i'm gonna add some more crushed red pepper just a tad bit don't want it too hot but you do want a little bit of heat on the back end just like that i'm going to pat this rub down i'm going to let these sit on my counter for about 15 minutes let's head outside and fire up that yoder frontiersman all right let's light up this yoda frontiersman on today's cook i'm going to be using southern barbecue hickory wood from gourmet wood products check them out at academy sports and outdoors you can get flavors like hickory post oak mesquite and southern pecan as well so as you can see i stacked up some of that hickory wood i'm going to be starting this fire with my grill gun from grill blazer check them out in the link below and get yourself a nice discount this is a must if you have an offset smoker or any charcoal grill here we go all right that literally only took one minute and man it smells good out here i'm gonna let my smoker warm up to 250 degrees and i'll bring you guys right back so it's been about 30 minutes and my smoker's reached 250 degrees in the top gauge let's load up these ribs here all right so one of the questions i often get is how i keep my grates clean and as you can see the grates are pretty dirty for my last cook this was the msg versus the non-msg brisket so the grates are a little dirty and here's the brush that i use okay it's just a big wire brush so it's got a spatula on one side so the first thing i do is run the spatula that's going to remove the heavy deposits you can see it knocking down those bigger pieces there and if you do this every time the grates will stay nice and clean all right so i've already knocked down the bigger pieces now i use the brush and voila you got some nice clean grates it's really that simple so i'm gonna slide the rack out just a little bit check out that rub sweat it in nicely on these ribs [Music] i'm putting the thicker part towards that firebox here's rack number two i like to bunch the ribs together that way the rack gets nice and thick and it cooks a little bit more evenly all right i want to slide the rack in we're going to let these smoke at 250 degrees for two hours and i'll bring you guys right back okay it's been two hours since we first put on our baby back ribs let's take a look at them they are looking good i have been spritzing with plain water started at the one hour mark i'm just going to give these a quick spritz again just plain water and they've got a really nice color already so to me baby back ribs don't have as much fat on them so these can dry up on you if you're not careful that's why these are very popular to sauce so what i'm going to do is i'm just going to flip them upside down bone side up just like that give it a spritz man they are looking like they are just about ready to be wrapped i'm going to give them 30 minutes with the bone side up check out that color beautiful so we'll see you guys in about 30 minutes we'll come back and wrap them up stay tuned all right so i just pulled the ribs off and the total cook time is two and a half hours and check out that awesome color so i'm gonna wrap them up in foil so i'm gonna put some honey down and the meat is going to go down bone side up a little bit of honey it's perfect a little bit of butter this is unsalted butter and a little bit more rub just like that all right i'm going to grab one of the racks meat side down all right right over that butter just like that that butter is going to melt on top of these ribs and by the way just in case you're wondering the internal temperature was 162 degrees okay i am going to be double wrapping these ribs with foil i'm going to wrap up the other rack of ribs toss these back inside by smokers running at 250 degrees for one hour and i'll bring you guys right back all right so i just pulled the ribs out of the smoker and the total cook time is three and a half hours let's take it out of the foil and see what they look like they smell amazing number one [Music] oh my are they tender oh yeah they're really tender check that out all right internal temperature is 198 and 191 on this rack so that still has a little bit more to go i'm gonna go ahead and sauce these i'm gonna turn them upside down man i'm gonna be using this peach buzz barbecue sauce from ps seasoning this is a bourbon barbecue sauce so just apply a light coating to the back [Music] brush that sauce on all right let's flip these and sauce that meat side a little bit of sauce not a bunch there we go and brush that sauce on oh man i can't wait to dig into these bad boys i don't like a whole lot of sauce if you're a sauce fan definitely apply more or put some on the side but i just like a light coating just like that i'm going to finish saucing this rack up i'm going to toss them back inside my smoker for about 20 minutes or so let that temperature get up to 200 degrees internal i'm going to pull them let them rest for about 15 minutes and we'll give them a try stay tuned all right the ribs are ready and the total cook time was right at four hours we got some beautiful looking ribs they have been resting for about 15 minutes but trust me they are still pretty hot check out that color nice reddish color got some nice bark on there as well so i'm gonna flip these upside down to slice them and let's see what we've got here and these bad boys are slicing really nice and tender the nice thing about baby backs is that the bones don't turn as much as spares so the bones are kind of straight all right let's check it out look at that smoke ring beautiful man that smoke ring almost went all the way through good looking rib let's give them a try all right let's see how we did on these baby backs check that out got that good loin meat on there got some crushed red pepper on the top this is going to be good here we go this is so good so i was looking back at my library of videos on youtube and
