asian city there's a not so common meat culture lurking beneath the surface it's not beef or pork i didn't even know this was a possibility it's definitely not chicken i got a tail on mine oh what the [ __ ] you'll find it in china italy the usa and here in vietnam are there any special health benefits uh manpower anything that you might not get from these other boring animals i'm talking about this so he said it's very good for pregnant women perfect that's perfect for me this is one of the leanest healthiest most environmentally friendly protein sources on the planet it's six times more efficient to produce than beef so why isn't this stuff everywhere [Music] today we're digging deep into this mystery meat seeing where it comes from these guys our newborn [Applause] where it ends up and the chefs who have taken this food to its limits what is the best selling isn't it you want to try later so get ready to meet your meat oh my god because wherever you are that is wild this could be the next big thing hitting your dinner plate so listen this place has 15 dishes we've got three coming to us today i have no idea what they are my producer has picked the highlights and they're on their way ah right now oh yes it's coming this type of meat is not usually part of everyday family meals here in vietnam oh look at the decorations yeah i don't care if the cucumber is in the shape of a heart i'm not gonna eat it it's mostly served in drinking food restaurants restaurants that serve a huge variety of bold flavored munchables that pair well with local beers [Music] to rabbit meat my first rabbit ever i think same you heard that right rabbit meat here it's prepared in thin slices and stir-fried in hot oil with garlic sugar oyster sauce sesame seed oil pepper onion and five spice powder stir stir stir add soy sauce scallions and finally garnish with cilantro and ground pepper the meat itself i thought it would look like guinea power have you ever seen guinea powell hey hey hey keep it down keep it done it's a very deep red meat i thought it would look like that or like elk but it's like very chickeny color this is like chicken breast huh right on our dinner table it's hard to say no to this inviting lean white meat it's even harder when surrounded by the neighborhood's other rabbit meat lovers i can't help but wonder why don't more people eat this before i sink my teeth in i want to take a look at how this plate got here in the first place well let's talk about it first hold on chill out not so far from the city center about a one hour drive north brings us here the biggest rabbit farm in saigon home to over 5 000 rabbits these are all a breed that comes from new zealand most are albino meaning white hair and pink eyes but they can be black gray or a mix really it's what's on the inside that counts here here they have every stage of rabbit from newborn to full-grown like big pumpkin rabbit bigger than you've ever seen in your life these guys are newborn and they're hanging out in this dark little box let's take a look let's say hello oh my god oh that's the wrong one so these are super fresh oh my god they almost don't have hair oh their eyes are cool their eyes are still closed oh my god and they can hardly even stand up they're so tiny and then here a little bit older maybe a couple weeks i don't know if they bite or not to be honest if they bite it's because they think your finger is a rabbit nipple that's it same side it's probably a little big can i have one okay i'll try picking one up i hope i don't get bit oh oh hi get your own hey buddy look at you there you go oh my god oh my god animal abuse okay so when i pat him like this he seems very satisfied and then his eyes are like closed and like he in the spot oh you're right yeah look it closes his ties right you can go back in hey no pee no poo fortunately there's no baby rabbit eating going on here but do you think animals that are cute should be off limits should they not be eaten actually no because we do need to eat you know imagine if we live on a planet for rabbits then they started wash away humans i'm not fine with that i think they're vegetarians actually in the u.s rabbit hunting is a thing some people eat rabbit some restaurants have it but not most the only issue they just seem happy because they don't have eyebrows if we just drew angry eyebrows on every rabbit it'd be a lot easier to handle puniculture is the agricultural practice of breeding and raising rabbits as livestock for their fur and meat it's been practiced all over the world since at least the fifth century here this seven-year-old farm is providing 600 to 1 000 rabbits for the market each month behind all the operations here this lovely lady the owner miss hugh so this is your business and you live here too right how did you do yeah she said you have to keep to guard them oh right you must have had some other career or work that you did before that what drew you to this kind of work diamond so she said they reproduce very quickly and also economy-wise that is so much better than other animals really yeah so why aren't more people doing what you did why aren't there more rabbit farms rabbits reproduce quickly but that doesn't mean your success as a breeder is guaranteed wow you know i didn't even realize rabbits got so huge this one is for reproducing they will have intercourse for the day hey first of all this is a family show we don't say that word we say they hm yeah so twice a day twice a day that doesn't even sound healthy besides ensuring food and water is always available and keeping their environment clean and well ventilated baby rabbits require a lot more attention and care the baby rabbits when they first have their mom's milk then they will have diarrhea oh yeah so you need to do it well you have to be around a lot yeah yeah and miss hugh is taking care of 2 000 newborn rabbits each month is it okay to eat animals that are cute oh my god that is a revelation right there yeah [Music] after only three months their weight can shoot up six pounds which means they're ready for retail we've left the giant farm and then now we're kind of at the middle man everything here you can eat frogs eels these are some kind of carp from here restaurant vendors they might grab a few rabbits take it to the restaurant cook it up and then people like us come in we throw back a couple beers and eat some rabbit yeah let's check it out they are so cute did you just say they're so cute uh-huh you gotta forget about that now all right i'm gonna get a couple pieces here should i try it out i like to get the full flavor in the first bite cheers wow i like it very tasty the texture you can really tell that there's not a lot of fan but somehow it's still tender and soft and kind of steamy still good i think like a mix of chicken and pork yeah like a pork chop yeah that's kind of fascinating we're at hwang mat restaurant with 16 years in the bunny business mr hwang and his wife provide patrons with 15 menu options it seems that the only restaurants selling rabbit are restaurants that also have a lot of beer i see you've got stacks and stacks of beer here is it true that in order to eat an animal this cute you have to be kind of drunk to deal with the pain no no he said rabbits to him it's like wild meat right like wild game so all of the wild meat it would be good for drinking what is something that we must try today we want to keep it a secret oh my god oh i thought we're gonna eat meat uh this is like liquid meat i don't know but i suspect they cut up the organ rabbit ears meat heart liver kidney and tongue are boiled and finely chopped with fresh herbs i wonder how it tastes like the blood is mixed with a broth then added to the minced meat oh actually it smells smells good right okay yeah dress it up with fried shallots peanuts cilantro and enjoy let's try it out wait you didn't eat almost anything i thought it would taste head no it's a mix of flavors and emotions because first of all the texture is weird because there's some really hard bits some chewy bits and then you've got some herbs in there so it's like tastes fresh the option is crazy now you know that it's real blood give me some herbs now i understand why they drink beer with it the main thing is that it's fresh and they dispatch the animals here each morning so we know this blood is from this morning yeah so that's good i think we could get a takeout container for this and i'll um i'll have that later so i've had like pig ears piggies are like big and fleshy and full of cartilage this is something else rabbit ears huh this i never would have guessed was a thing deep fried rabbit ears put it in hot oil until golden brown [Music] sauced up and coated in a mixture of fish sauce sugar and chilies oh it's really crunchy it's like dorito yeah rabbit flavor yeah exactly grab yours it tastes cute it tastes good and normal but the texture is just like a pork rind really weird i like it actually i would eat this all day watching netflix overall i'm impressed this is just the tip of the rabbit iceberg there's one more place in saigon that's doing rabbit like no other awesome what kind of weapon sir thank you for having us we're very excited to be here at your restaurant named halfway hallway now what is wait why is a grill grilled rabbit yeah love it this place has been around for seven years their specialty is the rotisserie rabbit roasted up over hot coals so i know if you roast a pig it's easy because it's so fatty that the juices just come out it tastes delicious why are you crying look how good this food looks the rabbit has very little fat so what do you do to make it delicious while you're roasting it so he said the fire is important it cannot be like too hot or too cold and then you only grill it for 45 minutes no more he said the meat had the cooling effects and it's very good for pregnant women well listen today we're eating for three including my child and we can't wait to try it out thank you so much wait why'd you just say come on only why didn't you translate i like is this is like a blue collar bar basically like a bunch of dudes who just got done working at a construction site they still got some dry cement and paint on their jeans and they're coming here to grab a beer and eat some oh this is rabbit liver it is our appetizer rabbit organs heart kidney and liver are sauteed along with bell peppers onion and minced garlic add sugar salt oyster sauce and soy sauce this has to be a testicle right it's like a garlic-sized testicle what is it it's actually the kidney that's delicious it's very tender and just full of flavor whatever this sauce is it's stunning it tastes like the chicken's liver let's try the liver and see if that delivery [Applause] that's fantastic now i'm saying better than chicken liver like it breaks apart more easily in your mouth i love it so now this is the specialty of this place tell me about it this is the grill rabbit the famous one that he's been talking about we've got the legs here i think we work up to that what's that it's a head i believe holy crap you're right those are the ears we already had the ears you will be curious what on the other side actually chop that in half yeah what is on the other side [Music] so i think we should try this first here this is just straight up big chunks of rabbit meat i like the skin so i'm trying to find the one with it yeah okay try it out [Applause] that's fantastic wow that's really good i think my favorite so far yeah i didn't think i'd like rabbit as much nothing gave me really clean little smoky and just beautiful fatty texture with the skin we built up to this moment right here so we got a big thigh piece oh i got a tail on mine oh what the [ __ ] do you want the tail it doesn't go no i don't think it's meant to be a little bit of salt let's try it out wow my man he knows what he's doing i will wait for another 45 minutes to eat it again this is good it's really good a great chef could make a leather boot taste good and there are plenty of great chefs here in vietnam cheers to our final rabbit meal but when it comes to rabbit those chefs are working with a pretty impressive raw ingredient this place is full it's packed because these dudes they know this is the best place to come for a grilled rabbit it's my first taste of rabbit and it's really good i went from never having tried rabbit at all i basically have tried every nook and cranny of a rabbit i'm surprised this meat isn't more present around the world it's one of those foods like you can't even consider it a bizarre food it's like on the level of kitchen i would eat it again yeah me too cheers to the future
