[Music] hi everyone welcome back to another cookie tips video if you want to find more tips i have a whole playlist on all the little tricks and tips that i use to get my perfect cookies today in this video we'll be talking about bubbles and i have a little extra tip at the end for you as well why do we worry about bubbles so much is when you have bubbles in your icing and you go to flood a cookie sometimes those bubbles burst when you're drying your cookie and then they leave you with small little holes or bumps in your icing so when they dry it's not a smooth surface so i'll show you a little trick that i use that helps me get rid of almost all the bubbles always so here i have my outline consistency icing so this is what i usually do i mix my icing um you know when i'm making it i'll make it stiff enough for my outline and my detail i'll bag some of it after i color it and then i'll come back and add some water to make it my flood consistency so i'll show you the process when you add water that's when you get bubbles the more water you add the more that you mix it the more bubbles i tend to have and so i'll get it down to my flood consistency what i'm looking for is that it's riveting off my spoon i don't want the icing to plop off the spoon and a lot of people refer to seconds when they're referring to icing consistency and what we're basically saying is that if you run your spoon you know through your icing if it takes 8 to 10 seconds for your icing to settle back down like you didn't do anything to your icing you know it goes back to smooth then that's an 8 10 second icing let's say if your icing takes 15 seconds to settle back down or 20 seconds then that's you know your 15 second icing or your 20 second icing i usually go by the look of my icing so what i like to do is put a damp paper towel over top of my icing and i let it sit you know aside somewhere on the counter for 10 to 15 minutes and now you can see there's tons of bubbles after it's been sitting so i'm going to do just run the spoon over top of the icing just to pop those bubbles i don't want to go and mix vigorously again and create more you know air pockets and bubbles so i just want to run the spoon gently over the top you just want to get gently glide the spoon until you don't see most of the bubbles there's still some that are under the surface so if you find you still have lots you can always let it sit again for another 10-15 minutes and do the process again i find you'll never get rid of all the bubbles but this is usually good enough for me not to have too many maybe you have the odd one that you need to pop once you flood your cookie i usually let the icing sit i'll go color and thin down more of my icing so then it's sort of a process so i'm not just sitting there waiting around i'll do one at a time and then by the time i'm done all my colors and come back then the bubbles have risen and so another little tip i wanted to share with you guys is when i'm flooding a cookie i don't know if you've noticed in my videos i don't start right on the edge when i first initially start flooding i always start a little bit inward from the outline sometimes when you're flooding a cookie you want to get a feel of how much icing is coming out of your bag and so if you start right on the edge and you you know you turn your bag upside down the icing starts flowing out already and so sometimes it's more icing than you really want to come out and it could go over your edge or it could cause a big blob and then it's not really smooth so what i like to do is start you know a few centimeters in from my edge and then go around to my edge once i know how much is coming out of my bag it's more of a feel you know is your icing too runny is it to your bag did you cut your hole in too big in your bag and so these things will prevent like a big plop of icing coming out and so once i know it's okay then i can go on and outline the rest of my cookie so i hope these tips helped you guys and hope it makes your cookies a lot more smoother and taking less time to pop those bubbles and as always thank you so much for watching and supporting all my videos looking forward to making a lot more tutorials for you happy baking [Music] do you
